Introduction
Read and understand all instructions. These instructions provide important information on the correct installation, safe and correct use and maintenance of this product. Thoroughly read this manual before you start to use this product. In particular, be sure to read and fully understand the Safety Precautions described in this manual before you use this product.
For further information or additional handbooks, please contact your distributor or the manufacturer.
Also, store this manual in a safe place so that it can be easily referred to during use of this product.
This handbook is an essential part of the machine.
This handbook reflects the current manufacturing requirements and is subject to change according to future modifications.
The manufacturer is free to modify this manual without updating previous editions except in exceptional cases.
The manufacturer accepts no responsibility for damage to persons or objects caused by incorrect installation and unreasonable use and maintenance
The instructions in this handbook are in no way a substitute for the safety instructions and technical data on the machine concerning installation and function.
This machine is to be operated according to the instructions supplied in the handbook by a responsible adult operator, installation and/or service technician.
Important safety precautions
The espresso machine SOPHIA is designed for the sole purpose of producing coffee, hot water and steam for hot drinks. All other uses are strictly forbidden an can be very dangerous.
The machine is designed for professional use only.
This machine is not be used by children or person with reduced physical or mental capabilities, or lack of experience and knowledge.
The machine should not be operated with temperatures lower than 6 °C and hotter than 36 °C. Do not use outdoors. The machine's surrounding area has to be safe and hygienic and respecting the local safety regulations.
The machine has to be installed with an efficient grounding/earthing system; the manufacturer recommends a wooden platform on which the operator can stand.
Do not use aerosol sprays near the machine.
Do not place heavy objects or climb on top of the coffee machine.
Do not place on or near a hot gas or electric burner. Do not allow liquids to get inside the coffee machine.

Never touch coffee groups, boilers, metal pipes, spouts, steam and hot water valves and wands. They are hot and could cause burns.
Attention: never hold your hands under the brewing group, the filter holder, the steam and hot water wands. Hot drinks, hot steam and hot water are dispensed. Danger!
Allow the machine to cool before putting on or taking off parts
To protect against electric shock do not immerse any part of the machine, as well as cord and plugs in water or other liquid.
To reduce the risk of electrical shock, do not touch the machine with wet parts of your body (i.e. your hands).
Before carrying out any maintenance operations turn the machine to "OFF", disconnect it from the mains and allow to cool.
Do not operate any appliance with a damaged cord, plugs, or after the appliance malfunctions or has been damaged in any manner. Do always contact the authorised technical service.
Before disconnecting the plug from the wall outlet, turn the machine off.
To ensure efficient and correct operation it is essential to follow the manufacturer's instructions concerning the periodic maintenance carried out by the authorized service technician.
All maintenance must be carried out exclusively by authorized service technicians.
All spare parts must be original parts or parts authorized by the manufacturer.
Never use the machine without water. This might cause serious damage to the machine and reflect also to safety risks.
Do not leave such packing items as plastic bags, styrofoam, nails, etc. around because children or other people could get hurt or damaged.
Installation
The espresso machine SOPHIA is to be installed to comply with the applicable federal, state or local plumbing codes having jurisdiction.
The manufacturer has tried to foresee all possible safety devices to ensure the safety of the users. Anyhow different conditions of installation or of equipment moving can cause situations which cannot be controlled or foreseen. Therefore it's absolutely necessary to evaluate all remaining risks and to care about the following:
- Installation and maintenance must be carried out by technicians and service providers authorised by the manufacturer.
- Any defect or discrepancy has to be notified immediately to the authorised persons for installation and maintenance.
- A residual current device (RCD) having a rated residual operating current not exceeding 30mA must be installed.
- This machine is safe only when it has been correctly connected to an efficient grounding /earthing system, implemented in accordance with the current safety regulations.

- All electrical connections have to be effected exclusively by authorised and qualified technicians. Any improper cable connection is forbidden.
- Check the integrity of all components and do not install defective or damaged parts. Ask for replacement.
- Check that capacity of the electrical system is sufficient for the maximum rated power shown on the data rating plate of the machine.
- The customer has to protect the electrical feeding of the machine by means of a safety switch system of 30 mA.
• The machine must be installed with an electrical switch with adequate fuses and safety devices. - The machines with electrical input over 16 A, must be connected to a net with impedance = or < than 0.37 Ω.
- Before installation, the manufacturer strongly recommends to control the water supply system and the electrical connections.
- Check the efficiency of the machine's main drain. Then proceed with the connection of the water drain hose to the machine. Check again pouring an adequate quantity of water directly into machine's drain tray (located under the drip tray).
- This equipment must be installed on a flat, level and stable surface. The minimum height of this surface is 1025 mm
- Handle the machine with care.
- In case of substitution of the water inlet hose, the used one is not to be reused.

The water hardness being between:
50 to 100 American degrees
7 to 14 German degrees
4 to 8 French degrees
Please install a water filter if necessary.
Water pressure from the mains Maximum water inlet pressure is 6 Bar (0,6 MPa – 600 KPa) Please install a pressure reducing valve if water pressure from the mains is higher.
The minimum water pressure is 1.5 Bar (0.15MPa-1500 KPa)

Start up
The espresso machine SOPHIA is to be installed to comply with the applicable federal, state or local plumbing codes having jurisdiction exclusively by authorised technical service.
Open the water tap and switch on the main electrical switch (fig. 1-7) from position 0 to position 1.
At power-on, the metering check the present of display (that shows "Select Drink") and the state of the level and safety probes, depending on the conditions detected, it excites if necessary(no water) the filling-up solenoid valve and pump until the correct water level is restored.
If the levels are correct, or after they have been restored, the metering is in STAND-BY mode (all the leds result to be on) and clear for the coffee doses' selection or their programming.
Turn the on/off switch on position 2 to begin the heating. The pilot light (fig. 1.7) switches on. Wait till the boiler pressure has reached the working pressure (1 bar approx). You can check it on the gauge (fig.1-6).
Open the steam tap (fig. 1-1) for some seconds and then close it. This operation avoids milk sucking in the boiler.
As the above operation causes pressure reduction in the boiler, wait till the working pressure is reached again.
Your machine is now ready to work.
Operation
Automatic dispensing of espresso
The keys A B C D (coffee doses) F (hot water/tea) are used for automatic dispensing of espresso/tea.
Automatic dispensing means that the operator presses one of the four keys or the water/tea key, to begin the supply from the related group, the led will be on (display shows "Pouring Espresso" or "Pouring Tea Water"). When the programmed quantity of coffee/hot water in the cup is reached, the machine stops "automatically" the dispensing, the leds result to be on and the machine will be in STAND-BY mode.
Any coffee or water/tea dispensations in progress can be stopped before, by pressing any doses keys (A B C D) or water/tea key on the keyboard to the operating group.
The machine can delivery at the same time coffee/tea from all the groups.

Continuous coffee dispensing
Starting from the STAND-BY state, press (for a time less than 5 seconds) and then release the "E" button and the machine will start the delivery from the group which you pressed the button, activating the solenoid valve and pump, the led of the pressed key will be on.
The display shows "Pouring Continuous"
To stop the dispensing, press any key of volumetric dose on the group that is in delivering, the dose will be stopped and the machine turn back in STAND-BY mode and the leds result to be on.
Steam dispensing
The hot steam is dispensed from the steam wand.(fig. 1-5) by turning the steam handle (fig.1-1).
Caution: The wand becomes extremely hot during steaming and can cause burns. Do not touch !!
To avoid milk rests to dry on the wand, we strongly recommend to clean the wand with a humid non abrasive cloth after every use. Pay attention during this operation: the wand becomes extremely hot during steaming and can cause burns.
Setting
Programming is done on STAND-BY machine ready to operate, press "E" continuous/programming key and keep it pressed for more than 5 seconds and check that all keyboards' led are blinking.
The display shows "Programming Select Within30s"
Press within 30 seconds (programming time-out) any of the keys related to the 4 programmable doses (A B C D) or tea dose (F), the machine begin to dispense and the key "E" led remains light on together with the key dose in programming. The display shows "Programming Espresso" or "Programming Tea Water"
When the desired quantity is reached, press any of the coffee keys or the tea/water key on the keyboard related to the group under programming to stop the dispensation. The new dose value is memorized, at the same time the led related to the programmed dose switched off, while the remaining leds light blinking, it is possible now to proceed with the other doses' programming without repeating the entering procedures.
The display shows "Programming Select Within30s"
Repeat the steps to program the other doses.
Note: By programming the touch pad on left side of the machine from operator side, the same quantities are automatically set on the other touch pads.
If you want to program the other touch pad with different quantities, it is necessary to repeat the programming sequences on the second touch pad.
To exit programming phase without waiting the 30 seconds time-out expiring, press "E" key.
During the programming of one group, the others groups and tea dispensations remain disabled.
Pre-infusion
The metering can be configured so that brewing precedes the volumetric coffee doses (A B C D) dispensation, the normal dispensing cycle is preceded by a short-timed water jet used to humidify the coffee pod before the real dispensation takes place.
To enable this feature: the machine is off, turn on it while holding pressed the "A" key on the keyboard on the left side of the group operator, to confirm the correct procedure, the led "E" will be on. Turn off and then turn on the machine and bringing it in STAND-BY mode.
To disable this feature: the machine is off, turn on it while holding pressed the "B" key on the keyboard on the left side of the group operator, to confirm the correct procedure, the led "E" will be on. Turn off and then turn on the machine and bringing it in STAND-BY mode.
Switching off the machine
Turn the general switch (fig.1-7) from position 2 to position 0.
Note: If the espresso machine SOPHIA is not used for a longer time, it has to be switched off, disconnected from electrical supply and water mains. The boiler must be completely emptied. The machines has to be carefully drained and stored in a dry location which is inaccessible to minors.
The machine must be dismantled by an authorized technician according local law and jurisdiction.
Maintenance
The following operations at user's care are necessary, in order to get the best efficiency from your espresso machine and have its look unchanged:
Daily cleaning of the equipment
The manufacturer recommends the following at the end of each working day
- Clean showers, group gaskets, group flange with a brush.
- Put the filter holder with the blind filter in the coffee delivery group and press the button P (continuous coffee dispensing). Switch it off after 15 seconds. Remove the filter holder and take the blind filter out.
Turn the machine off prior to proceed to the following operations
- Wash filters and filter handles in warm water adding a special detergent product (for use with coffee machines).
- Clean the cups tray and grid without removing the tray from the machine.
- Clean the hot steam wand and spout accurately with a clean non abrasive damp cloth after each single use without touching it directly with any part of the body to avoid injury or damage due to the hot surface of the spouts. Caution: Hot surface.
- Clean the drip tray and grid.
- Clean the plastic recipient located in the part under the drip tray. Use a spoon for this purpose.
- Clean the bodywork with a non abrasive damp cloth. Never use aggressive products or alcohol

PROGRAMMAZIONE TECNICO / PROGRAMMING TECHNICIAN
To enter in PROGRAMMING TECHNICIAN mode, keep pressed for more than 3 seconds the key "A" and "E" of the group one.
NOTE : PROGRAMMING TECHNICIAN access and program operations are feasible only from the groups on the 1, and with display connection.
When entering in PROGRAMMING TECHNICIAN mode as previously described, on display appears the first TECHNICAL parameter, that is the LANGUAGE set:
To modify the written parameter use A (+) or B (-) keys and select alphabetic letters, when the letter/symbol/number under the cursor is the desired one, press E (ENTER) key to confirm the selection and choose the next letter/symbol/number.
The metering offers the possibility of reading the performed dispensations (coffee/tea, by pressed and keep pressed E key (on the group 1) for more than 10 seconds, all the leds are light off.
The A and B keys have the function of increasing/decreasing the visualized dispensations' reading.
"Cumulative Total" means dispensed coffee doses' total, i.e. the sum of all dispensation performed by pressing A B C D E key of each group. The tea dispensation F aren't counted.
The metering allows also the analysis of the total amount of dispensations performed by each single key of each group. From "Cumulative Total..." visualization press A key to check the total amount related to the first dose pad on the first group.
At this point each A key's pressing visualizes sequentially all the totals related to each pad of each group (A B C D E first group, A B C D E second group, A B C D E third group).
Pressing B allows to visualize the preceding total reading.
Once the reading of coffee doses related to each group is complete, will be visualize the total amount of tea dispensation, no reading division of the single key is foreseen.
By pressing once more the A, the reading of liters counted till now is visualized.
If the dispensation and liters reading ambient is already entered, press B key for more than 3 seconds, and the total values related to each key of each group are automatically zero-set.
Please wait counter reset
The "Cumulative Total", i.e. the sum of all the dispensations performed can't be zero-set.
To exit from dispensations/liter reading ambient press again E key, there is not any time-out to exit automatically the reading ambient.
