HIGH TEMPERATURES - RISK OF BURNS

Your new »DESIGN ESPRESSO PRO« is designed for brewing coffee. Thus, some parts (e.g. group head, portafilter, hot water / steam wand) will get very hot during operation and hot steam and hot water may escape. Additionally, the appliance is under high pressure, during operation. Please adhere to the following precautions to avoid injuries and damage.

- The appliance generates steam under high pressure – risk of burns! Do not hold your hands and arms under or near the group head or hot water / steam wand during operation and thereafter.

- Only touch hot parts (e.g. portafilter, hot water / steam wand) at the dedicated handles during operation and shortly thereafter to avoid scalds. Even after operation these parts may be still hot.

- Hot water and hot steam can escape from the group head, portafilter, and hot water / steam wand. Do not hold your hands and arms or any delicate objects under or near these parts, while the appliance is still hot. Always ensure that the hot water / steam wand points to the drip tray, when not in use. Before starting a brewing cycle, always ensure that the portafilter is installed correctly and firmly in the group head.

Do not remove or even loosen the portafilter from the group head during operation to avoid risk of burns due to hot water and steam. Always switch OFF the appliance (turn the selection dial to the ver-

tical position, then press the POWER button), before emptying the drip tray. Otherwise, due to the backflush system of the appliance hot water could run out.

PROPERTIES OF YOUR DESIGN ESPRESSO PRO

Your new »DESIGN ESPRESSO PRO« Machine is designed for brewing coffee, texturing and heating milk, giving off hot water for any type of water-based hot drinks, for diluting your coffee, and for pre-heating cups and the portafilter.

Typically the espresso grind is somewhat finer than that designated for other types of coffee brewers. Fill the coffee powder in the designated, double-walled stainless steel filter basket, distribute it evenly and tamper it. Thereafter you install the filter basket at the group head of the machine via a pressure-tight portafilter. The 1000 W Thermoblock heating system will bring the water to the required brewing temperature. The 15 bar Ulka pump forces the water through the coffee powder on high pressure. Already after some seconds, the espresso will drip from the portafilter spouts. You control the desired amount of espresso according to your likings, via the brewing time. If you prefer espresso pads, the special E.S.E. pad system (Easy Serving Espres-

so) is provided. Using this feature, you simply place one pad into the filter basket and start the extraction.

For preparing usual, “normal” coffee, you simply dilute espresso, conveniently using the hot water function of the »DESIGN ESPRESSO PRO«.

Even coffee specialities can be prepared without effort: milk froth, e.g. for cappuccino and latté macchiato is available via the steam function—always freshly heated and textured. Hot water and steam are directed into the cup or provided milk jug via the fully swivel-mounted hot water / steam wand.

Note:

You may use the hot water function even for preparing small amounts (1-2 cups) of other hot drinks (e.g. tea, cacao mixtures).

TIPS FOR BEST RESULTS

Preparing top-quality coffee is a result of the perfect balance of flavours and texture, achieving the optimum combination of sweetness, acidity, and bitterness. You will learn this art quite easily using your new espresso machine. This chapter will give you good advice.

  • The flavour of your coffee will depend on many factors: origin and type of your coffee beans, degree of roast, freshness, and grind size. Give it a try by varying these factors one by one and checking the result against your own preferences. If the coffee flows too fast (less than 9 seconds until it starts dripping), then a large part of the flavouring substances remains in the coffee powder and the coffee is watery, bland and with only poor crema. The resulting espresso will be under extracted. In this case, the grind size is too coarse.
  • If the grind is too fine (looks like powder and feels like flour when rubbed between fingers; more than 14 seconds until the coffee starts dripping), the water will not flow through the coffee even when under pressure. The resulting espresso will be over extracted, dark in colour and bitter in flavour. The crema will be stained. Use coffee powder with a somewhat coarser grind.
  • You can influence the flow rate of the coffee even by tamping the powder in the filter basket with more or less pressure.

SELECTING THE APPROPRIATE FILTER BASKET

The flat 1 cup filter basket is designated for approx. 30 ml of espresso (1 cup). Use the somewhat deeper filter basket for extracting approx. 60 ml (2 cups).

Additionally, a special pad filter basket is provided. All filter baskets are labelled by symbols at the back

  • The amounts given for measuring the coffee powder are adapted to a level filling of the provided measuring spoon. Do not press or heap the coffee powder in the measuring spoon.
  • If you wish to prepare somewhat more espresso (e.g. for a mug of coffee), you should use the 2 cups filter basket. However, you should fill this filter basket with no more than 2-3 measuring spoons and brew no more than 60 ml.
  • Only use the given amount of coffee powder for each filter basket, because the mesh of the filter basket is adapted to this amount to get the optimum pressure and extraction (see: 'Selection and Storage of Coffee').
  • Use the pad filter basket exclusively for espresso pads. Always use only one single espresso pad for each extraction.
  • Only use the designated espresso pads with the »Design Espresso Pro«. Usual coffee pads are too large and not suited for espresso machines. The rim of the espresso pad may not protrude the rim of the pad filter basket, to avoid leakage of the water system during the extraction.
  • There are two spouts for coffee in the bottom of the portafilter. You may place one or two cups under the portafilter. Two cups can be filled simultaneously.

SELECTION AND STORAGE OF COFFEE

  • Ground coffee will quickly loose a lot of flavour and taste. Thus, it is best to grind directly before the extraction to maximise flavour. When purchasing coffee beans, use bags with a 'Roasted On' date.
  • When purchasing pre-ground coffee, ensure that the coffee is suited for espresso machines. You should consume pre-ground coffee within 1 week.
  • Purchase even coffee beans only in small batches to avoid long periods of storage. When stored correctly, coffee beans will be good for approx. 3 weeks from the Roasted On date on.
  • When using your own coffee grinder, adjust a grind size suited for espresso machines according to the instructions of your coffee grinder.
  • An obsolete coffee grinder may possibly grind the coffee beans unevenly. In this case, prefer pre-ground coffee.
  • The grind size will affect the rate at which the water flows through the ground coffee in the filter basket and the taste of the espresso. The grind size should be fine but not too fine.

- Store coffee (beans and powder) in a cool place in a dark and dry container. Vacuum seal, if possible.

TEXTURING MILK

We recommend the following mixtures of coffee and milk for making cappuccino or latté macchiato:

• Cappuccino: 1/3 Espresso, 1/3 hot milk, 1/3 milk froth

- Traditionally, latté macchiato will be served in a high glass with 3 layers: Espresso with approx. the same volume hot milk on it and 1 cm thick, rich milk froth.

AUTOMATIC SHUT-OFF

The »DESIGN ESPRESSO PRO« features an automatic shut-off. This function will automatically switch off the appliance after approx. 25-30 minutes of being idle. The POWER button will get dark.

You may switch on the appliance at any time by pressing the POWER button.

PREPARATIONS

Always ensure that young children do not play with any parts or accessories or the packaging!
  2. Ensure you have found all parts and accessories before discarding the packaging. See: 'Knowing Your »DESIGN ESPRESSO PRO«'.
  3. Remove the water tank located at the back of the espresso machine by pulling the water tank lid upwards and, by the lid, lifting the water tank out of the support.

CAUTION: Do not use any abrasive cleaners, cleaning pads (e.g. metal scouring pads), or any corrosive cleaners (e.g. disinfectants, chemical bleach) for cleaning. Do not use any hard or sharp-edged objects for cleaning the appliance. Cleaning of the water tank must be performed with caution, to avoid damage to the lid and valve at the bottom.

  1. Clean the appliance and all its parts and accessories according to the instructions in chapter 'Care and Cleaning'.

  2. Place the appliance on an appropriate working place near a suitable wall power outlet.

Note:

Before each use, check the filling level of the water tank. Change the water daily. Fill the water tank with cold, fresh tap water or bottled table water with low mineral content. Do not use mineral water, de-ionized water, carbonated water, or any other liquids.

FIRST USE

Note:

We do not recommend to use highly filtered, de-mineralized or distilled water as this may affect the taste of the coffee and how the espresso machine is designed to work. Use clear tap water or low-mineral table water.

  1. Check the filling level in the water tank. The filling level must lie between the MIN (100 ml) and MAX filling lines (1.5 litres). If required, fill the water tank. Open the water tank lid (pull it up and then fold it back) and pour the water into the water tank. Alternatively, remove the water tank from the back of the appliance by simply pulling the water tank out by the lid. Then fill the water tank via the water tap. For reassembling the water tank, slide the water tank down at the rear of the espresso machine until it settles in the support. With the lid closed, the lid of the water tank may not protrude the frame of the housing. Ensure that the drip tray is empty and inserted correctly into the base of the appliance. Ensure that the selection dial is in the vertical position (OFF).
  2. Connect the espresso machine to a suitable power outlet (see: 'Important Safe-guards for Electrical Appliances'). Press the POWER button to turn the appliance on.

Note:

The POWER button will flash to indicate that the espresso machine is heating. After approx. 2 minutes, the group head will reach the operating temperature and the POWER button will be illuminated continuously. The appliance is now in standby mode, and ready for the next step.

  1. Before first use, you should operate the appliance without coffee powder to purge the water system, group head, and hot water / steam wand. Refer to the following section 'Purging the Water System'.

PURGING THE WATER SYSTEM

⚠ WARNING - RISK OF BURNS! Do not hold your hands and arms or any delicate object under or near the group head or hot water / steam wand, while the appliance is in operation. Hot water and steam can escape and cause severe injuries and damage. Before selecting a function via the selection dial, always ensure that the drip tray is installed correctly and the hot water / steam wand is pointed to the drip tray or, what's better, any suitable vessel to avoid scalds and damage.

Note:

During operation and in standby mode, the POWER button may flash occasionally, indicating that the espresso machine keeps the correct temperature of the group head.

Perform the following steps, when the espresso machine is in standby mode, with the POWER button illuminated continuously.

  1. Ensure that the water tank is filled to the MAX filling level and the drip tray is completely empty and installed correctly.
  2. Place a sufficiently large vessel (e.g. a large mug or bowl) on the drip tray, below the group head. Turn the hot water / steam wand to ensure that it is pointing into the vessel, but not placed directly under the group head.

⚠ WARNING: During the purging process, large amounts of hot steam and hot water will escape from group head and hot water / steam wand. Additionally, hot water may splash. Keep a sufficient distance to the appliance. Ensure to empty the used vessel in time! While doing so, keep in mind that the contents and vessel will be hot. Keep an eye on the filling level in the water tank and refill the water tank in time.

  1. Turn the selection dial CLOCKWISE to run hot water through the group head. After approx. 10 - 15 seconds, turn the selection dial back to the vertical position (OFF).

IMPORTANT: During the purging process, observe the filling level in the water tank.

Ensure that the filling level will not drop below the MIN marking. Before removing the drip tray, always wait approx. 30 seconds after the last operation of the appliance, then press the POWER button to switch off the appliance. Otherwise, hot water could escape due to the backflush system of the machine. With the drip tray emptied and re-installed, press the POWER button again.

  1. Wait, until the POWER button is illuminated continuously again. Ensure that the hot water / steam wand is directed to the drip tray or into the vessel used. Then turn the selection dial COUNTER-CLOCKWISE to run hot water through the hot water / steam wand. After 10 -15 seconds, turn the selection dial back to the vertical position (OFF) to stop the water flow. Wait, until the POWER button is illuminated continuously again. Ensure that there is still enough water in the water tank.

  2. Press the STEAM button to select the steam function. Then turn the selection dial COUNTER-CLOCKWISE to give off steam via the hot water / steam wand. After approx. 10 seconds, turn the selection dial back to the vertical OFF position to stop the steam function. Automatically, the STEAM button will go out and the hot water function will be selected again.

  3. Repeat steps 3 to 5 until the water tank is empty. In between times, do not forget to empty the vessel (drip tray) in time. While doing this, keep in mind that the vessel and its contents may be very hot.

  4. Refill the water tank and, if required, empty the drip tray. The appliance is now ready for making your espressi.

THE BEST WAY OF BREWING YOUR COFFEE

WARNING - RISK OF BURNS! During operation and thereafter, hot steam and hot water could escape from the group head and/or hot water / steam wand. Do not hold your hands or any delicate object near the group head or hot water / steam wand. Hot steam and hot water under pressure could escape even shortly after shut-off. Young children must always be supervised when the espresso machine is in their reach. Empty the drip tray at the latest when the red filling level indicator is sticking out of the grill of the drip tray. After the last operation of the appliance, the backflush system of the appliance will give off surplus water for releasing the pressure within the water system. Press the POWER button to switch off the appliance before removing the drip tray.

Note:

During operation and in standby mode, the POWER button may flash occasionally, indicating that the espresso machine keeps the correct temperature of the group head. For brewing a shot of espresso, you should wait, until the POWER button is illuminated continuously to ensure that the group head has reached the appropriate temperature for brewing.

Note:

We recommend to use clear tap water or a low-mineral table water with the appliance. Do not use highly filtered water or mineral water.

Remove the drip tray with caution, when it is filled, to avoid spilling the contents. For this, lift the drip tray a little at the front side, then slowly pull it out.

  1. Ensure that the water tank is filled sufficiently (filling level between MIN and MAX) and assembled correctly. Check it the drip tray is empty and installed correctly in the base of the appliance.
  2. Connect the appliance to the power supply and press the POWER button to

switch on. Wait until the appliance reaches the pre-selected operating temperature and the POWER button is illuminated continuously (after approx. 2 minutes). The espresso machine is now in standby mode, ready for the next step.

  1. Select the required filter basket: 1 cup filter basket, 2 cups filter basket, or pad filter basket (for espresso pads). The filter baskets are labelled via icons on the back (see: 'Selecting the Appropriate Filter Basket').

Note:

Use the 1 cup filter basket for brewing approx. 30 ml espresso. Use the 2 cups filter basket for approx. 60 ml espresso. For espresso pads, select the designated pad filter basket and insert only one espresso pad.

  1. Ensure that the mesh of the filter basket and portafilter are clean. If the pores of the filter basket are blocked, clean the filter basket first (see: 'Cleaning the Filter Basket and Portafilter'). Then place the filter basket into the portafilter and press the filter basket down until there is no gap left between the filter basket and portafilter.

PRE-HEATING

⚠ WARNING: Only use heat-resistant cups, mugs, and glasses. Other materials could burst, break, or melt. This way, splinters or other particles could get into your coffee, causing severe injuries.

TIP: A warm cup will help maintaining the coffee's optimal temperature. As well, a cold portafilter and filter basket can reduce the extraction temperature significantly, thus affecting the quality of your espresso. Thus, you should pre-heat the portafilter and filter basket with hot water from the hot water / steam wand before usage. Thereafter, carefully dry portafilter and filter basket. With the filter basket still wet, during the extraction, hot water could by-pass the ground coffee in the filter basket.

  1. Pre-heat your cup by rinsing with hot water. For this, place your cup on the drip tray and insert the hot water / steam wand into the cup. Then turn the selection dial to the HOT WATER / STEAM position and back to fill the cup with some hot water. Thereafter, place the cup on the cup warming plate on top of the appliance.
  2. By the handle, hold the portafilter under the hot water / steam wand. Then turn the selection dial to the HOT WATER / STEAM position and back to fill the portafilter with some hot water.
  3. Thereafter, thoroughly wipe dry the filter basket and portafilter.

FILLING THE FILTER BASKET

Note:

Ensure to use the appropriate amount of coffee powder for each filter basket. The pores of the filter baskets have exactly the right size to reach the correct pressure with the predetermined amount of powder.

  1. Fill the coffee powder into the filter basket. With the 1 cup filter basket use 1 - 2 measuring spoons of coffee powder. Use 2 - 3 spoons for the 2 cups filter basket.
  2. With the 1 cup or 2 cups filter basket, distribute the ground coffee evenly in the filter basket. With the flat end of the measuring spoon (tamper) press the espresso powder down evenly. Do not press the coffee powder too tightly (see: 'Selection and Storage of Coffee').

When using espresso pads, insert the pad into the pad filter basket. Only use one separate pad for each extraction.

  1. Wipe off thoroughly any spilled espresso powder on the rim of the filter basket or ensure that the paper filter of the espresso pad does not reach the rim of the filter basket.

IMPORTANT: The rim of the filter basket must be completely clear, clean, and dry to ensure a good, pressure-tight seal at the group head.

EXTRACTING THE ESPRESSO

⚠ WARNING: Hot water and hot steam may escape at the group head and hot water / steam wand. During operation, do not hold your hands or arms under the group head or hot water / steam wand, to avoid scalds. Purging the group head: Before installing the portafilter at the group head, run a short flow of water through the group head. Place a heat-resistant vessel under the group head. Turn the selection dial clockwise to start the brewing function and let the water flow for approx. 5 seconds. This will pre-heat and purge the group head. Turn the selection dial back to the vertical position to stop the water flow. Installing the portafilter: Align the portafilter handle with the INSERT position on the group head. Lift the portafilter to insert it into the group head and rotate the handle towards the LOCK TIGHT position.

  1. If required, empty your pre-heated cup and place it under the portafilter. You may fill two cups at the same time. If you wish to, ensure that each cup is placed under one of the spouts of the portafilter. For filling a single cup, ensure that both spouts are directed into your cup.

⚠ WARNING: The group head and portafilter will be under pressure during extraction. Do not remove or loosen the portafilter at the group head during operati-

on of the appliance. After switching off the brewing function, wait approx. 30 seconds until the appliance releases the pressure. Thereafter, the portafilter may be removed.

  1. Starting the extraction: With the POWER button illuminated continuously, turn the selection dial clockwise to the brewing function to start the extraction. The appliance pressurizes the portafilter with hot water. After 14 seconds at the latest the espresso should drip from the portafilter spouts.

Note:

As a guide, the espresso will start to flow after 9 – 14 seconds with the consistency of warm dripping honey (see: 'Tips for Best Results'). A single espresso makes approx. 30 ml, a double shot approx. 60 ml. If you wish to extract a larger volume of coffee, you should add the appropriate amount of hot water via the hot water function (see: 'Preparing Long Black—Usual Coffee'). Otherwise, your coffee could get bitter.

  1. After achieving the desired amount of coffee, turn the selection dial back to the vertical position to stop the extraction.

AFTER THE SHOT

⚠ WARNING: Immediately after brewing, the portafilter and group head will be very hot and the system of the appliance is under pressure. Always wait, until the appliance released the pressure (approx. 30 seconds), before loosening the portafilter from the group head. Only touch the portafilter by the handle. If required, rinse the portafilter with some cold water or wait until it cooled down, before touching any metal parts of it.

  1. After the shot, the coffee will still drip a little. Wait approx. 30 seconds before removing your filled cup or glass and place it on the warming plate. Additionally, the system needs some time to release pressure in the group head. Remove the portafilter by turning the portafilter handle to the INSERT position and pulling the portafilter down. Doing so, do not touch the metal parts of the portafilter and group head to avoid burns.

  2. Turn the portafilter upside down and hit the portafilter on a suitable support to make the coffee grinds fall out. Then purge the portafilter and filter basket via hot water. You may use the hot water function of the appliance for this (see: 'Hot Water').

  3. If you do not wish to prepare another cup of coffee, wait approx. 30 seconds after the last operation of the appliance. Then press the POWER button to switch off the appliance. If you wish to leave the appliance unattended or will use the appliance again for an elongated time period, unplug the appliance.

Note:

With the appliance still turned on, the appliance will keep the brewing temperature. You can start the next extraction without any waiting time.

Note:

Discard the coffee grinds in domestic waste or compost at least every day to avoid mouldering. However, do not discard the coffee grinds in the sink, as this could clog the outlet pipe.

HOT WATER

The HOT WATER function can be used for purging and pre-heating cups and portafilter or for giving off hot water for your drinks (see also: 'Preparing Long Black—Usual Coffee').

WARNING - RISK OF BURNS! During operation and thereafter, hot steam and hot water could escape from the hot water / steam wand and the hot water / steam wand will be very hot during operation and thereafter. Do not hold your hands on or near the tip of the hot water / steam wand. Young children must always be supervised when they are near the espresso machine.

IMPORTANT: The drip tray must be emptied at least if the red filling level indicator sticks out of the grill on the drip tray. Ensure to switch off the appliance (press the POWER button), before removing the drip tray from the base of the appliance. Otherwise, hot water could escape, when the appliance releases pressure via the backflush system. Ensure not to spill the contents of the drip tray.

Note:

The appliance is not intended for giving off large amounts of hot water. After approx. 10 seconds and producing approx. 500 ml of hot water, turn the selection dial back to the vertical position to switch off the hot water function and wait, until the POWER button is illuminated continuously again. When taking more hot water, the water will be only lukewarm and overheating of the heating elements may occur.

  1. Ensure that the drip tray is empty, the water tank is filled with an appropriate amount of water, and the POWER button is illuminated continuously.
  2. Place a suitable vessel under the hot water / steam wand (e.g. your cup). If you wish to pre-heat the portafilter, turn the hot water / steam wand to the drip tray and hold your portafilter under the tip of the hot water / steam wand (see: 'Pre-Heating').

  3. To start pouring hot water, turn the selection dial counter-clockwise to the HOT WATER / STEAM position and leave the appliance operate, until the desired amount is produced. However, do not leave the appliance operate for more than 10 seconds (approx. 500 ml).

  4. Turn the selection dial back to the vertical position to stop the water flow. Take your vessel out from under the hot water / steam wand and, by the handle, turn the hot water / steam wand back to the drip tray, because even after operation, some hot water could drip from the hot water / steam wand.

PREPARING LONG BLACK-USUAL COFFEE

The Long Black corresponds best to "usual" coffee. Due to being diluted via hot water, the Long Black is much weaker than espresso. Commonly, the Long Black is filled up to approx. 250 ml. To meat your liking, you may start with a single or double shot of espresso.

  1. Prepare an espresso (see: 'Extracting the Espresso').
  2. According to your liking, add hot water via the hot water function of the appliance (see: 'Hot Water').

TEXTURING MILK

The »DESIGN ESPRESSO PRO« enables texturing milk via the steam function. However, always start with fresh, cold milk. You will get the best results, when using low-fat milk. Keep a damp, clean cloth at hand for wiping residues of milk off the hot water / steam wand after texturing.

Consume textured milk, before the milk begins to separate. However, different brands and types of milk and milk alternatives will texture differently. Additionally, the freshness of the milk will have great influence. You may need to adjust the procedure accordingly.

WARNING - RISK OF BURNS! During operation and shortly thereafter, the hot water / steam wand is very hot and hot steam, hot water and condensate could escape from the hot water / steam wand. Do not hold your hands near the hot water / steam wand tip. Ensure that the hot water / steam wand points to the drip tray, when not in use. Young children must always be supervised, when they are near the espresso machine.

IMPORTANT: The drip tray must be emptied in time, but at the latest when the red filling level indicator is sticking out of the grill on the drip tray. Switch OFF the appliance (press the POWER button), before emptying the drip tray. Otherwise, due to the backflush of the water system, hot water could escape.

Dip the tip of the hot water / steam wand at least 1 cm into the milk, before starting the steam function. Otherwise, the milk could splash out of your vessel (e.g. the provided milk jug).

Note:

For optimum milk texturing performance, it is crucial that the hole in the hot water / steam wand tip is clear. Even with a partially blocked hole the ability of the hot water / steam wand to produce sufficient froth may be affected. Prior to texturing milk, purge the hot water / steam wand via a steam burst. After texturing, always wipe the hot water / steam wand to remove residues of milk, and then purge again with steam.

Note:

Texturing milk is somewhat easier with the stainless steel tube of the hot water / steam wand installed correctly (see: 'Cleaning the Hot Water / Steam Wand'). However, the stainless steel tube is not obligatory.

  1. Ensure that the water tank is filled with a sufficient amount of water. The filling level must lie between MIN (approx. 100 ml) and MAX (approx. 1.5 litres). If required, empty the drip tray. Switch on the appliance and wait until the POWER button is illuminated continuously.
  2. Fill the milk jug with cold, fresh milk to below the spout position (approx. half full).

Note:

When using another vessel, ensure to fill it only half full too to prevent the milk from overflowing.

  1. By the handle, turn the hot water / steam wand to the drip tray. Then press the STEAM button to select the steam function. The STEAM button will flash. To remove any condensed water from the system, turn the selection dial to the HOT WATER / STEAM position until steam is produced. Then turn the selection dial back to the vertical position.

  2. By the handle, turn the hot water / steam wand to the front of the appliance and, at an angle, insert the hot water / steam wand tip 1 - 2 cm below the surface of the milk close to the wall of the milk jug.

⚠ WARNING: Do not take the hot water / steam wand out of the milk with the steam function still operating. Otherwise, hot milk could splash and hot steam will escape. Always turn the selection dial to the vertical position, before removing the milk jug.

  1. Press the STEAM button again to make the STEAM button flash. Turn the selection dial counterclockwise to the HOT WATER / STEAM position to start steam production. Keep the hot water / steam wand tip below the milk surface, until a vortex is generated in the milk jug.
  2. With the milk spinning around, carefully lower the milk jug to bring the steam tip to the surface of the milk and start introducing air into the milk. You may have to gently break the surface of the milk with the tip to get the milk spinning fast enough.
  3. Keep the tip at or slightly below the surface, continuing to maintain the vortex. Texture the milk until sufficient volume is obtained.

IMPORTANT: Ensure that the milk will not run over the brim of the milk jug. The milk is heated up via hot steam. Be aware that the vessel will get hot.

  1. With the desired amount of froth produced, lift the milk jug to lower the tip somewhat deeper beneath the surface, but keep the vortex of milk spinning. Use the steam to rise the milk temperature until the milk jug becomes too hot to touch.

  2. Turn the selection dial back to the vertical position and wait some seconds to allow pressure drop in the steam system. Then remove the milk jug carefully.

⚠ WARNING: The hot water / steam wand will be very hot after usage and steam could still escape from the tip. Do not touch the hot water / steam wand with your hands or delicate objects to avoid injuries and damage. Always ensure that the steam wand cooled down before touching the steam wand tip with your hands. Immediately wipe the hot water / steam wand with a clean, damp cloth, ensuring not to touch the hot water / steam wand with your skin.

  1. By the handle, move the hot water / steam wand to the drip tray. Then press the STEAM button again to select the steam function. Turn the selection dial to the HOT WATER / STEAM position to produce a short burst of steam for purging the hot water / steam wand.

Note:

Always wipe the hot water / steam wand with a damp cloth BEFORE purging the hot water / steam wand. Wiping the steam wand will remove the majority of milk and allows the steam burst more effectively remove any residual milk.

  1. Tap the milk jug on the table-top to collapse any large bubbles, then swirl the jug to polish and re-integrate the texture.
  2. Consume the milk directly after texturing, before the milk begins to separate. Pour the hot milk in your coffee and distribute the milk froth with a spoon on top.

Note:

Milk goes bad easily producing an unpleasant smell and taste. After using the hot water / steam wand for texturing milk, you should always clean the hot water / steam wand—at the latest at the end of the day (see: 'Cleaning the Hot Water / Steam Wand'). This way, you will keep the taste and flavour of textured milk fresh and silky.

To prevent severe calcification, we recommend to descale the machine regularly, according to the degree of hardness of your water and the frequency of usage. Here-by, the usage of a gentle descaler, that does not affect any metal parts or silicone seals, is important.

IMPORTANT: For decalcifying, please use the GASTROBACK PREMIUM DESCALER (Art. No.: 98175) exclusively. This Descaler contains special additives and is matched to the components used in our machines. Using the GASTROBACK PREMIUM DESCALER a mixture of 50 ml descaler and max. 750 ml of water is recommended.

Due to variations in water hardness and usage of the machine, we can not make any precise specifications on the frequency of descaling. The following table is a non-binding recommendation and is for guidance only.
