Introduction to Slow Cooking A typical slow cooker operates at approximately 160°F (71°C) on LOW, to about 190° – 200°F (88° – 93°C) on HIGH. Foods will cook on high (2) in about half the time required for low (1) cooking. Additional liquid may be required, as foods do boil on high (2). To turn slow cooker off, turn control knob to OFF (0). Always unplug from electrical outlet when not in use. Note: Lid must be kept on during cooking to prevent moisture from escaping. Using Your Slow Cooker

1. Prepare recipe according to instructions. Place food in stoneware liner and cover

with glass lid. Do not put more than 4 cups (950 ml) of food into the stoneware liner. Always cook with glass lid on. Important: Remember that frequent lifting of lid during cooking delays cooking time and allows for moisture to escape. Note: When cooking meat and vegetable combinations place vegetables in bottom of stoneware liner first; then add meat and other ingredients. Caution: If stoneware liner is hot, DO NOT add cold food. If stoneware liner is cold, DO NOT add hot food. Stoneware liner cannot stand the shock of sudden temperature changes.

2. Plug into standard electrical outlet.

3. Turn control knob to desired cooking setting, LOW (1) or HIGH (2).

Caution: Cooking base will get very warm during cooking; this is where heating element is located. Use pot holders or oven mitts when touching any part of the slow cooker.

4. Cook according to recipe instructions.

5. When cooking time is complete, turn control knob to OFF (0) and unplug.

6. Using oven mitts, carefully remove glass lid by grasping knob and lifting lid slightly

away from you. This will allow steam to escape.

7. Using oven mitts, remove stoneware liner from cooking base and place on a trivet.

(Liner is hot; do not place directly on a tabletop or counter surface.)

8. Even when switched OFF (0) and unplugged, slow cooker remains hot for some time

after use; set aside and allow appliance to cool before cleaning or storing. Note: If you are moving hot slow cooker, grasp unit by cooking base handles; use pot holders or oven mitts. Use care.

9. Allow to cool completely before cleaning, see CLEANING YOUR SLOW COOKER.

Hints for Slow Cooking

  • Meats will not brown during the cooking process. If you desire, heat small amount of oil in skillet; add meat and brown prior to putting into stoneware liner.
  • Whole herbs and spices flavor better in slow cooking than crushed or ground.
  • Remember, liquids do not boil away like they do in conventional cooking. Reduce amount of liquid in any recipe that is not designed for slow cookers. Exceptions to this rule would be rice and soups. Remember, liquids can always be added at a later time, if necessary.
  • High fat meats can result in dishes with less flavor. Pre-cooking or browning will help reduce amount of fat and help to preserve color. The higher the fat content, the less liquid needed. If cooking meat with high fat content, use thick onion slices under it so that meat will not sit and cook in fat. If necessary, use slice of bread, spoon or straining spoon to skim off excess fat from top of foods before serving.
  • Foods cut into uniform pieces will cook faster and more evenly. Converting Standard Recipes to Slow Cooking
  • Vegetables such as carrots, potatoes, turnips, and beets require longer cooking times than most meats. Place them on bottom of stoneware liner and cover with liquid.
  • If adding fresh milk or yogurt, it should be done during last 2 hours. Evaporated milk may be added at start of cooking. If possible, substitute condensed soups for fresh milk or yogurt.
  • Rice and pasta are not recommended for long cooking periods. Cook separately and then add to slow cooker during last 30 minutes, or follow slow cooker recipe instructions.
