  1. Install the breath guard upright to the studsecuring with cap nuts as shown. Repeat for all four uprights.
  2. Installthebreathguardsupporttubebetweentheuprightssecuring withcapnutsasshown.Repeatontheotherside.
  3. Installbreathguardtopsecuringwithscrewsandcapnutsas shown.Repeatforallfourmountinglocations.
  4. Install the breath guardend panel to the upright security with cap nuts as shown. Repeat on the otherside

    5.Coverthewellswithemptyfoodcontainersorcovers.Allowthe watertopreheatfor60minutes.
  5. Place containers of hot food, above 140°F (60°C), into the preheated equipment.
  6. Reducetheheatsettingtoalevelthatwillmaintainasafeholding temperatureandmaintainfoodquality.
