How long does it take to make ice cream?
Churning takes about 20 to 40 minutes depending on ingredients. Do not exceed 40 minutes to avoid motor overheating.
Can I use hard ingredients like nuts or chocolate chips?
Yes, but add them only during the last 5 minutes of churning through the ingredient spout, otherwise they could jam the paddle.
How to clean the ice cream maker?

INTRODUCTION

Thank you for purchasing the ELECTRIC ICE CREAM MAKER from Nostalgia Electrics™. The ELECTRIC ICE CREAM MAKER provides a homemade ice cream experience with modern convenience. Simply freeze the Freezer Bowl, fill with fresh ingredients and in about 30 minutes, your delicious ice cream will be ready to serve. No salt or ice is needed! You can also use this ice cream maker to create refreshing sorbet and frozen yogurt. Makes about 3 cups of ice cream per batch.

PARTS & ASSEMBLY

Take the ELECTRIC ICE CREAM MAKER out of the box and wash the Freezer Bowl, Cover and Dasher with a non-abrasive cloth in warm, soapy water and dry thoroughly. DO NOT wash the Motor Housing.

Carefully wipe down the Motor Housing with a non-abrasive cloth or sponge. NEVER immerse the Motor Housing in water. Dry thoroughly.

Now you are ready to make creamy, delicious ice cream from your ELECTRIC ICE CREAM MAKER.

ASSEMBLY

  1. Push the Cover onto the Motor Housing until circular holes are aligned.
  2. Insert the Dasher into the Motor Housing and align the grooves in Dasher with Cover.
  3. Slide the motor housing forward until it snaps into place.
  4. Place the Motor Housing with Cover and Dasher attached on top of the Freezer Bowl.
  5. Rotate clockwise and slide in the locking teeth until cover snaps into place.

HOW TO OPERATE

  1. First, find a stable surface near an electrical outlet before starting. Make sure the cord is away from any water source. It is acceptable to use an extension cord if needed.
  2. Chill Freezer Bowl by wrapping it in a plastic bag and then placing in a freezer. It should take about 12 hours to adequately freeze the Freezer Bowl.
  3. To confirm that the Freezer Bowl is frozen enough to begin making ice cream, shake it slightly after freezing. If you hear liquid moving inside of the Freezer Bowl, it has not frozen enough. DO NOT shake the Freezer Bowl too hard or drop the Freezer Bowl, as this could damage it and prevent it from freezing properly.
  4. Choose your favorite recipe and prepare ice cream mixture per recipe instructions. Chill the mixture for at least one hour before making ice cream.
  5. Pour chilled ice cream mixture through the Ingredient Window into the chilled Freezer Bowl. Make sure that you do not fill the bowl more than 2 13 full, as the mixture will expand during freezing process.
  6. Plug the power cord attached to the Motor Housing into an outlet.
  7. Turn on the Motor Housing by flipping switch to the "ON" position.
  8. The mixing will begin.
  9. In about 20 to 40 minutes the ice cream should be ready. The time needed to finish a recipe may vary slightly depending on the ingredients used. DO NOT operate the Ice Cream Maker for more than 40 minutes.
  10. DO NOT over-mix the ice cream, as this can cause the ice cream to become too thick, resulting in the motor stopping. If the motor stops, flip the switch to the "OFF" position, unplug the unit, and remove the Cover and Motor Housing from the Freezer bowl by rotating the Cover counter-clockwise. Allow ice cream to soften slightly, then serve.
  11. Note that your ELECTRIC ICE CREAM MAKER has a safety feature that prevents the electric motor from overheating. If ice cream becomes too thick or if the electric motor runs for too long, the electric motor will stop automatically. If this happens, flip switch to "OFF" position and allow electric motor to cool down before continuing the ice cream making process.
  12. After you have finished making ice cream and flipped switch to "OFF" position, unplug the unit, and remove the Cover and Motor Housing from the Freezer bowl by rotating the Cover counter-clockwise.
  13. Remove the Dasher from the Motor Housing and scrape off excess ice cream with a spatula.
  14. Transfer ice cream to a freezer-safe container and freeze, or serve straight from the Freezer Bowl.

HELPFUL TIPS

TASTE

Finished ice cream will always taste less sweet than the initial mixture. You may adjust the amount of sugar in the recipe to suit your taste.

Artificial sweeteners may be used in place of sugar. Use the following measurements for reference:

• 1 packet of sweetener = 2 tsp. of sugar
- 6 packets of sweetener = 14 cup of sugar
- 8 packets of sweetener = 13 cup of sugar
- 12 packets of sweetener = 12 cup of sugar

MOTOR

If the motor is blocked and does not run properly, the ice cream may be too thick, causing the Dasher not to turn properly. Make sure that you follow each recipe exactly.

JAMMING

If the Dasher gets jammed and does not revolve properly, try the following:

  • Check to make sure that the Dasher is properly attached to the Motor Housing, that the cord is plugged into outlet and that the unit is flipped to the "ON" position.
  • Ice Cream recipes that include hard ingredients like nuts or chocolate chips may cause the Dasher to become lodged in the Freezer Bowl. DO NOT add hard ingredients until the last five minutes of the churning process.
  • DO NOT stop the churning process until ice cream is finished. Stopping in the middle of the process can cause the ice cream to harden and restrict the movement of the Dasher.

CLEANING & MAINTENANCE

  1. Make sure the unit is turned off and the unit is unplugged.
  2. Remove the Cover and Motor Housing from the Freezer Bowl by rotating the Cover counter-clockwise.
  3. Scrape off any excess ice cream from the Dasher and remove Cover and Dasher from Motor Housing by sliding the Cover forward.
  4. Wash Freezer Bowl, Cover and Dasher with a non-abrasive cloth in warm, soapy water and dry thoroughly. DO NOT reassemble the Ice Cream Maker until all parts are completely dry.
  5. Wipe down Motor Housing using a damp, non-abrasive cloth or sponge. Dry thoroughly.
  6. NEVER immerse Motor Housing in water or other liquid.
  7. DO NOT use harsh or abrasive cleaners.
  8. DO NOT use an abrasive sponge, cloth or scouring pad on the unit.
  9. DO NOT freeze the Freezer Bowl when it is wet.
  10. ONLY wash unit by hand. DO NOT place parts in the dishwasher.
  11. You may store Freezer Bowl in a freezer when not in use so it is ready when you make your next batch of ice cream.

RECIPES

The ELECTRIC ICE CREAM MAKER makes rich, creamy ice cream anytime! Try these delicious recipes and tips:

  • Make sure your ingredients are chilled prior to adding to Freezer Bowl, as this makes ice cream making faster.
  • For ice cream recipes that require cooking, it is recommended that you cook one day in advance. The mixture will then have time to cool completely and expand.

VANILLA ICE CREAM

• 34 Cup Whole Milk, well chilled
- 14 Cup Granulated White Sugar
• 1 Cup Heavy Cream, well chilled
- 1/2 - 1 Tsp. Pure Vanilla Extract, to taste

In a medium bowl, use a hand mixer or a whisk to combine the milk and granulated sugar until the sugar is dissolved, about 1 – 2 minutes on low speed.

Stir in the heavy cream and vanilla to taste.

Turn machine on, pour mixture into Freezer Bowl and let churn until thickened, about 30 minutes.

DO NOT fill the bowl more than 23 full, as the mixture will expand during freezing process.

NOTE: If you want richer, creamier ice cream, you may substitute the Whole Milk for Half-and-Half.

Makes approximately four 12 cup servings.

VARIATIONS:

  • Mint Chocolate Chip: Omit the vanilla and replace with 12 to 1 teaspoons of pure peppermint extract (to taste). Chop your favorite 2-ounce bittersweet or semi-sweet chocolate bar into tiny uneven pieces. Add the chopped chocolate during the last 5 minutes of churning through the Ingredient Window.
  • Butter Pecan: Melt 12 stick of unsalted butter in a 10-inch skillet. Add 12 cup roughly chopped pecans and 12 teaspoon kosher salt. Cook over medium-low heat, stirring frequently until the pecans are lightly browned. Remove from the heat, strain (the butter will have a pecan flavor and may be reserved for another use). Allow the pecans to cool completely. Add the toasted buttered pecans during the last 5 minutes of churning through the Ingredient Window.
  • Cookies & Cream: Add 12 cup coarsely chopped cookies or your favorite candy (chocolate chips, Oreos, M & Ms, etc.) during the last 5 minutes of churning through the Ingredient Window.

RICH CHOCOLATE ICE CREAM

• 3-oz. Semi-sweet Chocolate, finely chopped
• 1 Cup Heavy Cream, well chilled
• 1 Cup Whole Milk
• 1 Egg Yolk
- 14 Cup White Granulated Sugar
• 12 Tbsp. Pure Vanilla Extract

Combine cream, milk and chocolate in a medium saucepan over medium heat and cook until mixture almost boils and chocolate is melted, about 5-8 minutes. Reduce heat to low.

Beat yolk, sugar and vanilla extract in a small bowl until light yellow and smooth, about 1 - 2 minutes. Add 2 tablespoons of warm cream/chocolate mixture and stir until combined. Gradually add egg yolk mixture to warm cream chocolate mixture, stirring continuously to prevent the eggs from curdling.

Cook over low heat until slightly thickened and mixture coats the back of a spoon, about 3-4 minutes.

Transfer to a medium bowl and let the chocolate mixture cool completely. You may want to refrigerate the mixture until it is well-chilled again.

Turn machine on, pour mixture into Freezer Bowl and let churn until thickened, about 30 minutes.

DO NOT fill the bowl more than 23 full, as the mixture will expand during freezing process.

Makes approximately four 12 cup servings.

VARIATIONS:

  • Chocolate Almond: Add 14 teaspoon pure almond extract along with the vanilla. Add 18 cup chopped toasted almonds or chopped chocolate-coated almonds during the last 5 minutes of churning.
  • Chocolate Cookie: Add ^1/8 cup chopped cookies during the last 5 minutes of churning.
  • Chocolate Fudge Brownie: Add 18 cup chopped brownies during the last 5 minutes of churning.
  • Chocolate Marshmallow Swirl: When removing the ice cream to a container for freezing, layer it with dollops of your favorite chocolate sauce and scoops of marshmallow crème (fluff).

FRESH STRAWBERRY ICE CREAM

  • 12 Cup Whole Milk
  • 12 Cup Heavy Cream
  • 12 Cup Half and Half
  • 1/2 Tsp. Pure Vanilla Extract
  • 14 Cup White Granulated Sugar
  • 12 Cup Fresh, Ripe Strawberries, stemmed and sliced
    • 12 Tsp. Freshly Squeezed Lemon Juice

In a small bowl, combine the strawberries with the lemon juice and 18 cup of the sugar; stir gently and allow the strawberries to marinate in the juices for 2 hours.

In a medium bowl, use a hand mixer or a whisk to combine the milk and remaining granulated sugar until the sugar is dissolved, about 1 – 2 minutes on low speed.

Stir in the heavy cream plus any accumulated juices from the strawberries and vanilla.

Turn ELECTRIC ICE CREAM MAKER on, pour mixture into Freezer Bowl and let churn until thickened, about 30 minutes.

DO NOT fill the bowl more than 23 full, as the mixture will expand during freezing process.

Add the sliced strawberries during the last 5 minutes of churning.

Makes approximately four 12 cup servings.

NOTE: The ice cream will have a "natural" appearance of very pale pink. If a deeper pink is desired, sparingly add drops of red food coloring until desired color is achieved.

CHOCOLATE FROZEN YOGURT

  • 12 Cup Whole Milk
    • 1 Cup Low Fat Vanilla Yogurt
    • 18 Cup White Granulated Sugar
    • 3-oz. Semi-Sweet Chocolate, chopped

Combine the milk and chocolate in a blender or food processor and mix until well blended and smooth, about 20 – 30 seconds.

Add the yogurt and sugar, mix again until smooth, about 15 seconds.

Turn ELECTRIC ICE CREAM MAKER on, pour mixture into Freezer Bowl and let churn until thickened, about 30 minutes.

DO NOT fill the bowl more than 23 full, as the mixture will expand during freezing process.

Makes approximately four 12 cup servings.

REFRESHING LEMON SORBET

• ^3/_4 Cup Sugar
• 12 Cup Water, well chilled
• 14 Cup Carbonated Mineral Water, well chilled
• 12 Cup Freshly Squeezed Lemon Juice
- 12 Tbsp. Finely Grated Lemon Zest

Combine the sugar and water in a medium saucepan and bring to a boil over medium-high heat.

Reduce heat to low and simmer without stirring until the sugar dissolves, about 3 – 5 minutes.

Cool completely.

This is called a simple syrup, and may be made ahead in larger quantities to have on hand for making fresh lemon sorbet. Keep refrigerated until ready to use.

When cool, add the lemon juice, mineral water and zest; stir to combine.

Turn ELECTRIC ICE CREAM MAKER on, pour mixture into Freezer Bowl and let churn until thickened, about 30 minutes.

DO NOT fill the bowl more than 23 full, as the mixture will expand during freezing process.

Makes approximately five 12 cup servings.

VARIATION:

Fresh Pink Grapefruit Sorbet: Substitute 12 cup freshly squeezed pink grapefruit juice for the lemon juice, and 12 tablespoon finely grated grapefruit zest for the lemon zest. Add 18 cup Orgeat Syrup to the mixture (Orgeat Syrup is used for cocktails such as a Mai Tai or Scorpion and can be found with the drink mixers in most grocery stores).
