Frequently Asked Questions - COMM1 Excalibur

How to program a dehydration cycle on the COMM1?
Turn on the unit with the power switch. On the Main Menu screen, press the OFF button for programming. Use the up/down icons to set the time and temperature, then confirm with the checkmark. You can add a second cycle by pressing the plus icon. Start the program with the Start icon.
What is Hyperwave™ technology?
Hyperwave™ is a thermal cycling system that alternates heating and cooling. The heating elements turn off when the set temperature is reached, then turn back on when the air cools a few degrees. This optimizes dehydration without overheating food.
What power supply is required?
The dehydrator requires a dedicated circuit of 120/208-240 V, 60 Hz, single phase, 40 amps. It can be plugged into a 4-prong 40 A dryer outlet or hardwired.
How to save a dehydration profile?
After setting time and temperature, press the floppy disk icon on the Start screen. Type a name on the virtual keyboard and confirm with the checkmark. The profile will be saved and accessible via the arrows.
Can I dehydrate raw meat directly?
No. All meat and poultry products must be preheated to an internal temperature of 71 °C to 74 °C (160 °F to 165 °F) before dehydration to eliminate bacteria.
What to do if the programming does not match the screen?
Return to the Main Menu screen by pressing the 'X' on the home screen. If the problem persists, contact technical support at 1 877 368-2797.
What is the warranty of the COMM1?
Excalibur offers a one-year limited warranty for the original purchaser against material and workmanship defects. Spare parts are warranted for 90 days. The warranty does not cover damage due to misuse.
How to stop a running cycle?
From the Main Menu screen, press the stop icon. Choose 'STOP CURRENT CYCLE' to cancel the current cycle. The screen returns to the Main Menu after 5 seconds of no action.
Can I use the unit without heating?
Yes, the heat switch can be set to OFF to turn off the heating element. This allows better precision at low temperature, for example to dry herbs.
How to clean the dehydrator?
Unplug the unit. Clean the trays with warm water and mild detergent. Wipe the interior with a damp cloth. Never immerse the unit in water. Consult the instruction manual for details.

Excalibur AMERICA'S BEST DEHYDRATOR

The Excalibur® Commercial Dehydrator is an innovative, state-of-the-art dehydration unit.

Please take time to read this user manual before you attempt to use the dehydrator. There are several steps to operating this unit properly and setting the sophisticated controls.

CAUTION OR WARNING

Failure to follow the instructions EXACTLY as outlined in the user manual will cause your unit to not work properly or will cause your unit to not work at all.

Theory of Operation

Unlike an oven which maintains heat at a constant temperature, the Excalibur ^® Commercial Dehydrator is a state-of-the-art dehydration unit, which utilizes the innovative technology of temperature cycling.

To begin a cycle, set a time/temperature profile on the computer controller. Start the profile. The fans and heating elements are switched on. The fans will continue to run, until the profile is stopped.

The “AIR” temperature rises until the set point (temperature) you entered in the profile is reached. When the set point is reached, the heating elements will switch off. The “AIR” temperature will continue to rise a few degrees due to residual heat in the unit. This is normal and there is minimal effect on the internal food temperature by this rise in “AIR” temperature.

The heating elements remain off until the "AIR" temperature drops several degrees below the set point, at which time, the heating element will turn back on. The temperature will again begin to rise to the set point of the profile. This cycling is called Hyperwave™ and is an important part of the drying process.

It is important to remember, the temperature shown on the controller is the temperature of the air at the back of the unit. A temperature sensor can be used to check the internal temperature of the food/product being dried if internal temperature is of concern. The food temperature and the controller's set temperature may not match.

CAUTION OR WARNING

All meat and poultry products should be heated to a minimum temperature of 160^-165^ F prior to the dehydration process to kill any bacteria that may be present.
