Frequently Asked Questions - ST-EC0123 Saturn

What should I do if my bread doesn't rise properly?
Check if the yeast is fresh and active. Use the test: mix 1/2 cup warm water (45-50°C), 1 tsp sugar, and 2 tsp yeast. If froth doesn't reach 1 cup after 10 minutes, the yeast is dead. Also ensure yeast doesn't contact liquid or salt before kneading, and use the correct flour type.
How do I clean the bread maker after use?
Unplug and let cool. Remove the bread pan and kneading blades; they are dishwasher safe. Wipe the pan inside and out with a damp cloth. Do not use abrasive cleaners. Clean the lid and housing with a slightly damp cloth. Never immerse the housing in water.
What do the error codes HHH, LLL, and EE1 mean?
HHH: Internal temperature too high. Stop, open lid, and let cool 10-20 minutes. LLL: Temperature too low. Let machine rest at room temperature 10-20 minutes. EE1: Temperature sensor short circuit. Press START/STOP to stop beeping and contact an authorized service center.
Can I use the delay function for all programs?
No, the delay function is not available for Jam, Ultra Fast, and Bake programs. For Bake, you can adjust time manually (10-60 minutes) but not set delay. For other programs, press TIME+/- to set desired finish time up to 13 hours ahead.
How do I use the double bread pan?
Select the DOUBLE loaf size using the LOAF button. Ensure both bread pans are correctly placed and locked. The maximum flour per pan is 300g and yeast 2 teaspoons. The program will adjust kneading and baking times accordingly.
What is the correct order for adding ingredients?
Always add liquids first (water, milk, eggs), then sugar, salt, and flour. Make a small indentation in the flour and add yeast separately, ensuring it doesn't touch liquid or salt. For delay baking, avoid perishable ingredients like fresh milk or eggs.
Why is smoke coming from the vents?
This usually happens if ingredients have stuck to the outside of the bread pan or inside the baking compartment. Unplug, let cool, and clean the pan and compartment thoroughly. Ensure no residue from previous bakes.
How do I remove the kneading blade from the baked bread?
After baking, wait for the bread to cool slightly. Use the provided hook to gently pull out the kneading blade from the bottom of the loaf. Never use your hands as the blade and bread are hot. If stuck, soak the pan in warm water for 30 minutes.
What is the maximum amount of flour I can use?
For a single bread pan: maximum 810g flour and 2 teaspoons yeast. For the double bread pan (DOUBLE size): maximum 300g flour and 2 teaspoons yeast per pan. Exceeding these limits may cause overflow or poor results.
Can I bake gluten-free bread in this machine?
Yes, use the Gluten Free program. It has a single rise and longer baking time due to high moisture. Add mix-ins at the very beginning with other dry ingredients. Follow gluten-free recipes; the loaf will be smaller and denser.

Open the lid and put in some ingredients. It is possible that steam will escape through the vent slits in the lid during baking. This is normal.

  2. Once the process has been completed, beeps sound will be heard, and the working light will extinguish. You can press CTAPT/CTO! button for more than 2 seconds to stop the process and take out the bread. Open the Lid and while using oven mitts, firmly grasp the bread pan handle, gently pull the pan straight up and out of the machine.

  3. Use non-stick spatula to gently loosen the sides of the bread from the

CAUTION: The Bread pan and bread may be very hot! Always handle with care and use oven mitts.

  1. Turn bread pan upside down onto a clean cooking surface and gently shake until bread falls out onto rack.
  2. Remove the bread carefully from the pan and cool for about 20 minutes before slicing.

  3. If you are out of the room or have not pressed CTAPT/CTON button at the end of operation, the bread will be kept warm automatically for 1 hour (if applicable), if you would like to take the bread out, switch the program off with the CTAPT/CTON button.

  4. When do not use or completely operation, unplug the power cord. NOTE: Before slicing the loaf, use the hook to remove out the kneading blade hidden on the bottom of loaf. The loaf is hot, never use hand to remove the kneading blade.

  1. For Quick program With Quick program, the bread maker can finish making a loaf within shorter period with baking powder or soda in place of yeast. To obtain perfect quick bread, it is suggested that all liquid in-

gredients shall be placed at the bottom of the bread pan and dry ingredients on the top, but during the initial kneading, some dry ingredients may collect in the corners of the pan, so in order to avoid flour clumps, you may use a rubber spatula to help to knead dough.

2. For Ultra fast program

With Ultra fast program, the bread maker can finish making a loaf within shortest period, so the loaf may be a little denser in texture. For Ultra fast bread, water temperature is very critical for fermentation performance, if water temperature is too low, the loaf will not rise to the expected size; if water temperature is too high, yeast is likely to lose activity so as to affect fermentation performance. Please note water temperature should be controlled in the range of 48–50 °C, so before making Ultra fast bread, you must use a thermometer to measure water temperature.

CLEANING AND MAINTENANCE

Disconnect the machine from the power and let it cool down prior to cleaning.
1. Bread pan: Remove the bread pan by pulling the handle, wipe inside and outside of pan with a damp clothes, do not use any sharp or abrasive agents for the consideration of protecting the non-stick coating. The pan must be dried completely before installing.

  1. Kneading blade: If the kneading blade is difficult to remove from the axle, in such an event fill the container with warm water and allow it to soak for approx. 30 minutes. The kneader can then be easily removed for cleaning. Also wipe the blade carefully with a cotton damp cloth. Please note both the bread pan and kneading blade are dish-washing safe components.

  2. Lid and window: Clean the lid inside and outside with a slightly damp cloth.

  3. Housing: Gently wipe the outer surface of housing with a wet cloth. Do not use any abrasive cleaner to clean as this would degrade the high polish of the surface. Never immerse the housing into water for cleaning. 5. Before the bread maker is packed away for storage, ensure that it has completely cooled down, clean and dry, put the spoon and the kneading blade in the pan, and close the lid.

INTRODUCTION OF BREAD INGRE-

DIENTS

  1. Bread flour Bread flour has high content of high

gluten (so it can be also called high-gluten flour which contains high protein), it has good elastic and can keep the size of the bread from collapsing after rise. As the gluten content is higher than the common flour, so it can be used for making bread with large size and better inner fiber. Bread flour is the most important ingredient of making bread.

2. Plain flour

Flour that contains no baking powder, it is applicable for making express bread.

3. Whole-wheat flour

Whole-wheat flour is ground from grain. It contains wheat skin and gluten. Whole-wheat flour is heavier and more nutrient than common flour. The bread made by whole-wheat flour is usually small in size. So many recipes usually combine the whole -wheat flour or bread flour to achieve the best result.

4. Black wheat flour

Black wheat flour, also named as "rough flour", it is a kind of high fiber flour, and it is similar with whole-wheat flour. To obtain the large size after rising, it must be used in combination with high proportion of bread flour.

5. Self-rising flour

A type of flour that contains baking powder, it is used for making cakes specially.

6. Corn flour and oatmeal flour

Corn flour and oatmeal flour are ground from corn and oatmeal separately. They are the additive ingredients of making rough bread, which are used for enhancing the flavor and texture.

7. Sugar

Sugar is very important ingredient to increase sweet taste and color of bread. And it is also considered as nourishment in the yeast bread. White sugar is largely used. Brown sugar, powder sugar or cotton sugar may be called by special requirement.

8. Yeast

After yeasting process, the yeast will produce carbon dioxide. The carbon dioxide will expand bread and make the inner fiber soften. However, yeast fast breeding needs carbohydrate in sugar and flour as nourishment. 1 tsp. active dry yeast =3/4 tsp. instant yeast 1.5 tsp. active dry yeast =1 tsp. instant yeast 2 tsp. active dry yeast =1.5 tsp. instant yeast Yeast must be stored in the refrigerator, as the fungus in it will be killed at high temperature, before using, check the production date and storage life of your yeast. Store it back to the refrigerator as soon as possible after each use. Usu-

ally the failure of bread rising is caused by the bad yeast.

The ways described below will check whether your yeast is fresh and active. (1) Pour 1/2 cup warm water (45-50°C) into a measuring cup.

(2) Put 1 tsp. white sugar into the cup and stir, then sprinkle 2 tsp. yeast over the water.

(3) Place the measuring cup in a warm place for about 10min. Do not stir the water.

(4) The froth should be up to 1 cup. Otherwise the yeast is dead or inactive.

  1. Salt Salt is necessary to improve bread flavor and crust color. But salt can also restrain yeast from rising. Never use too much salt in a recipe. But bread would be larger if without salt.

10. Egg

Eggs can improve bread texture, make the bread more nourish and large in size, the egg must be peeled and stirred evenly.

  1. Grease, butter and vegetable oil Grease can make bread soften and delay storage life. Butter should be melted or chopped to small particles before using.

12. Baking powder

Baking powder is used for rising the Ultra Fast bread and cake. As it does not need rise time, and it can produce the air, the air will form bubble to soften the texture of bread utilizing chemical principle.

13. Soda

It is similar with baking powder. It can also used in combination with baking powder.

14. Water and other liquid

Water is essential ingredient for making bread. Generally speaking, water temperature between 20^ and 25^ is the best. The water may be replaced with fresh milk or water mixed with 2% milk powder, which may enhance bread flavor and improve crust color. Some recipes may call for juice for the purpose of enhancing bread flavor, e.g. apple juice, orange juice, lemon juice and so on.

INGREDIENTS MEASUREMENT

One of important step for making good bread is proper amount of ingredients. It is strongly suggested that use measuring cup or measuring spoon to obtain accurate amount, otherwise the bread will be largely influenced.

  1. Weighing liquid ingredients Water, fresh milk or milk powder solution should be measured with measuring cups. Observe the level of the measuring cup with your eyes horizontally. When you measure cooking oil or other

ingredients, clean the measuring cup thoroughly without any other ingredients.

2. Dry measurements

Dry measuring must be done by gently spooning ingredients into the measuring cup and then once filled, leveling off with a knife. Scooping or tapping a measuring cup with more than is required. This extra amount could affect the balance of the recipe. When measuring small amounts of dry ingredients, the measuring spoon must be used. Measurements must be level, not heaped as this small difference could throw out the critical balance of the recipe.

3. Adding sequence

The sequence of adding ingredients should be abided, generally speaking, the sequence is: liquid ingredient, eggs, salt and milk powder etc. When adding the ingredient, the flour can't be wetted by liquid completely. The yeast can only be placed on the dry flour. And yeast can't touch with salt. After the flour has been kneaded for some time and a beep will prompt you to put fruit ingredients into the mixture. If the fruit ingredients are added too early, the flavor will be diminished after long time mixing. When you use the delay function for a long time, never add the perishable ingredients such as eggs, fruit ingredient.
