All directions in these operating instructions are to be adhered to without alteration. In these instructions, the appliance is referred to as a grill.

This grill may only be used for burning wood pellets and cooking food that is suitable for barbecueing. In the absence of additional precautions, this appliance is suitable only for barbecueing in the open air. Any other type of use is prohibited and may be dangerous. Use as a fireplace is also prohibited. The appliance is designed for use in a private household and not for commercial use.

CAUTION!

Some pellets produced for use in heating systems contain a high proportion of softwood or even recycled furniture wood which may contain tarry resin, chemicals or adhesives. Such pellets must not be used for barbecueing. For best results and to be certain that you are only using clean-burning pellets for cooking food, we recommend that you use 100% hardwood pellets.

Lower-quality barbecue pellets can negatively affect the barbecue temperature, especially at the lower end of the temperature range. Rösle accepts no responsibility for problems attributable to the use of low-quality pellets or pellets intended for use in heating systems.

Store the pellets in a dry place in order to obtain the best results.

Electrical safety

  • The appliance may only be connected to a mains supply with a rating of 220 - 240 VAC, 50 Hz. Never attempt to operate the appliance at a different voltage. The appliance must receive its supply via an RCD (residual current device) with a rated trip current of no more than 30mA. The appliance must be connected to an earthed power outlet socket.
  • Only connect the appliance to a properly installed and earthed mains power socket. The mains voltage must match the specifications on the rating plate of the appliance.
  • The mains plug must not be connected until installation of the appliance has been properly completed.
  • If the mains lead is defective or if the appliance shows any other signs of damage, it must not be put into service.
  • When unplugging the power supply from the mains, take hold of the plug – do not pull on the lead.
  • To prevent fire hazards and the risk of electric shock, do not expose the appliance to rain or other damp conditions.
  • Do not operate the appliance close to bath tubs, swimming pools or splashing water.
  • Do not place any receptacles containing liquids, e.g. flower vases, on the appliance. They could fall over and the spilt liquid could lead to considerable damage and/or the risk of electric shock.
  • If foreign objects or liquids should get into the appliance, immediately unplug the mains plug from the power socket. Have the appliance checked by qualified experts before using it again. Otherwise there is a risk of electric shock.

  • Do not open up the outer casing. Otherwise there is a risk of electric shock. Touching components that carry electric current is potentially life-threatening.
  • Never attempt to repair a defective appliance yourself. Always refer the problem to your appliance dealer.
  • Do not on any account open up the appliance – this may only be done by a qualified technician.
  • Foreign objects such as needles, coins, etc. should not be allowed to fall into the inside of the appliance.
  • No naked-flame ignition sources such as lit candles may be placed on the appliance.
  • Never allow children to use the appliance unsupervised.
  • Always have servicing carried out by qualified experts. Otherwise you will be placing yourself and others at risk.
  • Even when the appliance is switched off and in standby mode it is still connected to the electrical power supply. If you are not going to be using the appliance for an extended period, unplug the power supply plug from the mains power socket. When doing so, take hold of the plug only, do not pull on the power cord.
  • This appliance is not intended to be used by people (including children) with limited physical, sensory or mental capabilities or without the necessary experience and/or knowledge unless they are supervised by a person responsible for their safety or are instructed by such a person on how the appliance is to be used.
    • Children must be supervised in order to ensure that they do not play with the appliance.
  • Making modifications to the appliance is prohibited.
  • Damaged appliances or accessories must not continue to be used.
  • The appliance is intended for use in dry conditions and a moderate climate and must not be exposed to dripping or splashing water.
  • You must only operate the appliance in a horizontal position.
  • Make sure that the mains lead and/or the mains plug is/are always accessible so that the appliance can be quickly disconnected from the power supply if necessary.

  • Route the mains lead in such a way that nobody can trip over it.

  • The mains power socket should be as close to the appliance as possible.
  • When connecting to the power supply, make sure the mains plug is pushed all the way into the socket.
  • Use a suitable, easily accessible mains power socket and avoid using multi-socket adaptors.
  • Do not take hold of the mains plug with wet hands – risk of electric shock!

  • In the event of faults that indicate an electrical malfunction, immediately unplug the mains plug from the power outlet socket.
  • If a thunderstorm is threatening, unplug the appliance from the mains before the storm starts.

Do not use in enclosed spaces as otherwise poisonous vapours may collect that could cause serious or even fatal damage to health.

In the absence of additional precautions only use this grill outdoors in a well ventilated location. Do not use this grill in a garage, a building, walkways/corridors between buildings or any other locations surrounded by building structures.

Never operate the grill underneath combustible rooves, canopies, etc.

  • Incorrect assembly may cause risks. Please follow to the letter the assembly instructions provided. Do not use this grill until all components have been properly assembled.
  • Never operate the grill without the protective grille permanently fixed over the fuel auger. Exercise the proper care when using the grill. When barbecueing, the grill becomes hot. Never leave the grill unattended when it is in use.
  • Only ever use the grill with the lid closed unless you are using Direct Flame mode. In Direct Flame mode, the appliance may only be operated with the lid open. If you were to close the lid in Direct Flame mode, malfunctions due to excessively high temperatures could occur. In that event the appliance automatically cuts out for safety reasons. The fault code "ER-1" then appears on the ITC display.
  • Only ever activate Direct Flame mode if you have previously inserted the optional Direct Flame insert available specifically for the purpose in the Flavorizer. In indirect barbecueing mode, please only use the EZ Access insert and operate the appliance with the lid closed.
  • This grill gets very hot and, when in operation, should only be taken hold of with barbecue gloves and only at the points necessary for operation. When the grill is alight, only hold the grill lid by the handle provided.
  • Make sure that the slots at the back of the hood are always clear. Do not use lava stones or charcoal on this grill.
  • To avoid the risk of serious burns, you should never bend over the open grill or touch the grill grate with your hands. Only touch the handles, not the surfaces.

If uncontrolled jets of flame occur, take the food out of the flames and close the lid until the flames subside.

- Remove excess fat from the grill to prevent fat fires. The ability of the Memphis Grill to produce exceptionally high temperatures can result in fat fires if the excess fat is not removed by the grill owner as provided for by the routine servicing operations. That also includes the Flavorizer and fat drawer.

  • We recommend that you regularly check the firebox of your Memphis Grill for blockages to make sure that the flow of air is unhindered.
  • If the grill is no longer to be used, the mains plug should not be unplugged until the cooling phase is complete.
  • Do not place the protective cover over the grill until it has completely cooled down.
  • Never cover over the entire cooking area when the grill is hot. Allow at least 5cm of space at the sides and back of the grill casing.
  • If a fat fire should occur, switch off the grill at the On/Off button on the ITC, remove the food if you think it safe to do so and leave the lid closed until the fire has gone out. DO NOT unplug the mains plug from the power outlet socket so as to allow the fans to keep running until the fire has completely burned out. Only unplug the mains plug from the power outlet socket if absolutely necessary. If you are barbecueing especially fatty foods, before starting up the grill you should insert an aluminium tray to catch the fat.
  • When barbecueing, always wear barbecue gloves.
  • Wait for the grill to cool down before moving it.
  • Never make any modifications to the product.
  • Damaged appliances or accessories must not continue to be used.
  • The manufacturer accepts no liability whatsoever for damage caused by incorrect, careless or negligent use or use other than intended.
  • The manufacturer accepts no responsibility whatsoever for damage occurring during use of the appliance or for complaints from third parties.
  • Whenever using this grill, make sure it is at least 1.5m away from any combustible or heat-sensitive materials. Combustible materials include, for example (but not only), wood, treated wood floors, wooden decking and wooden porches or patios. Do not store any combustible objects under your grill. Do not leave any packed food on or near the grill.
  • When using the grill, do not wear garments with loose hanging sleeves.
  • Protect yourself against sparks and splashes of hot fat. To protect your clothes, we recommend that you wear a barbecue apron.
    • Always place the grill on a firm, level surface sheltered from the wind.
  • Never try to check whether the grill or grates are hot by touching them.
  • Never pour water into the grill to suppress leaping flames or put out the glowing embers.
  • Use barbecue implements with long, heat-resistant handles.
  • Never dispose of ashes or pellets when they are still hot or glowing. There is a risk of fire. Do not dispose of ashes or ash residues until they are fully extinguished and have completely cooled down.
  • Never clear up ashes with a vacuum cleaner.
  • Keep all flammable gases and liquids (e.g. fuel, alcohol, etc.) and any other combustible materials away from the grill surface.
  • Keep electrical leads away from the hot surfaces of the grill and areas where people are moving about.
  • The consumption of alcohol and/or prescription or non-prescription medication may impair the ability of the user to properly assemble and safely operate the grill. The RÖSLE Grill is not intended for installation in/on caravans, motorhomes/camper vans or boats.
  • Never line the cooking compartment with foil. This could prevent the fat from running out and result in the fat collecting on the foil and starting to burn. Instead, when using the indirect cooking method, you should use drip trays to catch the juices running out of the meat.
  • Under no circumstances should you use flammable liquids for lighting the appliance. Ignoring this instruction may result in shooting flames and/or explosions.
  • Do not use sharp or pointed objects to clean the grill grates or remove the ashes. Doing so may damage the surface.
  • Do not use abrasive cleaners on the grill grates or the grill. Doing so may damage the surface.
  • Do not push the grill over high steps or very uneven surfaces.
  • The grill should be thoroughly cleaned at regular intervals.

Basic method of operation

Your Rösle Memphis pellet grill represents a new type of open-air cooking. It is a genuine, high-quality convection oven that has a barbecueing and smoking function at the same time. It combines numerous unique functions with proven pellet-burning technology. Together, those features provide controlled, quick, fl avoursome and repeatable cooking results.

Pressing the On button switches on the igniter electrode, high-performance fan and fuel auger. The fuel auger feeds the wood pellets from the pellet hopper into the fi rebox where they are ignited by means of hot air.

The desired cooking method and temperature can be set by means of the intelligent temperature control. One or more high-performance fans provide the air supply into the firebox and even heat circulation for convection cooking. The natural smell of smoke from the burning wood pellets, the vapours created by the juices dripping onto the Flavorizer, and the air circulating in the cooking compartment combine to produce a unique aroma.

Information on food-safe barbecue pellets

Aromatised pellets are available in numerous fl avours such as mesquite, apple, hickory or cherry. A pound of pellets produces a heat output of around 2.4kW. The pellets have a very low ash and moisture content. Please use only high-quality barbecue pellets for your barbecue. High-quality barbecue pellets have a maximum length of 3.5cm. The shortness of the pellets makes for greater effi ciency and more even temperature. High-quality pellets are 100% hardwood. Please avoid pellets made from softwoods such as pine because they produce a turpentine-like fl avour.

Sawdust and clean woodchips are pulverised and dried. The dried material is then processed under heat and pressure. The material is forced at a pressure of over 200bar through a die made of high-strength steel that is rotating against rollers. When the pellets have passed through the last die they are cooled, checked, de-dusted and packed.

The pellet production process does not involve the use of any added glues or binding agents. Hardwood contains natural substances known as lignins which act as a natural binding agent when heated. Store the pellets in a dry place in order to obtain the best results. The aroma you choose depends on your personal preference. We recommend that you try out different fl avours/combinations in order to find the right aroma. (Your local dealer will be able to supply a variety of pellet aromas.)

A temperature sensor monitors the cooking compartment and transmits that information to the ITC. Based on the measured readings, the ITC makes adjustments to the combustion system as required. For optimum performance, you should barbecue with the hood down and make sure that the sensor is clean and exposed.

Give the ITC enough time to adjust to changes to the set temperature.

Starting up the grill before barbecueing

Stand the RÖSLE grill on a firm and level surface. Use only pellets made of 100% hardwood. Store them in a dry place.

Electrical connections

Connect the appliance to the mains power supply (200-240 VAC, 50 Hz).

Make sure the mains plug is pushed all the way into the socket.

Make certain that the appliance operating voltage matches the mains power supply voltage before you connect the appliance to the mains. Check the details on the rating plate.

  • When the appliance is connected to the mains, parts of the appliance are in operation due to the standby function. Use a power socket with a residual current device. Alternatively you can use a high-quality surge protector suitable for outdoor use.
  • BTo switch off the appliance completely, the mains plug has to be unplugged.
  • If the appliance is not being used, unplug the mains plug from the power outlet socket. Take hold of the plug only, do not pull on the power cord.
    • If a thunderstorm is threatening, unplug the appliance from the mains before the storm starts.
  • If the appliance is not to be used for an extended period, e.g. before going away on holiday, unplug it from the mains.

Seasoning the grill when first used or after a long period out of use

Before you use the appliance for the first time, we recommend that you "season" it to remove any residues from the production process.

Before seasoning the appliance, please remove the plastic foil that is on all the stainless steel surfaces. If you do not do so, the foil may melt when the appliance heats up and will then be very difficult to remove from the metal.

  • BTake out the grates and wash them with a mild detergent.
  • BRefit the grates.
  • Switch the grill on and allow it to heat up at a temperature of 230°C with the hood down for approx. 20 minutes. After the seasoning phase, switch the appliance off.

Easy steps to becoming a barbecue expert

  • BRead the recipe and find the instructions for setting up the grill. The RÖSLE Grill offers you a choice of several cooking methods: high-temperature barbecueing, BBQ Smoker mode for slow and gentle cooking, direct or indirect barbecueing and convection cooking. You will find the specific instructions on the following pages.
  • Do not try to save time by placing food on the barbecue too soon before it has reached the right temperature. Check the temperature shown on the display.
  • Use a barbecue spatula or barbecue tongs, but not a fork. Piercing with a fork will allow juices, and therefore flavour, to escape and the food will dry out.
  • BMake sure that the food fits on the barbecue before closing the lid. Ideally, there should be a gap of about 2 cm between the individual items being barbecued.
  • Do not repeatedly open the lid to check on the food. Every time the lid is lifted, heat is lost, i.e. the food will take longer to be ready to be served.
  • BOnly turn the food over once if required by the recipe.
  • BLeaving the grill lid in place prevents flames forming under the food, shortens the cooking time and produces better cooking results.
  • Bltems such as burgers should not be pressed down flat. Doing so will squeeze out the meat juices and the food will dry out.

- If you apply a light coating of oil to your food, it will brown more evenly and will not stick to the grate. Brush or spray the oil on the food only and not on the grate.

Note:

Wash your hands and the implements thoroughly with hot water and washing-up liquid before and after handling fresh meat, fish or poultry. Alternatively, you can wear disposable gloves.

Never place cooked food on the same plate on which raw food has been.

Do not defrost food for barbecueing at room temperature, but rather in a refrigerator.

Cooking with the RÖSLE grill

Warming up the grill

- BBefore you use your grill you should check the fire zone inside the cooking area.

We recommend that you do this before first using the appliance and thereafter at regular intervals after using the appliance a number of times in each case so that you always get the best performance. How often the check is required depends on the usage of the appliance and the fuel used.

  • BLift up the hood and take out the grates.
  • BRemove the Flavorizer. The Flavorizer serves to evenly distribute the heat, protect against fly-ash and prevent direct contact between the flames and your food.
  • Blf necessary check the firebox area and remove any foreign objects to ensure that the air vents are clear. This will ensure faster and more efficient lighting.
  • BRefit the Flavorizer and the grates.
  • BOpen the pellet hopper lid. Make sure that there are no foreign objects in the hopper.
  • BFill the hopper with food-safe pellets. Close the pellet hopper lid.
  • BConnect the grill to the nearest power outlet socket.
  • After barbecueing and once your grill has cooled down, please unplug the mains plug. We recommend that you cover the grill when it is not in use.

Automatic starting

  • BPress the I/O button (1) to initiate the starting sequence.
  • BThe igniter electrode heats up, the Grill LED (4) on the control panel fl ashes and the fan starts up.
  • BThe fuel auger fills the fi rebox with pellets for lighting.
  • BThe igniter switches off automatically either when the grill has reached a suffi cient temperature or 30 minutes have elapsed.
  • Use the Temp buttons (2) to set the desired temperature.
    • BThe Set LED (4) lights up.
  • If the grill is set to a temperature of less than 150^ C, it operates in smoker mode. If it is set to a temperature of at least 150^ C, it operates in barbecue mode. The core temperature sensor can be set to a temperature of up to 121^ C.
  • Set the temperature display to Actual by pressing the Temp Display button (7).
    • BThe Actual LED (4) lights up.
  • BThe temperature now shown is the actual temperature in the cooking compartment.
  • Note: the actual temperature will fluctuate up and down. That is quite normal and reflects the typical temperature variation that occurs with any oven.

If the fuel hopper has just been filled, press and hold the Pellet Prime button (8) until you hear pellets dropping into the fi rebox. Then release the button. Then restart the grill by pressing the I/O button (1). This will enable the grill to run through the complete start-up sequence.

Your grill will smoke for a few minutes while the pellets are lighting and until they are properly burning.

If the fi re has not properly established after 30 minutes, the grill will automatically switch off. If that should happen, unburned pellets will have collected in the fi rebox.

Before relighting the fi re, you should remove the surplus pellets from the fi rebox and then repeat the steps described above.

Operation

As soon as the pellet grill has been started, the succeeding stages are as follows:

Preheating:

This is the initial phase when barbecueing or smoking. It comprises lighting the fuel and bringing the grill up to the set temperature as quickly as possible. It is possible that the fuel augers may keep feeding fuel almost continuously during this phase. The purpose of this is to preheat the firebox sufficiently for it to be able to continuously supply enough heat. When this phase is complete, the intelligent temperature control will automatically take over subsequent supply of fuel. This means that precisely the required barbecueing or smoking temperature can be maintained regardless of the outside temperature. The length of this phase depends on the outside temperature at the time, the set temperature and the grill model. In most cases the preheating phase takes between 15 and 25 minutes.

Barbecue mode:

The temperature automatically remains within the range you have set. It is possible that you may notice temperature fluctuations. That is quite normal for any cooker or oven. The grill will automatically switch to this mode if the set temperature is at least 150°C.

Smoker mode:

Smoking is a variation of barbecueing and one of the unique advantages of your Rösle Grill. The temperature depends on what you want to smoke and your own personal taste. The grill will automatically switch to this mode if the set temperature is less than

150°C. The air flow for the firebox is different in smoker mode. You may hear the fan switching on and off repeatedly. This is a normal feature of operation.

Tip for smoking:

To vary the intensity of the smoked flavour you should experiment with the length of time that you smoke the food and the mixture of aromatised and standard pellets that you burn. This is particularly important when using strongly aromatic pellets such as mesquite.

You should switch to smoker mode as soon as you have placed the food on the grill because then smoke can infuse your food better before it dries out. Smoker mode works better the longer it is used, in other words with large pieces of meat, fish or poultry.

Experiment with the length of time you smoke the food before cooking it through. Try out different combinations of the two cooking modes.

Using the ITC core temperature sensor

The grill is supplied with a core temperature sensor as standard. The core temperature sensor communicates directly with the grill's ITC control unit. That means that you can easily make sure that your food is always cooked perfectly to the preset core temperature. This function ensures flavoursome and repeatable results – every time.

  • Connect the core temperature sensor to the Meat Probe socket (5).
  • Switch on the grill and set the desired grill temperature.
  • Set Probe Display (6) to "Meat". The Meat LED (4) lights up.
  • If the core temperature sensor is not connected, you cannot select this option.
  • Set Temp Display (7) to "Set" and then set the desired core temperature using the Temp buttons (2). The Set LED (4) lights up.
  • Press the up or down arrow to set the temperature. The temperature setting for the core temperature sensor can be up to 121°C.
  • Feed the end of the core temperature sensor through one of the holes in the sides of the grill, directly below the lid. Pull the metal cable though into the inside of the grill.
  • Insert the core temperature sensor into the food. Make sure that the sensor is placed in the middle of the meat/food.
  • Set Temp Display (7) to "Actual". The Actual LED (4) lights up.
  • The ITC now shows the temperature of the meat in real time. The grill will cook the food until the actual temperature detected by the meat thermometer has reached the set target meat temperature.

As soon as that is the case, the grill automatically lowers its temperature to the lowest setting (80°C on Elite/Built-In, Pro/Built-In and 90°C on Advantage Plus). The display shows the message "Done". That tells you that the food has now finished cooking. You can manually change the set temperature for the core temperature sensor or the grill at any time during the cooking process.

If, when setting the temperature for the core temperature sensor, you press the Temp up arrow (2) until 121°C is displayed and then press it once more, the ITC displays "NOPR". In this setting, although the ITC shows the temperature of the meat, it does not automatically switch to Done mode at any temperature.

If you are not using the core temperature sensor, you should not leave it in the grill.

Please keep the core temperature sensor and lead as clean and dry as possible. Clean the sensor with a damp sponge or cloth moistened with a little alcohol cleaner.

If the core temperature sensor and lead are exposed to damp for an extended period, false temperature readings may be indicated on the ITC display. In extreme cases, the display may constantly show "0°C" / "32°F". To rectify this problem, the core temperature sensor and lead must be completely dried out. Once completely dried out, the sensor will be fully functional again.

When cleaning the core temperature sensor and lead, DO NOT immerse them in water and DO NOT clean the sensor in a dishwasher.

Direct barbecueing with Direct Flame insert

With the direct method, the food is cooked directly over the pellets. Food that requires less than 25 minutes to cook is cooked by the direct method. To make sure the food is evenly cooked all the way through, it should be turned once after half the cooking time. Foods such as steaks, chops, kebabs and vegetables can be cooked in this way. The Direct Flame insert is interchangeable with the EZ-Access insert and thus enables direct barbecueing above the flames of the pellet fire. The Memphis Direct Flame Flavorizer insert is compatible with the Memphis Elite, Pro, Advantage Plus and Built-In models.

  • Remove the grates and the EZ-Access Flavorizer insert, e.g. with the aid of Genie Multi-Tool.
  • Replace the EZ-Access Flavorizer insert with the Direct Flame insert.
  • Refit the grates and close the lid of the grill to begin with.
  • Switch the grill on and increase the temperature to the highest possible setting (Elite 370°C, Pro 344°C, Advantage Plus 316°C). Now wait until the grill has reached the maximum temperature and keep the lid of the grill closed for the time being.
  • As soon as the maximum temperature is reached and the temperature is also shown on the ACTUAL display, press the ↑ arrow button once to switch to Open Flame mode OF-1. Pressing the ↑ arrow button again switches to OF-2 mode, and a further press switches to OF-3 mode (OF-3 mode is not available on the Advantage Plus model). OF-3 (or OF-2 on the Advantage Plus model) is the hottest direct barbecueing mode.
  • Now it is essential that you open the grill lid in this mode. The display shows the message "OF". In this mode, display of the internal grill temperature (ACTUAL) is deactivated as it would indicate unreliable readings with the lid open (e.g. due to the effect of wind, etc.). Nor is it possible to set core temperature control (Meat Probe) in OF mode.
  • Place the food on the grill grate.

Only ever use the grill with the lid closed unless you are using Direct Flame mode. In Direct Flame mode, the appliance may only be operated with the lid open as described in the instructions above. If you were to leave the lid permanently closed in Direct Flame mode, malfunctions due to excessively high temperatures could occur. In that event the appliance automatically cuts out for safety reasons. The fault code "ER-1" then appears on the ITC display. Only ever activate Direct Flame mode if you have previously inserted the Direct Flame insert available specifically for the purpose in the Flavorizer.

Indirect barbecueing with Flavorizer insert

The Memphis EZ-Access Flavorizer insert is a standard component of the Memphis Elite, Pro, Advantage Plus and Built-In models. This special insert allows you to barbecue indirectly and also to quickly and easily clean the firebox underneath. The indirect method is advisable for dishes that require longer than 25 minutes cooking time or which are so delicate that they would dry out or burn with the direct barbecueing method.

The following foods are suitable for indirect barbecueing:

Roasts, chicken on the chicken roaster, poultry cuts on the bone and whole fish.

1 Using the Memphis EZ-Access Flavorizer insert

Removing the grates

The EZ-Access Flavorizer is located directly in the centre below the grates. First of all open the grill lid and remove the grates, with the aid of the Genie Multi-Tool.

The insert is not fixed in place and can likewise be removed with the aid of the Genie Multi-Tool (or suitable barbecue tongs or spatula).

Note: never attempt to remove the insert without wearing barbecue gloves when the grill is in use and hot.

3 Servicing and cleaning the firebox

As soon as you have removed the EZ-Access Flavorizer insert, you have access to the firebox underneath. Now you can remove the ash residues using the Genie Multi-Tool (or other suitable spatula, wire brush and/or an ash vacuum).

The air holes in the firebox must be kept clear of ash residues to ensure that the fuel is able to light properly.

Refitting

As soon as the firebox has been cleaned, you can replace the components removed in steps 1 and 2.

Do not operate the grill without the EZ-Access insert (or the optional Direct Flame insert) in place.

After cleaning, refit the insert.

Grill instructions

The figures given below for quantity, thickness, weight and barbecueing time are for guidance only and are not hard and fast rules. Barbecueing times are affected by altitude, wind, outside temperature and how well cooked you want the food to be.

For barbecueing steaks, fish fillets, boneless chicken pieces and vegetables, use the direct method for the times given in the table below or until the food is cooked as well as required, turning the food once halfway through the cooking time.

Barbecue roast joints, pieces of poultry with bones, whole fishes and thicker cuts using the indirect method with the aid of the times shown in the table below. Alternatively, you can use a meat thermometer to check the desired core temperature. The barbecueing times for beef are for medium-done results unless stated otherwise.

Always use a meat thermometer to ensure that meat and poultry is properly done on the inside as well as the outside. Meat that is not properly cooked through can cause serious health hazards.

The approximate cooking times originate from various sources and relate to meat at fridge temperature. If you work with higher barbecue temperatures, we recommend that you do not apply barbecue sauce to the meat until the last 15 to 30 minutes of cooking time so as to prevent excessive browning or burning.

Instructions for smoking food

Approximate smoking times for the Rösle Pellet Grill

Always use the core temperature sensor to ensure that meat and poultry have been heated through to a safe core temperature and are cooked through. Serious health hazards can be caused by meat that is not properly cooked through. The cooking times indicated below are based on various sources and assume that the meat starts at fridge temperature. Use a good-quality meat thermometer to ensure the best results. If you work with higher barbecue temperatures, we recommend that you do not apply barbecue sauce to the meat until the last 15 to 30 minutes of cooking time so as to prevent excessive browning or burning.

When smoking food, leave the grill lid closed.

The smoking times are heavily dependent on your personal taste and the quality of the meat being smoked. In general one can say that the longer the meat is smoked at a low temperature, the more tender and juicy it will be. You should also consider how strong you want the smoked flavour to be and what smoke aroma you should choose. Oak, hickory, apple, alder, cherry and mesquite are the pellet aromas most commonly available. Here again, your individual taste preference is the decisive factor.

To obtain the best results, we recommend that you set a temperature of 105 - 135°C for most meats in smoker mode. If you want to achieve a stronger smoky flavour and have the time to do so, you can set the temperature as low as 90 - 80°C, though in general it is not worthwhile. You should also bear in mind that when smoking food in hot outside temperatures (sunny weather with temperatures above 32°C) it can be difficult to maintain a constant temperature of less than 93°C. If necessary, you can counteract this effect by leaving the hood slightly open.

Below are some general guidelines. We recommend that you simply try out what temperature and what flavour produce the best results for your personal taste. If you want faster results, simply use a higher temperature. But remember that if you do, the meat will not usually turn out as tender and juicy. Below you will find some important information, tips and techniques for obtaining the best results when smoking food. As far as what is the best method of smoking is concerned, every cook undoubtedly has his/her personal preference. You should bear that in mind when weighing up the following factors and deciding on what method is best for you.

Smoking at a temperature between 105 °C and 135 °C is the most commonly used method for most types of meat. (One possible exception is smoking fish.) In that temperature range you can obtain not only better but, above all, faster results.

When smoking at lower temperatures it is essential to use high-quality food-safe pellets such as Natures Way aromatised pellets. Natures Way high-quality pellets are 100% hardwood without any additives. Their special size enables even fuel delivery and economical consumption. For best smoker results you should always use high-quality pellets.

We highly recommend that you clean the firebox before using the smoker function and after using it for an extended period. Accumulations of ash could prevent your grill being able to maintain the smoking temperature.

Caution: we advise against using the smoker at low temperature settings in cold and windy weather. At temperatures below 105°C the condensation of smoke can result in the formation of creosote*. Use your own judgement but if in doubt err on the side of safety and caution.

The simplest way to find out which method of smoking produces the best results is to experiment. We all have different tastes and the best way to discover what is best for you is to try out different techniques and aromas. * Creosote is a sticky, pungent-smelling, corrosive and flammable substance that will adhere to everything it comes into contact with if suitable precautions are not taken. Creosote forms when gases produced by combustion mix together and condense. Usually those gases are carried away from the firebox together with the smoke. However, if the smoke cools to below 105°C, the gases can condense and form creosote.

Maintenance, cleaning and storage

  • Make sure that the grill has cooled down by checking the thermometer temperature.
  • Make sure that the pellets do not contain any glowing embers at all. Allow the pellets enough time to completely cool down.
    • Take out the grates.
  • Remove the ash from the firebox.
  • Clean the grill using a mild detergent and water. Rinse it thoroughly with clean water and then dry the surfaces.
  • The grates do not have to be cleaned every time they have been used. To easily remove the deposits, use the RÖSLE barbecue cleaning brush or a soft stainless steel brush. Then wipe over with a damp cloth.
  • To ensure your grill gives you long service, we recommend that after it has cooled down you protect it from the weather with a matching RÖSLE hood. To prevent moisture build-up, the hood should be removed after rain. Afterwards allow the grill and hood to completely dry out.
  • If you follow those tips, your RÖSLE grill will give you many years of reliable service.

Component Maintenance
Stainless steel surfaces Pleasealways clean all stainless steel surfaces before starting cooking. Dirt could otherwise burn onto the metal and cause discolouration. Dirt can easily be removed with warm soapy water and a soft cleaning cloth. There are also many proprietary products available from the trade for cleaning and protecting stainless steel surfaces. If the stainless steel tarnishes significantly, the discolouration can be removed by means of a stainless steel cleaner and a coarse (non-metallic) cleaning sponge.
Flavorizer We recommend thatyou always clean food and fat residues from the Flavorizer before using the grill. A clean Flavorizer also reduces shooting flames. Brush or scrape off residues using a barbecue brush or a spatula. Never clean the Flavorizer when it is still hot.
Fat-catcher drawers Always mmake sure that the fat-catcher drawers are clean and free of residues. Particularly in the warmer months they should be cleaned more frequently as the fat will go rancid otherwise.
RTD (resistance temperature detector)The ability of your grill to detect temperatures accurately and adjust its heat output accordingly is what makes it so unique and valuable. The temperature sensor (RTD) is located in the rear part of the cooking space. It should be wiped down with water and a mild detergent in order to keep it functioning perfectly.
The inside of the grill Althoughbarbecue pellets burn efficiently, they nevertheless produce a certain amount of ash. The inner surfaces of the grill do not have to be spotless but it is advisable to regularly remove the accumulated ash.
Airbox Only minimal servicingis required in the area of the airbox. This is simply where the air is carried from the fan to the firebox. You can occasionally vacuum out or brush off ash or combustion residues that have fallen below the firebox. Remove fat or other residues on the inner surfaces.
Grill hood We recommend thatyou cover your Memphis Grill when you are not using it. Make sure that the grill is switched off and has completely cooled down before you cover it over.
Firebox and igniterRegularly check that the air holes in the firebox are also clear. Use a wire brush to remove any dirt or blockages. For thorough cleaning, the firebox can be completely removed. To do so, you merely have to remove four cross-head screws and washers. When refitting the firebox, make sure that you position it correctly. The firebox should be fitted centrally and firmly seated but not under too much tension. You should also check that the igniter tube air holes are clean as shown in the illustration on the right. Guarantee

From development to full-scale production all RÖSLE products undergo many stages of design and testing. In manufacture and assembly we use only high-quality materials and raw materials as well as the latest quality assurance methods. Only in this way can we guarantee the high quality expected by RÖSLE customers and many years of enjoyment from the product.

Should it nevertheless happen that a product unexpectedly fails to meet those requirements, the following guarantee periods apply:

Grill and grates 2 years

Casing, stainless steel parts 10 years

All other parts 2 years

It is a condition of the guarantee that the product is assembled and used in accordance with the instructions in this manual. RÖSLE has the right to ask for proof of purchase (so you should keep your invoice or sales receipt safe).

The limited warranty only applies to repairs or replacement of parts that are shown to have been damaged through normal use. Where RÖSLE confirms the damage and accepts the claim, RÖSLE will either repair or replace the part(s) concerned at no charge. If you need to return a damaged part, postage is to be paid to RÖSLE in advance so that RÖSLE can send the repaired or new part back to you free of charge.

This limited warranty does not extend to failures or operating difficulties due to accident, abuse, misuse, alterations, incorrect usage, force majeure, deliberate damage, incorrect assembly or bad maintenance or servicing. In addition, the warranty is void if normal maintenance and cleaning is not regularly undertaken. In the same way this warranty does not cover deterioration or damage due to extreme weather conditions such as hail, earthquakes or hurricanes or changes to the colour due to direct sunlight or contact with chemicals.

Applicable implied guarantees of marketability and suitability are limited to the guarantee periods stated in this explicitly limited guarantee. In certain jurisdictions such limitations regarding the period of validity of an implied warranty are not allowed, therefore these restrictions will not apply to you.

RÖSLE accepts no liability for any exceptional, indirect or consequential damage. In certain jurisdictions the exclusion or restriction regarding secondary or consequential damage is not permitted, therefore these restrictions or exclusions will not apply to you.

Liability cannot be accepted for damage arising from the use or application of RÖSLE products on those of other manufactures due to improper use, assembly or e. g. by accident.

No person or company is authorised by RÖSLE to undertake any obligation or liability in its name in relation to the sale, assembly, use, dismantling, return or replacement of its products. Such representations are not binding on RÖSLE
