BEFOREFIRSTUSE

Cleantheequipment.SeetheCleaningsectionofthismanual.

OPERATION

WARNING

SharpBladeHazard

Bladesaresharpandcancausecuts.Toavoidinjuryfrom sharpblades,handlewithcaution.

PreparetheFood

Preparethefoodtobeprocessed.Maximumfoodsizefor:

•Slicinganddicing:5" (12.7cm)wide.

•Wedgingandcoring:3½"(8.9cm)indiameter.

PreparetheEquipment

1. Verifythebladeassemblyandpusherblockmatch. Each component mustbeforthesamesizeslice, dice, coreorwedge.

2. Verifytheequipmentiscleanandthebladesareingoodcondition.If bladesareloose,brokenordull,replacethebladeassembly.

3. Placetheequipmentonaclean, flatworksurface.

4. Verify the bumpers are in place on the guiderods. DONOTUSE EQUIPMENT IF BUMPERS ARE NOT IN PLACE.

NOTICE: Using this equipment without the bumpers in placemay damage the equipment.

1. Verifythebladeassemblyisproperlyinstalledinthebase. The thumbscrewmustbefullytightenedandthebladeassemblyfully tightagainstthesideoftheframeoppositethethumbsrew.

Thumbscrew VOLLRATH® REPLACE IF SLADES ARE DULL OR DAMAGED 1/4" (6mm) CUT P/N 55470 CAUTION SWAP BLADES Fullytight. Nospace.

1. Check for proper blade alignment by slowly setting the pusher head onto the blade assembly.

Correct-Thepusherblockpassesbetweentheblades.

REPLACE BY BLAMERS AND DULL OR DAMAGED 1.44 (40mm) CUT PEN 6540

Incorrect-Thepusherblockcontactstheblades.

REPLACE IF PLACERS ARE DULL OR DIAHAGED 1/4" (RWN) CUT PIN SETTO

1. Lift the T-handle and placethe food product on the blade assembly with the flatside facing down.
2. Using a strong, quick, downward thrust, push the food through the blade assembly.
3. Repeat this process until you have prepared enough food
4. Cleanandlubricatethisequipmentimmediatelyaftereachuse. See theCleaningsectionofthismanualformoreinformation.

CLEANING

WARNING

NOTICE: Foodacidswilldullthebladesandcorrodethemetal. Cleanthisequipmentimmediatelyaftereveryuse.

NOTICE: Donotputthisequipmentinadishwasherordishmachine with soaps, detergents, orotheralkalinechemicalsthat canharmtheequipment. Handwashonly.

NOTICE: Donotuseabrasivematerials, scratchingcleansersor scouringpadstocleanthisequipment. Thesecandamage thefinish.

Disassemble

1.Slidethepusherheadassemblyupandoffoftheguiderods.
2. Loosenthetwothumbscrews.Thumbscrewsarecaptive-donot attempttoremovethem.Separatethepusherblockfromthepusher head.

1. Raisethebumpersapproximately2°(5.0cm).
2. Loosenthethumbscrewandcarefullyremovethebladeassembly.

Wash

1. Wipe, rinse spray off the base, pusher head, pusher block and blade assembly thoroughly with HOT water.
2. Donotwipeacrosstheblades.

NOTICE: Wipingacrossthesharpedgeofthebladecancause injury and willdulltheblades.

1. Usetheincludedcleaningtooltopushfoodparticlesoutfromthe pusherblockorbladeassembly.

1. Lettheequipmentairdry.

Reassemble

1. Return the cleaning tool to the pusher head assembly and reassemble the pusher head assembly.
2. Installthebladeassemblyintothebase.Tightenthethumbscrewto pushbladesecurelyagainsttheframe.
3. LubricatetheguidebarwithmineraloilorPetrol-Gel.

NOTICE: Donotusecookingoilasitwillbecomestickyandmay permanentlydamagetheequipment.

4.Slidethebumpersintoplace.

PREVENTATIVE MAINTENANCE

1. Use for the intended purposes only.
2. Inspecttheequipmentbeforeeachuse. Donotusethisequipmentwithmissing, brokenorworncomponents.
3. Cleantheequipmentaftereveryuse.

REPLACETHEBLADEASSEMBLY

WARNING

SharpBladeHazard

Bladesaresharpandcancausecuts.Toavoidinjuryfrom sharpblades,handlewithcaution.

1. Washthebladeassemblywithwarm,soapywater.Rinsethoroughly toremovethethinprotectiveoilfilm.
   2.SlidingtheT-handleassemblyofftheguiderods.
2. Raisethebumpersapproximately2"(5.0cm).
3. Removetheoldbladeassemblybyloosingthethumbscrewand thencarefullypressingupwardontheundersideoftheframethat surroundstheblades.

NOTICE: Do NOT touch the sharp understand of the blades.

1. Installthenewbladeassemblybyinsertingthetabontheframethat surroundsthebladesintothegrooveinthebase. Thenlowerthe bladeassemblyintoaseatedandflushpositioninthebase. Tighten thethumbscrew.
   6.Slidethebumpersdowntheguiderodssotheyrestonthebase.
2. PositionT-handleassemblyontotheguiderodsandslowlylower theassembly.Checkthepusherheadblocktobladeassembly alignment.
3. Lubricatetheguiderodwithmineraloil, Petrol-Gelorotherfood-gradelubricantaftereachuse.

NOTICE: Do NOT use cooking oil as it will become sticky and may permanently damage the equipment.

TROUBLESHOOTING

Cannotpushfoodthrough.	Bladesaremisalignedorincorrect pusherblockisinstalled.	Confirmthepusherblockiscorrectforthebladeassemblyandthatthere isnointerferencebetweenthepusherblockandbladeassembly.
