Placement of grill grid on posts This appliance is intended for household use only. This appliance is equipped with a grounded- type 3-wire cord (3-prong plug). This plug will only fit into an electrical outlet made for a 3-prong plug. This is a safety feature. If the plug should fail to fit, contact an electrician to replace the obsolete outlet. Do not attempt to defeat the safety purpose of the grounding pin, part of the 3-prong plug. Other Consumer Safety Information If a longer cord is needed, a grounded-type 3 wire extension cord may be used if the electrical rating of the extension cord is equal to or greater than the rating of the electric grill. Use only an extension cord rated 15 amperes or greater. However, many other deli- cious cheeses can also be used: Cheddar Camembert Emmenthaler Feta Fontina Gouda Roquefort NOTE: Plan on using 7-8 oz of cheese per person. Vegetables Raw vegetables do well on the raclette grill, as long as they are cut into small pieces. For faster cooking, whole veg- etables can be blanched until al dente, rinsed with cold water, then cut into pieces before grilling. Fruit Fruits that taste best with cheese are slightly tart fruits such as apples, pears, plums, apricots, figs, mangos, and papaya. However, any kind of fruit may be used. Meat Meat such as chicken, pork, or beef should be precooked or cut into very small pieces before grilling so it cooks faster. Consider marinating meat beforehand – it tenderizes meat and adds flavor and variety to the meal. Fish Because it cooks quickly, fish is ideal for raclette grilling. Fattier types of fish such as mackerel, salmon, catfish, or fillets with the skin on tend to be better for grilling. Peeled or unpeeled shrimp is also delicious. Potatoes The traditional vegetable for raclette is new potatoes (pre-boiled in their skins). Because of their wide appeal and sub- tle flavor, potatoes can be combined with a large variety of foods. Marinating Tips Chicken or beef can be marinated overnight, however, fish should not be marinated for more than a half hour. Also, never use marinade as a finishing sauce on food – it can contain harmful bacteria. Food should never be mari- nated in metal containers because acidic ingredients can react with metal, causing an unpleasant taste. Instead, use plastic bags, or non-metal bowls made of ceramic or glass. Meat Safety Tips Meat should be thawed in the refrigera- tor, never at room temperature. Also, meat can be sliced, marinated, and put into serving bowls in advance, but until you’re ready to grill, store meat in the refrigerator. S’mores 4 graham cracker sheets 16 mini marshmallows 4 ounces milk chocolate Break graham cracker sheets in half. Place one half graham cracker sheet in a personal cooking tray and top with four mini marshmallows. Insert personal cook- ing tray in personal cooking tray slot. Cook until marshmallow brown. Remove from grill. Top with one ounce milk chocolate and another half of graham cracker sheet. Makes 4 servings. Baked Tomato Raclette 2 tablespoons breadcrumbs

⁄2 teaspoons garlic powder 4 Swiss cheese slices 2 roma tomatoes, sliced Combine breadcrumbs and garlic powder. Place one slice Swiss cheese in a per- sonal cooking tray. Add tomato slices topped with breadcrumb mixture. Insert personal cooking tray in personal cooking tray slot. Cook until breadcrumbs brown. Remove from grill. Makes 4 servings. Grilled Cheese 8 French baguette slices,

⁄3 inch thick 4 Swiss cheese slices Place two slices French baguette in a personal cooking tray. Top with one slice Swiss cheese. Insert personal cooking tray in personal cooking tray slot. 2 cup black beans, cooked Place one slice cheddar cheese in a personal cooking tray. Add two tablespoons corn, salsa, and black beans. Cook until warm and brown. Remove from grill. Makes 4 servings. Spicy Grilled Shrimp

⁄2 cup soy sauce 1 tablespoon olive oil 1 tablespoon sesame oil 5 tablespoons cajun seasoning mix 2 tablespoons fresh lemon juice

4 teaspoon fresh grated ginger root

⁄4 teaspoon dill weed Combine all ingredients except shrimp. Mix well then add shrimp. Marinate 1 to 4 hours. Drain marinade and discard. Place shrimp on grill and cook 2 minutes. Turn and cook 2 minutes longer or until done. Sesame Soy Sea Scallops 1 tablespoon sesame oil 2 tablespoons white wine

pound sea trout Combine bread crumbs, parsley, garlic salt, and tarragon; set aside. Beat egg white with fork or whisk until frothy. Dip fish in egg white then coat with bread crumb mix- ture. Place on grill and cook 5 minutes. Turn and cook 5 minutes more or until done. Makes 2 servings. Salmon with Dill

⁄2 pound salmon steak 1 tablespoon lime juice 1 teaspoon dill weed Brush salmon with lime and sprinkle with dill weed. Spray grill with cooking spray. Cook salmon 4 minutes. Turn and cook 4 minutes or until done. Makes 2 servings. Mahi Mahi with Ginger and Dill

4 teaspoon fresh grated ginger root

⁄4 teaspoon dill weed

4 pound mahi mahi (or monkfish) Combine lime juice, pepper, ginger root, and dill weed. Marinate fish in this mixture for 2 hours. Place on grill and cook 5 minutes. Turn and cook 5 minutes more or until done.
