DEAR CUSTOMER!
The Gastroback Home Sommelier will deepen the complex magnitude of aromas and taste of your wine by aeration with oxygen that will bring a more fastidious tasting experience and smoothing the mouth-feel by reducing tannins and carbon dioxide. What's more, it will also make the wine healthier.
Traditional decanting is a complex and long-lasting procedure. Due to the elongated contact with the ambient air, the wine will be exposed to room temperature and, additionally, small particles and foreign vapours and odours within the environmental air will be absorbed. Your new Gastroback Home Sommelier will solve these limitations and quicken the decanting process, thus making decanting more relaxed, more convenient, and more reliable by pressing cleaned, concentrated oxygen though the wine. Consequently, a clean, protective atmosphere will cover the surface of your wine, keeping contaminants away from your wine and reducing undesired components in the wine.
Wine enthusiasts will experience a softer, rounder and more complex flavour profile. Oxygenation will soften acidity and reduce the presence of harsh tannins. Even very young wines will be enjoyable without years of cellaring, and all your wines will benefit from enhanced flavours.
We wish you many delightful moments with the special pleasance derived from using your new Home Sommelier.
Your Gastroback GmbH

PROPERTIES AND BENEFITS OF YOUR NEW HOME SOMMELIER
The process of decanting aerates the wine to bring forth and deepen the full and rich variety of aromas within the wine. Via the contact with oxygen the full-bodied taste will be developed. At the same time, the content of carbon dioxide and harsh tannins will decrease leading to a quicker “maturing” of the wine, optimal displaying the complete, smooth bouquet. When using a traditional wine decanter – which is a bulbous flask with small neck – decanting will be a time consuming process. Only in some special cases, some minutes will be sufficient. In most cases decanting will last for up to 3 hours or even more. During this time, the wine will be exposed to environmental conditions: dust, vapours, smoke, and temperature.
When alternatively using a wine finer, the wine will be aerated during pouring. However, you will have no influence on the amount of oxygen, the wine will take during decanting. This could produce insufficient results as the required extent of aeration for getting the optimum taste could be different with each type of wine.
The Gastroback Home Sommelier will shorten the decanting process of several hours to some minutes without the shortcomings of the traditional decanting processes. You can verify the process easily via the control of the appliance. To make your decision for the correct decanting time easier, you select the natural decanting time, which is the decanting time, necessary for a traditional decanter. This way, each type of wine can be decanted according to its particular needs.
PURIFIED AND HIGHLY CONCENTRATED OXYGEN
The Gastroback Home Sommelier filters the ambient air to remove any impurities (moisture, dust, odours). Additionally, carbon dioxide is removed from the air and oxygen is enriched at a high grade by separating it from nitrogen, which is the main component of natural air. The upraised oxygen concentration is gained by the advanced oxygen extraction system of the appliance without using any chemicals.
As a result, the Gastroback Home Sommelier aerates your wine with a constant flow of purified and highly concentrated oxygen, thus increasing the efficiency of the decanting process significantly in a time saving and quality enhancing way. In contrast to the traditional decanting process, foreign substances, gases, odours, and contaminants of the environmental air are kept away from the wine at a high degree. This effect is attained via a layer of purified atmosphere that builds-up above the wine during decanting. Any wine can be served with a constant quality, with almost no influence of the environmental conditions during the decanting process. Nevertheless, this outstanding internal filter system is rated for an exceedingly long-lasting lifetime: approx. 30000 decanting processes under normal environmental conditions.
TIME EFFICIENT DECANTING VIA THE PATENTED GLASS DECANTING BOTTLE
Unlike traditional decanting that inhibits some flavours and aromas and limits the full potential of the wine over time, the Gastroback Home Sommelier shortens the decanting time to prevent your wine from a long exposure to ambient temperature and damaging contaminants of the surrounding air, thus preserves all the complex flavours and aromas that are released simultaneously during oxygenation.
This is done via the purified and highly concentrated oxygen that flows right into the wine. As a result, oxygen diffuses throughout the volume of wine, rather than just touching the surface. This helps to complete the oxygenation in a quite short time, rounding out tannins, thus providing a smooth mouth-feel. What's more, all aromas are revealed almost simultaneously to give the full potential of the wine.
Due to this features, the Gastroback Home Sommelier keeps the full flavours and aromas of the wine that winemakers want to deliver to even the most discriminating of palates. Additionally, you have a better control of the serving temperature of the wine, because the wine is exposed to ambient temperature only for a short time.
EXTERNAL FILTER
An external filter covering the air intake opening in the bottom of the housing prevents small particles from getting into the air system of the appliance. However, you will help the system performing its essential tasks by placing the appliance on a clean and dust-free surface during operation. Additionally, avoid to operate the appliance where foreign odours, dust, and smoke are released. Do not place the appliance on any tissue or clothes during operation to avoid that the air intake opening will get blocked and fluff will get into the air system. However, you should clean or replace the external filter regularly (see: "Replacing or Cleaning the External Filter").
PAUSE FUNCTION
You may interrupt and re-assume the running decanting process at any time you like. Use this feature to determine the optimum decanting time for your wine (see: "Interrupting or Cancelling Operation").
The Gastroback Home Sommelier may be operated on battery without any external power supply. A charge control indicator at the LCD display will show the current state of the designated, rechargeable battery. The capacity of the designated battery is nominated for 5-6 hours of actual operation.
Note
The decanting time, selected at the appliance, will be umpteen times the actual operating time. Therefore, when selecting the highest possible decanting time, the appliance will run various decanting processes using this setting with the battery charged only once. However, you should not forget to check the charging state of the battery and re-charge the battery in time, when planning to perform a decanting process.
Important: You should prefer battery operation rather than using any type of extension cord, when using the appliance on a set table.
To re-charge the battery, with the battery installed connect the appliance to the power supply. The battery will be re-charged even if a decanting process is running.
Note
Even though a high-quality rechargeable battery is used, it may be necessary to replace the battery at the end of its lifetime (see: "Installing or Replacing the Battery"). When noticing that the battery is exhausted too quickly after charging, and/or an unusual long charging time is required, you should replace the battery.
MEMORY FUNCTION
After switching off and disconnecting the appliance from the power supply, the appliance will memorize your last setting of the decanting time. This holds even when operated without a battery installed. Therefore, there is no need to keep the appliance connected to any power supply, when it is not in use, and when the battery is not to be charged.
USEFUL TIPS FOR DECANTING WINE
- Do not clean the decanting bottle in an automatic dishwasher or by using dish-water. Residues of cleaning agents, rinse aids, and aromatic substances would cover the glass surfaces of the decanting bottle by an invisible film and influence the aromas and taste of the wine. It is much better to rinse the decanting bottle with clear warm water only. Primarily, decanting wine shall bring forth the complete variety of aromatic components in the wine. The time duration required for this process depends on the age and type of the wine.
-
Please keep in mind that there is an optimum time duration for aerating the wine. Thereafter, the positive influence of decanting may be reversed.
-
When varying the decanting time you may notice a somewhat different taste of the wine for each time of aeration. This way, you can determine the optimum decanting time. It is best to use the pause function of the Gastroback Home Sommelier for this task (see: "Interrupting or Cancelling Operation").
- At the wine merchant's, ask for advice concerning the optimum temperature and decanting time, when purchasing a special wine. At a professional wine merchant's, the sales personnel will help you with gladness. Generally, the bouquet of all types of wine can be improved by decanting. In many cases, older wine may have built sediments already. Avoid whirling up the sediments, but fill these types of wine carefully into the decanting bottle to leave the sediments within the bottle. Although, the appliance may be operated even with very small amounts of wine in the decanting bottle, you should fill in at least 150 ml. Otherwise, decanting cannot perform in the best possible way, because the produced oxygen will only touch the surface of the wine, thus missing some of the outstanding properties of the appliance.
- The wine glass used can have a great influence on the delight when enjoying wine. For particular high-quality types of wine, you should prefer wine glasses that are especially designated for the type of wine. If possible, use fine crystal glasses.
BEFORE FIRST USE
⚠ WARNING: Risk of Choking! Always ensure that young children do not play with any packaging material! Do not leave young children without supervision with the appliance, or any part or accessory of it, or the packaging in reach.
The decanting bottle is made of fine glass. Always handle the decanting bottle with special care to avoid damage.
- Unpack all parts of the appliance and especially the glass decanting bottle shipped in the foam box with care. Remove and discard all promotional labels, stickers, and packaging materials attached to your new Home Sommelier, but do not remove the model label. Always ensure that young children do not play with any parts or accessories or the packaging!
- Before discarding the packaging, ensure that you have found all parts and accessories and that there are no damages. See: "Knowing Your Home Som-melier".
Note
We recommend to keep at least the foam shipping box of the decanting bottle. Placing the fragile decanting bottle back into the foam shipping box is the best possible way for protecting the decanting bottle from damage, when it is not in use. The appliance comes with a spare filter for replacing the external filter. You should store the spare filter carefully for later use.
⚠️ CAUTION: Do not use any abrasive cleaners, cleaning pads (e.g. metal scouring pads), or any corrosive cleaners (e.g. disinfectants, chemical bleach) for cleaning. Do not use any hard or sharp-edged objects for cleaning the appliance. Do not place the appliance or any part of it in an automatic dishwasher. Especially the decanting bottle should not be placed in an automatic dishwasher or even cleaned with dishwater, to avoid that components within the dishwater detract from the aromas of your wine!
- Clean the decanting bottle and appliance before first use and after an elongated time of storage (see: "Care and Cleaning").
- If you plan to operate the appliance on battery, install the battery (see: "Installing or Replacing the Battery").
OPERATION
⚠ WARNING: Risk of Injuries! The decanting bottle is made of fine glass and fragile. Always handle the decanting bottle with special care to avoid damage. As with any other glass containers used for food and beverages, there may be no cracks, splinters and chipped edges. Before usage, always hold the decanting bottle up to the light to ensure that it is completely undamaged to avoid that splinters and shards get into your wine causing severe injuries. Do not use the decanting bottle, if it is damaged in any way. The Home Sommelier is intended for usage by adults of 18 years and older only. Young children must be supervised closely when the appliance or any part of it is within their reach.
The appliance is intended for decanting/aerating wine. Do not fill any other liquid into the decanting bottle. Always remove the decanting bottle from the appliance for filling. At the maximum, fill the decanting bottle up to the maximum filling level MAX (750 ml) to ensure correct functioning and to avoid overloading the air system of the appliance. Before placing the decanting bottle on the appliance after filling, ensure that the exterior of the decanting bottle is clean and dry.
Do not attempt to use any other but the designated decanting bottle with the appli-
ance to avoid overheating and damage of the air system.
Wipe off spilled liquids immediately. Do not pour or spill any liquids on or under the housing of the appliance. If any liquid is spilled on the appliance or liquid is accumulating under the appliance, immediately switch OFF (press the "Power" button) and unplug the appliance. Thereafter, clean the appliance according to the instructions in chapter "Care and Cleaning". In this case, also extremely carefully check the decanting bottle for any damage, before drinking the wine.
Always keep the working space dry and clean. Do not let any liquids run on or under the appliance. Do not place clothes or similar materials on or under the appliance during operation. Do not block the air intake opening at the bottom of the appliance to avoid risk of overheating, fire, and electric shock.
Although the appliance will filter the air sucked in, before aerating the wine, always keep the working space clean, dry, and free of dust, smoke (e.g. by candles or cigarettes), and foreign odours to help the air system of the appliance.
Always switch off (press the "Power" button), unplug the appliance, and remove the decanting bottle, before cleaning or moving the appliance.
- For operation, place the housing of the appliance on an appropriate, level, and stable surface. To help the filter system of the appliance, the environment of the appliance should be free of dust, fluff, smoke, and corrosive and/or harmful vapours, and foreign odours.
Note
For operation on a table laid festively, we recommend to place the appliance on a sufficiently large, flat tray. With the designated battery installed correctly in the battery compartment, you may operate the appliance on battery (see: "Installing or Replacing the Battery"). On battery operation, there is no need to connect the appliance to your mains power supply. In time, ensure that the battery will be charged sufficiently (see: "Charging the Battery").
- Pour 150-750 ml of wine into the decanting bottle.
- Only if you wish to operate the appliance via your mains power supply, insert the small plug of the power cord into the socket at the rear of the appliance. Then connect the power plug to a sufficient mains power supply (see: "Important Safeguards for Electrical Appliances"). To indicate that the appliance is live, the LCD display illuminates for approx. 5 seconds and then goes out again.
- Place the filled decanting bottle in the well on top of the appliance.
- Press the power button to switch on the appliance. The LCD display illuminates. After approx. 5 seconds, the recently set value for the natural decanting time
and the percentage decanting progress will be shown. The decanting progress will always be 0 %, before starting the decanting process. With the designated battery installed, the battery charging level will be displayed via an icon.
Note
The natural decanting time displayed is the decanting time necessary, when using a traditional wine decanter (see: "Properties and Benefits of Your New Home Sommelier"). When setting the decanting time, you will select the natural decanting time in hours and minutes ("h:min"). Please keep in mind that the actual decanting time using the Gastroback Home Sommelier will last only some minutes – depending on the natural decanting time you have set. For example: 3 hours natural decanting time are corresponding to approx. 3 minutes, when using the Gastroback Home Sommelier.
- Turn the selection dial to set the desired natural decanting time for your wine from 0 to 15 hours in steps of 5 minutes. With the desired value on the display, press the "Start" button to start operation.
Tip: You may interrupt or cancel the current decanting process at any time you like by pressing the "Stop/Reset" button (see: "Interrupting or Cancelling Operation").
- Wait until the percentage decanting progress displayed reaches 100% and the appliance stops operation automatically. Thereafter, your wine is ready for consumption.
- Pour your wine and rinse the decanting bottle with warm water to remove the residues of wine (see: "Care and Cleaning"). Do not leave any residues of wine dry on the surfaces of the decanting bottle.
- If you wish to start the appliance newly, press the "Stop/Reset" button to reset the percentage decanting progress to 0%. Thereafter, you can start a new decanting process immediately.
- If you do not wish to use the appliance again, switch off the appliance, unplug, and clean the appliance. After cleaning, you should store the decanting bottle in the foam shipping box, in which it came to you. This way, it is protected against damage and dust.
Note
Do not store any wine within the decanting bottle of the appliance to avoid the build-up of deposits within the decanting bottle. Any mechanical cleaning of the decanting bottle should be avoided as well as cleaning within an automatic dish-washer (see: "Care and Cleaning").
For saving energy, the Gastroback Home Sommelier will switch off automatically after 10 minutes of being idle and the LCD display will get dark. Nevertheless, your last setting will be kept in memory even after disconnecting the appliance from the mains power supply (see: "Memory Function").
INTERRUPTING OR CANCELLING OPERATION - THE "STOP/RESET" BUTTON
You may interrupt or cancel the current decanting process at any time you like by pressing the "Stop/Reset" button (pause function).
- Pressing the "Stop/Reset" button once: the decanting process will be interrupted. To re-assume operation and continue the current decanting process, press the "Start" button.
Tip: You may use this function to reach the optimum decanting time for your wine. After interrupting the decanting process, you can test the current state of your wine for the optimum taste and mouth-feel. If you wish to continue decanting, simply press the "Start" button to re-assume operation.
- Pressing the "Stop/Reset" button twice, the percentage decanting progress will be reset to 0%. Thereafter, you can start a new, complete decanting process immediately without any other settings.
- Pressing the "Stop/Reset" button three times will reset the default value for the decanting time to zero ("00:00"). Thereafter you must select a new decanting time via the setting dial, before starting a new decanting process. However, before starting a new decanting process, you can modify the decanting time in any case.
INSTALLING OR REPLACING THE BATTERY
The Gastroback Home Sommelier may be operated on battery without any external power supply. Even though a rechargeable battery is used, it may be necessary to replace the battery at the end of its lifetime, because the lifetime even of rechargeable batteries is generally limited due to the chemical processes within the battery. However, in any case you can operate the appliance via your mains power supply without the battery.

CARE AND CLEANING
⚠ WARNING: Always ensure that the appliance is out of reach of young children. Always switch off (press the "Power" button, the LCD display gets dark) unplug the appliance from the mains power supply, and remove the decanting bottle, before moving or cleaning the appliance.
Hygienic cleaning is done via the steps given in the following instructions. Ensure to protect the housing and power cord against splashing water and moisture. Do not immerse the housing or power cord in water or any other liquid. Do not spill or drip any liquids on the housing and power cord to avoid risk of fire, electric shock, and damage. Do not clean the appliance or any of the parts or accessories in an automatic dishwasher!
Do not use any violence. The decanting bottle is made of fine glass. Always handle the decanting bottle with special care to avoid damage. Do not poke in the interior of the decanting bottle to avoid damage to the tube in the centre of the decanting bottle. With the tube damaged in any way, splinters could get into your wine, causing severe injuries. At the rim of the oxygen nozzle, there is a black sealing ring. Ensure not to damage the sealing ring during cleaning. Do not store wine in the decanting bottle after operation to avoid stubborn residues of sediments in the decanting bottle. Do not use any abrasive cleaners or cleaning pads (e.g. metal scouring pads) or any hard or sharp-edged objects for cleaning the appliance or any parts of it, to avoid damage to the surfaces. Avoid using dishwater for cleaning the interior of the decanting bottle, as this would leave an invisible film of cleaning agents,,rinse aid, and aromatic substances on the surfaces of the decanting bottle detracting from the delicate aromas of your wine.
- Before cleaning, switch off the appliance by pressing the "Power" button. Then unplug the appliance from the mains power supply and remove the decanting bottle.
- Pour out the wine and rinse the decanting bottle thoroughly with clear, warm water. Then wipe dry the exterior of the decanting bottle. Ensuring that the decanting bottle will not fall over or fall down, leave the decanting bottle dry naturally (e.g. on a suitable rack).
Important: We recommend to store the decanting bottle in the foam shipping box after drying to protect the decanting bottle from any damage.
- Avoiding spilling any liquid on the housing and/or damaging the sealing ring at the oxygen nozzle, if required, clean the housing and power cord with a soft, damp cloth. Polish with a soft, dry cloth.
- You should clean the external filter at the bottom of the appliance regularly or, what's better, replace it (see: "Replacing or Cleaning the External Filter").
REPLACING OR CLEANING THE EXTERNAL FILTER
Depending on the frequency of usage and the environmental conditions during operation, you should clean or replace the external filter regularly. A spare filter is provided with the appliance. However, for purchasing new filters and further information feel free to contact Gastroback Customer Care Center, phone: (+49) 4165 / 2225-0.
Important: Always ensure that the external filter is completely dry, before installing the external filter at the air intake opening. After extended usage or if the external filter is damaged in any way, it will be better to replace the external filter.
- Switch off the appliance (press the "Power" button, the LCD display gets dark) and unplug the appliance from the mains power supply. Remove the decanting bottle. Unplug the power cord from the back of the appliance.
- Turn the housing upside down.
- The external filter is simply clamped in 4 filter support pins. Simply pull the external filter out of the filter support.
- You may wash the filter in warm, clear water. Repeatedly, squeeze out the filter under water. Thereafter, carefully dab dry with a soft clean fluff-free cloth. Thereafter, leave the external filter dry naturally, until it is completely dry.
Important: Install the external filter only if it is completely dry to avoid overloading the air system.
- Push the clean and completely dry external filter under the filter support pins, ensuring that it covers the air intake opening completely. The appliance is now ready for use again.
STORAGE
⚠ WARNING: Young children must be supervised that they do not play with the appliance or any part of it. The decanting bottle is fragile. Ensure that the decanting bottle will not be chipped or fall or roll down from the storing shelf. To avoid severe injuries due to splinters and just to be on the safe side, replace the decanting bottle when the decanting bottle has been subject to inadmissible strain (e.g. mechanical load or shock, extreme temperature variation).
Important: To avoid damage and injuries, we strongly recommend to store the decanting bottle in the shipping foam box, in which the decanting bottle has been packed for transport.
- When the appliance is not in use, always switch off (press the "Power" button) and unplug the appliance from the power supply. Remove the decanting bottle from the appliance. Then pull out the plug of the power cord from the back of the appliance.
- Clean the appliance and all parts and accessories (see: "Care and Cleaning") before storage.
⚠️ CAUTION: Do not grasp the appliance at the power cord for moving. Always remove the decanting bottle before moving or cleaning the appliance. Otherwise, the decanting bottle could fall.
When removing the battery, always ensure not to short-circuit the terminals of the battery by contact with any electrically conducting object.
- When the appliance is not in use for an extended period of time (some weeks), always remove the battery from the battery compartment (see: "Installing or Replacing the Battery"). Check the battery for any type of damage or corrosion (see: "Important Safeguards for Electrical Appliances"). Dispose of damaged batteries using the local collection facilities. If the battery is in proper working order, it is best to store the battery in a small, uncovered plastic box. This way, you avoid damage, if the battery leaks unnoticed.
- After removing the decanting bottle, grasp the housing of the appliance at both sides and place the appliance on a suitable surface, where it is clean and dry and the appliance is protected against inadmissible strain (e.g. moisture, electric or mechanic shock, frost, direct sunlight) and out of reach of young children.
- We recommend to store the decanting bottle in the shipping foam box to protect the decanting bottle from any damage.
Important: The power cord may not be knotted, squeezed or bent. Do not use any parts or accessories of the appliance for any other purpose than operating the appliance. It is good advice to store all parts and accessories of the appliance with the appliance.
