Operation

Preparation

Fixate the machine to a table plate using the supplied screw clamp. Then, attach the crank handle into the slot (see fig. 1). Before using the machine for the first time, clean thoroughly with a clean cloth to get rid of any oil residues from the production process.

The best way to clean the casters is, by processing a small amount of dough. Repeat 2 - 3x, then dispose the dough.

Kneading and Cutting Noodles

(see Annex 1)

  • First, set the casters in the default position by opening completely (ca. 3mm), see fig. 6.
  • Insert dough in between the casters and pull the crank (see fig. 7). Repeat this process about 5 to 6 times, by repeatedly inserting the dough, and - if needed - add some flour (see fig. 8).
  • As soon as the dough has taken the desired shape (the thickness stays the same), you can adjust the caster spacing (fig. 6, 9) and strip to the desired thickness.
  • When the desired thickness is reached, cut the dough into pieces of the same length.
  • Insert the crank into the opening for the casters. Rotate slowly while inserting the cut dough (fig. 10/11).

Remark 1:

If the casters do not cut the dough properly, it might be too soft, or too dry. Add water or flour, accordingly.

• After cutting the noodles, let them dry on a table or on a pasta dryer for at least one hour.

Attachment for Ravioli

(see Annex 2)

  • Make sure the regulator is set to position 5, and your dough is not too dry.
  • Put the dough pieces onto a damp cloth and use the cutter to cut pieces of about 50-70cm.
  • Remove the standard attachment and replace with the ravioli attachment.
  • Fold the dough and insert between the casters. Rotate the crank 1/4 revolution to fixate the pasta.
    • Take both ends, separate, and lay over the casters (one left, one right).

  • Use a tea spoon to place the filling between the layers.

  • Turn the crank carefully and repeat the process.
    • After filling the ravioli layers, let them dry for a while. After drying, the ravioli can easily be separated.

Cutting Tool /Pastabike

(see Annex 3)

Preparation: First, remove the middle part (fig 1), then remove the outer parts (note the pins, see fig. 2). See the depiction for inspiration on possible shapes.

Agnolotti and Empanadas: After having cut the desired shapes, put the filling into the middle of the slice, fold together and press the edges together (see fig 13). You can also use the pastabike to generate all different kinds of shapes (see fig 15/16).

Tortellini: Same procedure as with Agnolotti und Empanadas, see fig. 8-10.

Maintenance

(see Annex. 1)

  • During use, the casters should be cleaned with a cloth every now and then (fig 12).
  • The components are not dishwasher safe! They get blunt by heat and strong detergent. Use a brush, clear water, a cloth and edible oil for the casters instead.
  • Do never insert any alien objects (knives, forks, clothes) or your fingers between the casters. Danger of damage to the pasta machine or your health.
