SEAL Button: Start heat-seal operation. Use to make bags from rolls or seal bag in PULSE mode.

DRY VAC & SEAL Button: Start vacuum and seal operation for dry foods.

WET VAC & SEAL Button: Start wet vacuum for liquids or moist foods.

ACCESSORY Button: Operate Accessory Port on Lid of appliance. Use with vacuum hose, special canisters, and zipper bags (not included).

PROGRESS Bar: Lights indicate progression of selected function.

DATE CODE: DATE CODE function may be used with either DRY VAC & SEAL or WET VAC & SEAL. To set date on Date Coder, open Lid and rotate date wheels until desired date lines up with indicator arrows.

PULSE/CANCEL Button (pause/cancel button): Allows to manually vacuum and seal delicate foods or nonfoods or stops any function at any time.

Indicator Lights: Blue indicator lights will flash when Lid is locked and unit is ready to seal. Once desired function is selected, blue light will stop flashing and become solid. The green PROGRESS Bar will slowly illuminate. When cycle is complete, a beep will sound and PROGRESS Bar lights will be illuminated. This indicates that you may unlock Lid and remove sealed bag. Red lights indicate an error has occurred. Refer to Troubleshooting section.

Before first use:

- The Vacuum Sealer is intended to be used only with heat-seal bags which have at least one side that is textured for airflow. Do not use household plastic bags.

- A vacuum bag is sealed when two layers of the bag are heated from Heat-Seal Strip, causing bag to be permanently sealed.

- Wait at least 20 seconds between operations for Heat-Seal Strip to cool to prevent overheating and premature melting of bag.

- You may use the Vacuum Sealer with or without the roll caddy when sealing dry foods or nonfood items.

- Avoid sharp items around heat-seal bags or rolls when vacuum-sealing. Punctured bags will not seal properly.

Making Bags From Rolls

⚠️ CAUTION Burn Hazard. Seal bar and Date Code Heater are hot. Avoid touching.

  1. Open Roll Caddy Door and rest on counter.

  2. Lift Roll Cutter Bar and pull enough heat-seal roll out to fit the item to be sealed plus another 3 inches (7.62 cm). Lower Roll Cutter Bar and slide Roll Cutter across to cut.

  1. Plug into outlet.

  2. Place one open end of bag over Heat-Seal Strip. For best sealing, place curl side down so end of bag points down into chamber. Be sure there are no folds or wrinkles.

  1. Plug into outlet.
  2. Open Lid and rotate month and date wheels on Date Coder until desired date lines up with indicator arrows.
  3. To turn Date Coder on or off, press DATE CODE Button. The Date Coder is enabled when the blue indicator light above the Date Code Button is on.

NOTE: Vacuum Sealer will remember date code setting from last time it was used.
4. To turn off Date Coder, press DATE CODE Button and the blue indicator light will go out.
5. Use with Roll Caddy when sealing liquids or wet foods. Use with or without Roll Storage Caddy when sealing dry foods or nonfood items.

  1. For better sealing, fold over top of bag to keep clean while adding food. Unfold top of bag after filling.
  2. Center the open edge of bag within the Vacuum Chamber. Ensure entire edge of bag is inside chamber and bag is flat with no folds or wrinkles.
  3. Lower Lid and push Lid Lock Lever down to lock Lid. Press DRY VAC & SEAL or WET VAC & SEAL Button.
  4. PROGRESS Bar lights will gradually illuminate green and beep at end of cycle.
  5. Pull Lid Lock Lever up to release Lid and remove bag.
  6. Unplug when finished vacuum sealing bags.
  7. To prevent damage to the seals, store Vacuum Sealer with Lid Lock Lever in the unlocked position.

WET VAC & SEAL Tips

  • If sealing liquid or moist food, place Vacuum Sealer on top of Roll Caddy to elevate bag and only fill bag halfway.
  • Stand bag up on counter vertically to eliminate air bubbles. If necessary, rest bag in an open kitchen drawer in order to keep it upright. For best results, use Hamilton Beach Easy Fill Vacuum Sealer bags and do not exceed MAX LIQUID FILL line (approximately half full).
  • Lift Lid and align left edge of bag to the left indicator line and ensure the open end of bag is centered within Vacuum Chamber.
  • Cycle time will be longer for WET VAC & SEAL than DRY VAC & SEAL.
  • A small amount of liquid may collect in the chamber. This is normal. Wipe out Vacuum Chamber between each cycle as needed.

CAUTION Burn Hazard.

Seal bar and Date Code Heater are hot. Avoid touching.

DRY VAC & SEAL TIPS

- If using DRY VAC & SEAL, you may use the Vacuum Sealer with or without Roll Caddy.

NOTES:

  • Red lights on the PROGRESS Bar indicate an error. See Troubleshooting section.
    • To prevent overheating, allow 20 seconds between each bag that is vacuum-sealed.
    • To ensure proper seal, keep Lid closed during use.
  • Wipe out Vacuum Chamber between each cycle.

How to Use Vacuum Hose:

The Vacuum Hose can be used to seal containers and accessories (sold separately).

  1. Add contents to the container.
  2. Wipe inside of rim to remove any moisture, then place lid on container.
  3. With the Vacuum Sealer Lid closed and locked, insert the green end of the Vacuum Hose into the green accessory port on top of unit by pushing straight in to click into place.
  4. Insert the gray end of Vacuum Hose into accessory and push straight in to click into place.
  5. Press Accessory button to begin vacuuming. PROGRESS Bar will illuminate green during operation, progressing from left to right. When finished, unit will beep.

Vacuum-Sealing Tips

  • Buy foods in bulk and vacuum-seal to save time and money.
  • Wash and dry all fruits and vegetables before vacuum-sealing.
  • Washed leafy vegetables can be quickly dried with salad spinners.
    • To avoid crushing berries when vacuum-sealing, freeze them first. To freeze, wash, dry, and freeze on cookie sheets. Then vacuum-seal frozen berries.
  • Vegetables such as broccoli, Brussels sprouts, carrots, cabbage, cauliflower, green beans, kale, onions, peas, peppers, snap peas, and squash need to be blanched and frozen before vacuum-sealing.
    • After defrosting vacuum-sealed meats, poultry, and seafood, cook to a safe internal temperature.
  • Always cook foods to a safe internal temperature. Foods vacuum-sealed in Hamilton Beach NutriFresh™ Bags can be used in sous vide cooking and in water on stovetop. Contact manufacturer for safety of other bags.

Sous Vide

  • Sous vide is a no-fail method of cooking vacuum-sealed food in a precisely temperature-controlled water bath, ensuring that food is evenly cooked throughout and reducing chance of over- or undercooking.
  • Follow directions for vacuum-sealing moist foods when preparing meats, fish, and poultry for sous vide. Juices from meat cannot be drawn into Vacuum Port, or unit will no longer work.
  • Follow recommended sous vide cooking times to ensure optimal results. Visit www.hamiltonbeach.com and search "sous vide" for more information.

Nonfood Items

• Nonfood items, such as batteries, boating licenses, matches, and passports, can be vacuum-sealed to keep dry when boating, camping, or traveling.
- Keys, utensils, and other sharp or pointed objects can be vacuum-sealed. Make sure to wrap item in paper towels or some type of cushion before vacuum-sealing.
- For camping, boating, or hiking, be sure to take scissors to open your nonfood items.

Fragile Food

- To seal fragile items like chips or pastries, press and hold the PULSE/CANCEL button until desired amount of air is removed from the bag, then press SEAL or Date Code to apply date code and seal bag.

Care and Cleaning

WARNING Electrical Shock Hazard. Before cleaning, assembling, or disassembling the Vacuum Sealer, make sure the Vacuum Sealer is unplugged.

  1. Unplug. Let unit cool completely before cleaning.
  2. Wipe outside of Vacuum Sealer and Vacuum Chamber with a damp cloth or paper towel.
  3. Do not lock Lid when storing. Using locks for an extended time will damage Vacuum Sealer.

Troubleshooting

Vacuum Sealer shut off and won't turn on again.

- Make sure Lid is latched. Check power at outlet, then call Customer Service.

The Heat-Seal Strip melts through the bag.

  • Only heat-seal bags should be used. DO NOT USE PLASTIC HOUSEHOLD BAGS with Vacuum Sealer.
  • Open Lid and allow the Heat-Seal Strip to cool for 5–10 minutes. Always leave Lid open between bags, and allow at least 20 seconds between cycles.

The bag seal pulls apart.

  • Only heat-seal bags should be used. DO NOT USE PLASTIC HOUSEHOLD BAGS with Vacuum Sealer.
  • The seal of the bag may be incomplete. If seal has a crease in it, or if a liquid or powder has been trapped between layers of bag, layers may not have been welded together properly. Cut off the seal and wipe inside of bag clean. Then, try to vacuum-seal bag again.

The vacuum pump starts, but no air is being removed from the heat-seal bag.

  • Quart-size bag was not aligned to the left while using WET VAC & SEAL. Always align left edge of bag to the indicator line and ensure the open end of bag is centered within Vacuum Chamber.
  • Be sure to lock the Lid by pushing the Lid Lock Lever.
  • Be sure the bag is inserted properly. The open end of the bag should be centered within the Vacuum Chamber. Be sure the Vacuum Port is not blocked.
  • The bag may have a leak. If there is a leak in the bag, air will be pulled into the bag from the outside. Check for tears or punctures. If you are using a bag that was made from a roll of material, double-check that the end of the bag is sealed.
  • For best results, use Hamilton Beach Easy Fill Vacuum Seal bags.
  • Bag cut at an angle does not seal. Ensure bag is cut perpendicular to sides of unit.
  • Unit stored with Lid locked, gaskets deformed or overcompressed. Do not store with Lid locked. Replace Upper and Lower Chamber Seals.
  • Rest period between consecutive wet seals may be too short. Allow unit to cool 20 seconds between cycles when using Dry Vac & Seal and 30 seconds when using Wet Vac & Seal.

Lid Lock will not engage.

- Be sure to push down firmly on Lid Lock Lever to lock Lid. Blue lights on control panel will flash when Lid is properly latched.

Troubleshooting (cont.)

Any mode is selected but nothing happens.

  • Lid isn't locked. Make sure to push Lid Lock Lever to lock Lid in place.
  • Blue lights on control panel will flash when Lid is properly latched.

Part of bag was not sealed.

- Ensure that bag is aligned to left side of Vacuum Chamber.

Pump runs for an excessive length of time.

  • WET VAC & SEAL requires a longer cycle than DRY VAC & SEAL. This is normal. If pump continues to run after all air appears to be removed from bag or if it runs longer than one minute, press SEAL Button to end cycle. This may occur at very high altitudes.
  • Check for wrinkles in the bag near the foam seal. If found, smooth out wrinkles and try again.
  • Check the bag for holes. Even a pin-sized hole will prevent proper vacuuming.
  • When making bags from rolls, check the first seal to make sure it's complete before filling the bag and vacuum sealing.

PROGRESS Bar lights flashing red.

  • Flashing red lights on PROGRESS Bar as soon as Lid is latched. Call Customer Service.
  • Function button pressed and Vacuum Sealer is not working. Let Vacuum Sealer cool 15 minutes and start again.

Liquid is pulled into Vacuum Chamber.

- A small amount of liquid may collect in the Vacuum Chamber. This is normal. Wipe out Vacuum Chamber between each cycle as needed.

Liquid is present in the top edge of bag, above the seal.

- A small amount of liquid may be pulled into the edge of the bag. This is normal. Wipe moisture from edge of bag before storing.

Limited Warranty

This warranty applies to products purchased and used in the U.S. and Canada. This is the only express warranty for this product and is in lieu of any other warranty or condition.

This product is warranted to be free from defects in material and workmanship for a period of five (5) years from the date of original purchase. During this period, your exclusive remedy is repair or replacement of this product or any component found to be defective, at our option; however, you are responsible for all costs associated with returning the product to us and our returning a product or component under this warranty to you. If the product or component is no longer available, we will replace with a similar one of equal or greater value.

This warranty does not cover glass, filters, wear from normal use, use not in conformity with the printed directions, or damage to the product resulting from accident, alteration, abuse, or misuse. This warranty extends only to the original consumer purchaser or gift recipient. Keep the original sales receipt, as proof of purchase is required to make a warranty claim. This warranty is void if the product is used for other than single-family household use or subjected to any voltage and waveform other than as specified on the rating label (e.g., 120V \~ 60 Hz).

We exclude all claims for special, incidental, and consequential damages caused by breach of express or implied warranty. All liability is limited to the amount of the purchase price. Every implied warranty, including any statutory warranty or condition of merchantability or fitness for a particular purpose, is disclaimed except to the extent prohibited by law, in which case such warranty or condition is limited to the duration of this written warranty. This warranty gives you specific legal rights. You may have other legal rights that vary depending on where you live.
