- It is essential to comply with the safety, operating and cleaning instructions in this manual. Failure to comply with them will void the guarantee.
- This appliance is intended for domestic use only. It is not intended for use in the following cases, which are not co- vered by the guarantee: - in kitchen areas reserved for store and office workers, and in other professional environments. - on farms. - by the customers of hotels, motels and other residential environments. - in bed and breakfast environments.
- This appliance can be used by children from the age of 8 and upwards and by persons with reduced physical, sen- sory or mental capacities, or by persons whose experience or knowledge is not sufficient to do so, provided they are supervised, or have been given instructions regarding the safe use of the appliance, and that they fully understand the dangers involved. - It is necessary to supervise children closely when an ap- pliance is being used by them or near them.
- Please be aware of potential hazards in the event of impro- per use of this appliance.
- This appliance must not be immersed in water, or any li- quid whatsoever.
- Complete instructions for cleaning the surfaces that are in contact with food and the whole appliance in complete safety are detailed in the "Cleaning & Care" section of this manual.
- The appliance can be used both indoors and outdoors.
- The power cord must be checked regularly for signs of deterioration.
- We recommend that you examine this appliance on a re- gular basis. To prevent potential hazard, do not use the appliance if the power cord, the plug or the appliance it- self is damaged. If the power cord is damaged it must be replaced by the manufacturer, its After-Sales Service, or a similarly qualified person to prevent potential hazard.
- In the event of a breakdown or malfunction, or if the appliance is damaged, it must be repaired by an appro- ved Riviera & Bar Service Centre professional. Please contact the Riviera & Bar Customer Relations Service at info@arb-sas.fr who will tell you how to proceed.
- It is essential to disconnect the appliance’s power cord from the power supply in the following cases: - When left unattended - After use - Before cleaning or care. - In case of malfunction.
- The appliance must be powered by a circuit including a residual current device (RCD) with a rated differential cur- rent no higher than 30 mA.
- Only connect the appliance to an outlet with a grounded power supply that meets electrical safety requirements currently in force.
- To avoid overloading the power grid, do not connect other devices to the same circuit.
- Make sure that the mains voltage corresponds to that indicated on the data tag on the appliance.
- Unroll the power cord completely.
- Do not pull on the power cord or the appliance itself to unplug it. If an extension cord is required, use a grounded extension cord, and make sure that the power supply is powerful enough to cater for the appliance. The extension cord must be completely unrolled.
- Make sure that the power cord and any extension cords are not obs- tructing the passage, to prevent the appliance from tipping over.
- Do not place the appliance near a source of heat and do not allow the power cord to touch a hot surface.
- To eliminate the risk of fire, place the appliance on a non-heat-sen- sitive surface (do not use on plate glass surfaces, varnished tables, plastic tablecloths, etc.) and make sure it is at a distance of at least 20 cm from any walls or partitions. The space above the appliance must be clear, as should the ventilation space located underneath. Place the appliance on a flat, horizontal and dry non-slip surface capable of supporting its weight (13 kg).
- Do not obstruct the ventilation holes.
- Make sure that the power cord does not come into contact with the hot parts of the appliance.
- Do not allow plastic utensils or other heat sensitive materials to come into contact with the hotplate while cooking.
- Never use the appliance as a room-heating device.
- Do not remove the hotplate while the appliance is switched on. Make sure that the temperature control knob is set to "0" and that the "On/Off" switch is set to "O" (Off) before disconnec
ting the power cord.
- Allow the appliance to cool before cleaning and storing.
- The hotplate is very heavy and is not attached to the main body of the appliance. Care must be taken when moving or transpor
ting the appliance to prevent the hotplate from tipping over.
- When using the appliance, avoid any sudden move- ments likely to affect its stability.
- Never use the appliance without the grease collec
- Avoid impacting the enamelled cast-iron plate (with the tip of a knife, for example).
- Do not handle the appliance with wet hands.
- Never move the appliance while in use.
- Apart from during the preheating period, do not leave the ap
pliance on when not in use.
- The appliance and its exposed parts get very hot when in use and remains hot for a while after use. Be sure to keep their surroundings clear, and do not handle them until they have cooled down comple- tely.
- Do not move the appliance while still hot.
- Beware of grease splashes.
- Protect glass tables: a thermal or mechanical impact could shatter the tabletop and cause the hot appliance to injure those sitting round the table.
- Be careful not to place the appliance on the edge of a table or work surface, to prevent it from tipping over.
- When not in use, the appliance should be stored in a dry environment.
- Never use the appliance near water.
- This appliance must be protected from frost. Never leave it in a car in winter, or in any other place subject to freezing, to avoid damage. UNPACKING• Unpack the appliance and remove all the plastic bags, cardboard, and paper protecting its different parts.• Remove any self-adhesive labels that may have been affixed to the product, as well as any infor mation leaflets.• Keep the packaging elements. They will be needed in the event of an intervention by the After-Sales Service.• Packaging instructions are provided at the end of the manual.• Never leave plastic bags within the reach of children. ASSEMBLY• Install the appliance by following the safety recommendations.• The appliance comes with 4 adjustable feet that need to be mounted before using the appliance for the first time. The 4 legs are packed in a separate bag. Unpack them, turn the body of the appliance over so that you can access the underside, and screw the feet into the 4 corners of the body. Turn the body the right way up and place it on a flat surface. Adjust the height of the legs by screwing or unscrewing them. This adjustment allows the body, and therefore the hotplate, to be tilted slightly to allow grease to drain away into the slot located at the front of the hotplate when cooking.• To clean the various parts of the appliance, please refer to the dedicated section entitled "Cleaning & Care" on page 26. BeFoRe FiRst use Remove the protective film from all 3 sides of the body of the appliance as thoroughly as possible, taking care to also remove any residual traces. Important remarks8. When no longer in use, turn the heat off by turning the temperature control knob to the left to "0". The temperature control light will go out.
9. Immediately turn off the appliance by turning the
"On/Off" switch to "Off" ("O"). The light will go out.
10. Unplug the power cord from the wall socket.
To select the cooking temperature, please refer to the table below. Cooking temperature 50°C Recommended temperature for keeping food warm (low heat) 100°C Recommended temperature for reheating food (medium heat) 150°C Recommended temperature for reheating food (high heat) 150 to 200°C Recommended temperature for cooking: - most types of vegetables and fruit - most small or delicate types of seafood (such as small squid or octopus) - finely-sliced meat: 1 to 2 mm thick - eggs - cheese 200 to 250°C Recommended temperature for cooking: - tightly-packed vegetables (such as red endives (chicory), broccoli, cabbage, etc.) - thin-skinned vegetables (such as peppers, aubergines (eggplants), tomatoes, etc.) - finely-sliced vegetables (such as sliced potatoes) - cuts of meat, 3 to 5 mm thick - particular types of dough (flatbread, pizza, pita bread, buckwheat pancakes, etc.) 250°C Recommended temperature for cooking: - most fish, shellfish, seafood - beef - fettina, up to 10 mm thick - seafood (such as shrimps, gambas prawns, etc.) 300°C Recommended temperature for searing food. The temperature should then be lowered to continue cooking for a longer period of time. oPeRatinG youR aPPliance
1. Unroll the power cord completely and make sure
that the On/Off switch is set to Off ("O") and the temperature control knob to "0".
2. Place the hotplate on the main body of the
appliance. The 4 legs of the hotplate must be inserted into the 4 holes on the side edges of the main body.
3. Before switching on, remember to readjust the
adjustable feet located under the body of the appliance by screwing or unscrewing them if necessary. This adjustment allows the body, and therefore the hotplate, to be tilted slightly to allow grease to drain away into the slot located at the front of the hotplate when cooking.
4. Insert the grease collector in its compartment,
making sure that it is inserted the right way round.
5. Plug in the power cord.
6. Turn on the power by setting the "On/Off" switch
(located underneath the appliance) to On ("I"). The switch light will glow.
7. Allow the griddle to preheat for about 15 minutes
before starting any cooking. Select the cooking temperature by turning the temperature control knob to the right to the desired position. The temperature control light will glow during the heating process and will go out when the temperature is reached. You can then place your food on the hotplate and start cooking it, following the instructions in the "Tips & Tricks" section on page 25 and those detailed in the recipes. The residue that has drained into the grease collector should never be eaten under any cir- cumstances. Always dispose of it after using the appliance. Important remarks - When in cooking mode, the temperature of the hotplate will self-regulate. The temperature control light will go on and off to ensure that the food is evenly cooked. - Food can be cut directly on the hotplate. However, you must be careful not to impact the plate (with the tip of a knife for example). If the enamel is chipped off and the cast iron is exposed, the plate can no longer be used. - For healthier cooking, remember to push any grease towards the grease collector, which should be emptied after each use. NOTE
- Food should be at room temperature. We suggest taking it out of the refrigerator one hour in advance.
- You can brush the hotplate with oil or another type of fat, if required.
- Use the centre of the hotplate whenever you can, depending on the amount of food to be cooked.
- Before grilling sausages, we recommend that you prick them to allow any excess fat to drain out.
- Do not salt the meat until it is cooked. This would make the meat tough and drain its juices. Vegetables, on the other hand, will taste better if they are salted beforehand.
- When cooking "tougher" meats (such as chuck steak or cutlets, etc.), we recommend that you tenderize them by marinating them for a few hours in wine or vinegar.
- Remember to marinate your foods in mixtures containing spices or condiments. This will make your grilled food more fragrant and your meat more tender.
- If you are making a recipe that calls for a marinade, or pre-marinated meats, remove any excess marinade and dab the meat with absorbent kitchen paper before placing it on the hotplate.
- Oil-based marinades can produce a lot of smoke. You may need to place the appliance under an extractor hood if you are cooking indoors.
- Please be aware that sweet marinades can burn and stick to the hotplate when cooking.
- Do not prick the meat with a fork or cut it while it is cooking. This would allow its juices to escape and make the meat tough.
- We recommend setting the temperature to high for meats such as prime rib. This is because the meat needs to be seared on the outside to stop the inside from being overcooked. However, if you opt for a marinade, season your meat at the end of the cooking process rather than before, otherwise your pepper, herbs and spices will just burn instead of flavouring the meat. tiPs & tRicKsCLEANING BEFORE FIRST USE
1. Wash the hotplate in hot water with liquid detergent and a
sponge. Rinse and dry with a soft cloth.
2. After removing the protective film from the body of the
appliance, wipe it with a soft, slightly damp cloth and remove any further residual traces.
Always clean your appliance after each use to avoid the accu
mulation of cooked and re-cooked food.
1. Remove the hotplate from the main body of the appliance.
Wipe it with a soft cloth to remove any food residue. When dealing with large amounts of encrusted residue, run warm soapy water over the hotplate and clean with a sponge. Rinse and dry thoroughly.
2. Allow the grease collector to cool down completely before
removing it from its compartment. Empty it after each use and wash it with hot soapy water. Rinse and dry it before repositioning it.
3. Wipe the outside of the main body of the appliance with a
soft, slightly damp cloth. Dry it carefully. - Before cleaning or caring for your appliance, it must be unplugged and allowed to cool down completely. - Never immerse the main body of the appliance, the hotplate or the power cord in water or any other liquid. - Do not remove the temperature control knob when cleaning. - Do not use inappropriate chemical or chlorinated products. Important remarks cleaninG & caRe
stoRaGe After cleaning the appliance, make sure that its various parts have been dried properly before storing the appliance in a dry and sheltered environment. We recommend that you cover your appliance with a protective cover.Remember to give your griddle a thorough cleaning (as described in the "Cleaning & Maintenance" section) before storing it for the winter. NOTE The hotplate can be cleaned with a water jet: make sure you remove the hotplate from the main body of the appliance before doing so. NOTEThe general guarantee for this appliance is 2 years. It covers domestic use only. The following are excluded from the guarantee: - worn parts, - removable or mobile parts damaged due to improper handling, as the result of a fall or knock during handling, and affecting the hotplate or grease collector, - appliances used for a purpose other than their normal purpose within the private sphere. The manufacturer cannot be held responsible for possible damages caused by improper use of the appliance, or when the appliance is not used in accordance with the operating instructions or has been repaired by an unskilled person. Repairs must only be carried out by the Riviera & Bar After-Sales Service. REMINDER: for any intervention, you will be asked to return the product in its original packaging in order to avoid any further damage caused by transport. Malfunctions Causes Solutions The appliance is not working. The power is off. Make sure that the appliance's power cord is properly plugged into the wall socket and that the "On/Off" switch is set to "On" ("I"). Alternatively, check the circuit breaker or fuses in your electrical system. The appliance is being used for the first time and it is smoking. It is normal for the appliance to produce some smoke when first used. Clean the hotplate with a damp cloth before switching on the appliance. The food is not being properly seared or is slow to cook. The temperature is not suited to the food. Select a higher temperature. A lot of smoke is produced when cooking food. Your food is too greasy Fat causes the formation of smoke. Put less oil or fat (or no oil or fat at all) on the hotplate. The appliance smells of melted plastic when in use. The protective film on all 3 sides of the appliance has not been properly removed.
