How do I change the CO2 bottle?
Close the CO2 bottle valve. Pull up the cap and turn the knob counterclockwise to release pressure. Remove the hose from the empty cylinder. Secure the new cylinder upright, remove dust cap, attach regulator and tighten. Open the valve fully, check gauge for stable pressure, test for leaks with soapy water. Then adjust regulator to 65 PSI and lock.
What should I do if the water is not cold?
Check that the water supply is cold (41-77°F). Ensure the cooling fins are not blocked or dirty. If the temperature setting is too low, adjust via the menu. If the issue persists, contact customer service.
How often should I clean the cooling fins?
Clean the cooling fins at least twice a year using a soft brush or scrubber. Be careful of sharp edges. Do not block the ventilation openings.
What does the red exclamation mark on the display mean?
A red exclamation mark indicates a system error. Check the error message on the undercounter display footer for details. If needed, contact customer service.
How do I set a portion size?

GENERAL INFORMATION VIVREAU TOP SERIES

This instruction manual is valid for the following products:

VIVREAU Top 85 (VIV T 85 C2-TG-J)

VIVREAU Top 85 HygienePlus (VIV T 85 C2-HP-J)

If a drain is not available only a VIVREAU waste container can be used.

The VIVREAU Top series

The VIVREAU Top product range includes the VIVREAU Top 85 with a cooling capacity of 85l/h (22.5 gal/h).

The system provides ambient still, chilled still and chilled sparkling water (medium and classic).

The VIVREAU Top is a countertop system. A customizable base cabinet as accessory provides the option to install it as a floorstanding system.

ThermalGate™

The outlet of typical water systems is usually completely unprotected and exposed to the environment. Germs settle on the wet water tap, and without appropriate mechanisms this may lead to a retrograde contamination.

The ThermalGate ^™ protects from contamination through external influences. The outlet tap will be automatically heated up at intervals and therefore thermally disinfected.

VIVREAU HygienePlus

VIVREAU HygienePlus is a proprietary 3 zone protection system, only available from VIVREAU. It is designed for environments where hygiene is of the utmost importance, and consists of three key elements:

  1. The inlet water filter includes pre-filter, activated carbon and membrane technologies. The filter reliably retains tested bacteria (acc. AST-MF-838) and other health-hazardous contaminants, such as cysts (in line with NSF 53). It also improves the taste of water by lowering the amount of chlorine.

  2. The VIVREAU CLARITY X3 filler – located directly upstream of the outlet tap – contains a very fine, asymmetric double-layer membrane that retains 99.99999% of remaining bacteria (acc. to ASTM F838) and 99.95% of cysts (acc. to NSF 53) before the water is dispensed.

  3. VIVREAU's ThermalGate™ feature automatically heats the outlet tap at regular intervals. This protects against retrograde contamination from external sources, such as physical contact (e.g. touching the tap) and droplets (e.g. from sneezing or coughing).

Important safety instructions. Please read these safety instructions carefully before using the appliance. Keep this manual in a convenient place so you can always refer to it for the safe and proper use of the appliance. Please make sure to pass it on to any new owner of this appliance so he can become familiar with it and the safety warnings. No liability will be accepted if the instructions in the manual are not followed.

Residual risks

The following section specifies residual risks that could occur even when the water dispenser is used as intended.

Danger to life from electrical current!

Contact with parts carrying live voltage is an immediate danger to life due to electrical shock. Damage to the insulation or individual components can therefore be life-threatening.

  • If the insulation is damaged, switch off the power supply immediately and arrange for repair work. Please contact customer service in this case. (see rear page)
  • Never bypass or switch off fuses.
  • Keep parts carrying live voltage away from moisture to prevent the risk of short circuit. Never pull the plug using the cord or with wet hands.
    • Always run the cable so that it cannot come into contact with heat sources, moisture, oil, sharp objects, sharp edges etc. Do not clamp or fold the cord.
  • If the power cord is damaged, it must be replaced by the man-

ufacturer, its service agent, or similarly qualified persons in order to prevent a hazard.

  • Ensure that the plug remains readily accessible to be able to disconnect the appliance from the electrical outlet.
  • Unplug the appliance prior to cleaning or maintenance work. In the process, ensure that the user is able to verify at each access point that the appliance still remains unplugged.
  • Ensure a protection of the appliance by means of a suitable ground-fault circuit interruptor.

Danger from CO₂!

CO₂ is a colorless, odorless gas. There is a danger of suffocation in situations of high concentrations and bad ventilation. The room size must be of at least 275 ft³ per 1 lb of CO₂. This information is based on Occupational Safety Information (ASI) 6.80 Safe Operation of Dispensing Systems and DGUV Rule 110-007 (Use of Beverage Dispensing Systems); if there are different local specifications, they must be observed by the operator.

  • Observe the operating instructions for handling CO2 compressed gas cylinders (see "Safety instructions for using CO2 gas cylinders" in the immediate proximity of the CO_2 bottle).
  • In the case of a suspected increase in CO_2 concentrations, do not breathe in, exit the danger area and sufficiently ventilate the place of installation.
  • Dissipate the CO_2 in accordance with state and local regulations.
    • Always run hoses so that they cannot come into contact with heat sources, moisture, oil, sharp objects, sharp edges etc. Do not bend or pinch hoses.
  • Do not touch a frozen CO_2 bottle.

Danger to life from CO₂ bottle pressure!

In the case of improper handling, the pressure within the CO_2 bottle can lead to serious or even fatal injuries.

Before replacing the CO_2 bottle:

  • Establish a pressureless state. Also discharge residual pressure.
    • Always ensure that the unintended escape of CO_2 is prevented.
  • Have defective parts – to which pressure is applied during normal operation – immediately replaced by a trained person.
    • Always secure CO_2 bottles in an upright position and secure

against falling.

  • Make sure that the sticker "Safety instruction for using the CO2 gas cylinder" is placed in the immediate vicinity of the CO2 bottle.
    • Always observe the safety notes on the CO_2 bottle.

Danger to health from refrigerant! Escaping refrigerant can cause frostbite, irritate the respiratory passages or lead to a loss of consciousness and to suffocation.

- Avoid contact with the refrigerant. - Prevent damage to refrigerant lines.

Refrigerant R290

The appliances are provided with the refrigerant R290. This refrigerant is an ecologically friendly, but flammable product. The room size must be of at least 35 feet per 0.28 oz of refrigerant. The amount of refrigerant in your appliance is indicated on the rating plate inside the appliance. Concerning the room temperature please observe the instructions in the instruction manual. Additionally, the following indications concerning appliances containing refrigerant R290 need to be followed:

  • Do not damage the refrigerant circuit. Escaping refrigerant can catch fire.
    • In case of escaping refrigerant, keep any kind of open fire sources well away and ventilate

the room thoroughly. Turn off the appliance immediately. Do not pull the plug out of the electrical outlet, as this can become a source of ignition.

  • Operate the appliance only in well ventilated areas. Keep ventilation openings clear of obstruction. Without adequate ventilation there is a danger of explosive gas mixtures.
  • A drinking water cooler having flammable refrigerant shall not be intended for use in lobbies or locations of egress, such as a hallway or public corridor.

Danger of injury from sharp corners and edges!

In the area of ventilation slits, there is the danger of injury from sharp corners and edges.
• Always carry out work in this area with caution.

Danger to life from improper installation and initial commissioning!

Errors in the installation or initial commissioning can lead to life-threatening situations and cause substantial property damage.
- All wiring and plumbing must conform to national, state, and local codes. Failure to comply could result in serious injury, death or equipment damage. Water pipe connections and fixtures directly connected to a potable water supply shall be sized, installed, and maintained

in accordance with federal, state, and local codes.

  • Only trained and certified electrical, plumbing and refrigeration technicians should service this unit. Always have installation and initial commissioning carried out exclusively by persons qualified by the manufacturer or a qualified dealer.
  • Disconnect power to the unit before servicing. Follow all LOCKOUT/TAGOUT procedures. Verify power to the unit is OFF and disconnected before any work is performed. Failure to do so could result in serious injury, death or equipment damage.
  • Refrain from unauthorized installation and changes of location.
  • The Electrical LOCKOUT/TAGOUT Procedure is used to protect personnel working on an electrical unit. Before performing any maintenance or service that requires exposure to electrical components, follow these steps:
  • In Electrical Box, place unit Circuit Breaker into OFF position.
  • Place a lock or other device on the Electrical Box Cover to prevent someone from placing Circuit Breaker in the ON position.
  • Place a tag on Electrical Box Cover to indicate that unit has been disconnected for service and power should not be restored until tag is removed by maintenance personnel.
  • Disconnect the unit's Power

  • Place a tag on the Power Cord to indicate that the unit has been disconnected for service and power should not be restored until tag is removed by maintenance personnel.
  • The water dispenser may not be installed near direct or indirect heat sources (such as ovens, radiators, heaters, dishwashers, washing machines and so forth). Likewise, hoses and cables must not come into contact with heat sources.
  • The water dispenser must be placed on a level surface that can bear the weight and is resistant to liquids and heat.
  • The water dispenser may not be installed at locations where there is a possibility of sprayed water or jets of water.
  • No objects may be placed on the water dispenser.
    • The water dispenser should not be cleaned with a water jet.
  • There must be no explosive, corrosive or abrasive environment condition. Keep the water dispenser away from flammable objects.
    • The water dispenser must not be subject to agitations and vibrations.
  • The water dispenser is not suited for outdoor use.
  • Never cover or block ventilation slits and cooling fins.
  • The water dispenser is to be installed in locations which have free access and can be moni-

tored by trained personnel.

- Consult the manufacturer even in the case of a change of location.

Danger to health from contamination!

Not following the hygiene guidelines can lead to contamination of the end product and could be harmful for the consumer.
- Observe all statutory regulations and hygiene guidelines.
• Always be aware of hygiene at the installation location.
- Ensure that the operating environment of the water dispensers corresponds to the stated specifications.
• Always maintain the cleaning intervals.
• Always maintain the disinfection intervals.
• Always maintain the intervals for replacing filters.
- Flush the water dispenser after a standstill of 24 hours.
- Flush the water dispenser after more than 120 minutes of being disconnected from the power supply (see 'After longer periods of inactivity' on page 28).
• Always avoid contact with the outlet tap.

Danger of injury through slipping in puddles of water!

Slipping in puddles of water on the floor could cause a fall. A fall could result in injuries.

- Check the drip tray regularly and empty it if necessary.

Danger from insufficient qualification of persons!

Insufficiently qualified persons cannot estimate the risks in handling the appliance, and they subject themselves and others to serious or fatal injuries and can damage the environment.

- Only permit qualified persons to carry out all the work.

- Keep insufficiently qualified persons out of the working area. All work should only be carried out by those persons who can be expected to perform the work reliably. Persons whose ability to react is impaired, for example from drugs, alcohol or medication, are not permitted.

The appliance can only be used by children aged 8 and over as well as persons with impaired physical, sensory or mental abilities, or a lack of experience and knowledge, if these persons are supervised or have been given instructions on the safe use of the appliance and understand the resulting dangers. Children may not play with the appliance. Cleaning and maintenance may not be carried out by children. The qualifications of the persons for the various tasks in these instructions are listed in the following:

Qualified person

The qualified person has undergone training for the assigned tasks and has been instructed on possible dangers caused by improper behavior.

Manufacturer

Certain work may only be performed by the personnel of the manufacturer.

Other persons are not authorized to carry out this work. Contact the customer service for implementation of the necessary work.

Operator

The operator is the owner or lessee of the water dispenser who makes it available to the user.

- The operator has been instructed in the operation of the water dispenser by the manufacturer or by a qualified person.

- The operator has been informed about his/her obligation to maintain a log book provided by the manufacturer or by a qualified person.

• The operator is aware of the dangers in handling CO_2 bottles and is capable of safely replacing the CO_2 bottles.

- The operator is familiar with the hygiene regulations applicable to the operation of a beverage dispenser.

- The operator has completely read and understood the instructions.

User

The user uses and operates the water dispenser for the intended purpose without any other previous experience.

A user is designated as any person who uses the appliance for dispensing water.

Danger to life for unau thorized persons from improper handling!

Unauthorized persons who do not fulfil the requirements described here do not know the dangers in handling the appliance. For this reason, there is a danger for unauthorized persons of serious or even fatal injuries.

Damage could also be caused to the environment.

- Unauthorized persons may not open the appliance.

- Unauthorized persons may not carry out any maintenance or repair work.

- The operator must ensure that the user only dispenses water.

- The defined qualifications for all tasks in these instructions must be fulfilled.

Operator's duties

The water dispenser is used on commercial premises. For this reason, the operator of the water dispenser is subject to the statutory and regulatory obligations for occupational safety, hygiene and accident prevention.

The operator is responsible for the

following:

- The installation and initial commissioning of the appliance may only be carried out by qualified persons.

- The requirements in terms of the installation location defined in these instructions (see 'Location' on page 15) must be fulfilled at all times.

- Prior to operation of the water dispenser, the instructions must be read in their entirety and understood.

- The cleaning, maintenance and repair intervals described in these instructions must be observed.

- Maintenance work may only be carried out by qualified personnel.

- The initial commissioning as well as all cleaning, disinfection and repair work must be recorded in the log book.

- The operating instructions for the replacement of CO2 bottles must be affixed near the CO2 bottle and must be clearly legible.

- In addition to the safety notes in these instructions, the applicable regulations for safety, hygiene, health and safety as well as environmental protection at the place of use must be observed.

- The operator should contact the local authorities to check the local and regional requirements for the installation of devices connected to the public water supply.

Safety equipment

Danger through malfunctioning safety equipment!

If safety equipment is not functioning or is inoperative, there is a danger of very severe injury or death.

  • Before starting up, check that all safety equipment is in good working order and correctly installed.
  • Never make safety equipment inoperative or bypass it.
  • Ensure that all safety equipment is accessible at all times. The safety equipment installed in the device is listed below.

Aquastop

The aquastop is located between the water shut-off valve and the water supply of the water dispenser.

A sensor inside detects the quantity of water passing through. When the registered amount exceeds 2.6 gallons of continuous flow, the aquastop valve automatically shuts off the

water supply.

CO _2 pressure regulator and pressure relief valve

The CO2 pressure regulator is mounted on the CO2 bottle. The mounted gauge indicates the applied CO2 pressure in PSI. The left gauge 1 indicates the CO2 pressure and the filling level of the CO_2 bottle.

The right gauge 2 indicates the CO_2 pressure applied to the appliance. The optimum setting is 4.5 bar/65 psi.

For additional safety, the CO_2 pressure regulator has a pres-

sure relief valve.

Water pressure regulator

According to ASSE1022 the water dispenser is installed with a water pressure regulator and a controllable backflow preventer. The water pressure regulator reduces the inlet water pressure. The water pressure regulator is preset to 4 bar / 58 psi. This pressure must not be changed without authorization.

Affixed labels and notices

Danger of illegible labelling! Over time, stickers and signs my become dirty or indecipherable for other reasons, meaning that dangers are not recognized and necessary operating instructions cannot be followed. There is dan- ger of injury as a result.

• Always keep all safety, warning and operating instructions clearly legible.
- Replace damaged signs or stickers immediately.

Spare parts

The use of incorrect spare parts can cause damage and malfunction of the water dispenser.

  • Only use original spare parts from VIVREAU or spare parts approved by VIVREAU. The device must be connected to the water supply using new pipes only. Old hoses must never be reused.
  • Never attempt the unauthorized repair of the water dispenser.
  • Servicing shall be done by factory authorized service personnel, so as to minimize the risk of possible ignition due to incorrect parts or improper service. For repair work, contact customer services (see rear page).

A list of the original spare parts is available from the manufacturer, customer services or special retailer.

Endangerment of the environment from improper handling of environmentally hazardous substances!

The improper handling of environmentally hazardous substances, particularly improper disposal, can lead to substantial damage to the environment.

• Always follow the notes stated below for the handling of environmentally hazardous substances and their disposal in compliance with all laws and regulations.

INTENDED USE LOCATION

Use according to the intended purpose: The water dispensers of the VIVREAU TOP product range are solely designed to dispense different water types. The water dispensers may only be used with tap water provided by the public water supply. The public water supply shall fulfill the requirements for drinking water quality.

The water dispensers are designed for professional use within the hospitality industry, catering services, hospitals, business buildings and offices, etc.

The dispensed water is only intended for immediate consumption.

The use according to the intended purpose assumes compliance with all the information contained in these instructions.

Any use beyond the intended purpose or other types of use are considered misuse.

In the event that public authorities request that the public water must be boiled, this also applies to filtered water dispensed from this appliance.

Once the request has ended, the inlet water filter must be replaced and the connections cleaned. Please contact customer service for this purpose (see rear page).

WARNING!

Make sure that the device is always sufficiently ventilated. Never obstruct or block the ventilation slots or cooling fins. Always keep the distance to walls and other objects as described in the information sheet delivered by the manufacturer.

The water dispenser may not be installed near direct or indirect heat sources. Hoses and cables must not come into contact with heat sources.

The CO_2 bottle must be placed as far as possible from any heat sources and the ambient temperature should not exceed 90^ .

To relocate the installed device, please contact customer service (see rear page). Any relocation must be carried out by a qualified person and documented in the log book.

STORAGE

Store the water dispenser in the following conditions:

• Do not store outdoors.
- Store in a dry, frost- and dust-free location.
• Do not expose to any aggressive
materials
- Avoid mechanical shocks.
- If storing for over 3 months, regularly check the general condition of all parts and of the packaging.
- Store vertically.

Startup On/Off

CAUTION Ensure that the device has been standing upright for 24 hours before starting up! Danger of damage to cooling system!

The installation and initial commissioning must be carried out exclusively by the manufacturer or by a qualified person.

For the floorstanding version (countertop + base cabinet) VIVREAU recommends to mount the base cabinet to the wall.

  1. Select desired portion size (glass or bottle)
  2. Press the button of the desired water type only once briefly.

Dispensing will stop automatically when the preset quantity has been reached.

By pressing any water type button or by pressing "stop button" on display, dispensing will stop immediately.

Note: A safety feature interrupts the dispense after 90 seconds of continuous dispense. Release and press button again to continue dispensing.

USING THE TOUCH DISPLAY

Errors and Warnings

The display (1) shows written warnings and errors. Fatal errors are also indicated by icons on the display.

For further information about the warnings and errors please refer to the chapter 'Troubleshooting' see page 30.

Standby

The display enters standby mode when not in use for more than 5 minutes (default setting).

To activate the display, touch anywhere on the display. The display will awake automatically.

If the display does not wake up please call customer service (see rear page).

The timer for the standby mode can be adjusted in the menu by the operator or a service technician (see rear page).

All settings can only be executed by the operator or the service technician. To enter the menu swipe downwards with two fingers on the display. A PIN code has to be entered.

System Setup

Set language Push the language button and turn back to system setup. The language will be saved automatically.
Set standby Set delay time for display standby mode manually• Off: no standby timer set• Set delay time with V arrows in 5 minute intervals.To save the delay time press save button. To discard the settings press cancel button.
Set date/ time Set the time with arrow buttons. The time will be saved automatically.Set the date with arrow buttons. The date will be saved automatically.

Portion Settings

It is possible to preset two different portion sizes for each water type.

To enter portion setting mode:

  1. Enter the menu.

  2. Select 'Portion settings'

  3. Select portion setting size A or B.

The system will guide through the next steps.

To set a portion size:

  1. Set a suitable vessel under the outlet tap.

  2. Press the desired water type button.

  3. Stop pressing when having dispensed the desired amount. Make sure not to overfill the vessel.

  4. Press the 'confirm' button to finish setting mode or press 'reject' to delete the set portion.

  5. To add more water, press the water icon again.

The setting has to be done separately for every water type.

Note: The preset portion may vary depending on local water supply flow rate.

The portion setting can be adjusted:

  1. Off: No portion setting available

  2. One time: Portion size has to be selected for every dispense

  3. Repetitive: Portion size selected last time stays activated

IMPORTANT

It is recommended not to exceed 0.25 gal per portion size. The setup is done at operator's own risk.

Temperature setting

The water temperature can be preset to three different levels:

  1. Enter the menu

The temperature of the set water temperature may vary depending on local water supply and environment temperature.

MAINTENANCE

Schedule

For the optimum and trouble-free operation of the water dispenser, please make sure to carry out the works described in the next section according to the schedule illustrated below.

If increased wear is identified during routine checks, the required intervals should be shortened in accordance with the actual signs of wear. Contact customer service with any questions regarding maintenance work and intervals (see rear page).

Maintenance works to be carried out by the operator. Do not slide or push the system to move it. When moving it must be lifted to avoid damaging the sealing lip on the bottom."

Cleaning the housing

  1. Clean the stainless steel surfaces of the housing with a cleaner suitable for stainless steel surfaces.
  2. Clean the black plastic surfaces of the housing with a cleaning agent suitable for plastic.

Disinfecting the outlet tap

Danger to health from contamination! Not following the hygiene guidelines can lead to contamination of the end product and

REPLACING CO _2 GAS BOTTLE

Safety instructions for using CO_2 gas cylinders.

Not following these instructions may lead to serious or fatal injuries!

Always connect the CO_2 cylinder to the regulator. Never connect the cylinder directly to the carbonator to avoid the danger of bursting. Never unscrew fittings from containers.

Always keep the cylinder away from heat.

Only connect the CO_2 cylinder if:

  • The gas cylinder location is sufficiently ventilated OR a CO₂ warning device is installed. Always ventilate the area after CO₂ leakage!
  • The CO₂ cylinder is in an upright position, secured well with the safety strap and located at a safe distance (minimum 20 in) from any heat sources.
  • It is proved that there is no liquid gas escape.
  • The suitable pressure regulator with safety valve for the dispenser is available.
  • The safety valve is sealed and fully functional.

WARNING!

CO _2 is a colorless, odorless gas. Danger of suffocation.

  • Observe the operating instructions for handling CO_2 compressed gas cylinders.
  • In the case of a suspected increase in CO₂ concentrations, do not breathe in, exit the danger area and sufficiently ventilate the place of installation.
  • Dissipate the CO_2 in accordance with state and local law and regulation.
    • Always run hoses so that they cannot come into contact with heat sources, moisture, oil, sharp objects, sharp edges etc. Do not bend or pinch hoses.
  • Do not touch a frozen CO _2 bottle.

WARNING!

Danger to life from CO2 bottle pressure! In the case of improper handling, the pressure on the CO2 bottle can lead to serious or even fatal injuries. Before replacing the CO_2 bottle:

  • Establish a pressureless state. Also discharge residual pressure
    • Always ensure that the unintended escape of CO_2 is prevented.
  • Have defective parts – to which pressure would be applied during normal operation – immediately replaced by a trained person.

• Always secure CO 2 bottles in an upright position and secure against falling.
• Always observe the safety notes on the CO
2 bottle.

11 steps to change the CO_2 cylinder safely:

  1. CO₂ bottle is empty.
  2. Close the CO₂ bottle valve F.
  3. Pull the cap C up.
  4. Turn knob (counterclockwise) as far as it will go.
  5. Remove the hose from the empty cylinder E.
  6. Remove cyclinder D. Secure it upright.
  7. Secure the new cylinder upright with safety strap. Remove dust cap from new cylinder.
  8. With cylinder valve F in closed position, reattach regulator to cylinder E. Taprite regulators have an inlet nipple seal (O-ring) that eliminates the need for a washer. Tighten nut with wrench. Ensure all connections are tightened. Do not overtighten.

  9. Open CO₂ bottle valve F all the way. Check gauge A. The displayed pressure gauge should stay stable when you close valve again.

  10. Check for leakage with solution of soapy water or an equivalent. Appearing bubbles are a sign of leakage. If leakage problem can not be solved, contact the customer service (see rear page).
  11. Open the CO₂ bottle valve F. Turn cap knob (clockwise) until 65 PSI is reached and then press down on the cap to lock in place.

After a longer period of inactivity

After an inactive period longer than 24 hours or a power failure, clean dispensing taps, housing and drip tray with antibacterial cloths and disinfectant spray, restore water supply and place a vessel on the drip tray and flush water dispenser with:

WARNING!

Danger to health due to a lack of hygiene! Risk of bacteria and germs if the water dispenser has been disconnected from the power supply for longer than 120 minutes. If disconnected for longer (but less than 24 hours), restart your dispenser and flush it as explained below (for 4 days' to 4 weeks' inactivity). If the water dispenser has been disconnected from the power supply for longer than 24 hours, system sanitization and filter change are necessary. Please contact costumer service (see rear page).

CAUTION!

After standstill times from 4 days up to 4 weeks, flush the water dispenser with 2.5 gal of still water and 5 gal of sparkling water. After a period of more than four weeks, sanitization and filter change is recommended. Please contact customer service (see rear page).
