Dehydrating Tips

Food Preparation

  • Choose in-season fruits and vegetables for best flavor. Discard any with bruises or mold.
  • Cut foods the same thickness, size, or shape to ensure even drying.

Pretreatment

  • Most fruits and vegetables require pretreatment before drying. Blanch vegetables to prevent color loss or to break skins to shorten the drying process. Dip fruits or potatoes in a solution of equal parts of lemon juice and water or use a fruit preservative following package directions.
  • Drain and completely pat dry food before dehydrating.
  • Marinate meat for jerky in refrigerator or season with jerky seasoning.

Determining Dryness

  • Top Tray in Air Fryer will dehydrate faster. Switch Trays occasionally during dehydration. Check all Trays for doneness at the minimum recommended time on chart below.
All fruits should be able to bend and be slightly soft but not tacky, except for apples and bananas, which should be crisp.
  • All vegetables should be crisp and easily broken.
  • Jerky is dry when it cracks without breaking when bent.

For more information on dehydrating, food safety, and storage of dehydrated foods, visit foodsafety.gov or your local University Cooperative Extension Service office.
