IMPORTANT SAFETY INSTRUCTIONS

The porcelain enamel coating on the inside and outside of your cast iron cookware is very durable and gives the cookware a wide range of uses for preparation and cooking.

Before using your new cast iron cookware, wash it in hot water with mild liquid soap. The cookware should be rinsed and dried immediately. Do not air dry or store wet.

Your cast iron cookware is safe for use in the oven or on a gas, electric, ceramic or induction stove top. Although it is safe for this cookware to be used on a ceramic, glass or induction stove tops, it is strongly suggested that you refer to your appliance manual to ensure the stove top is compatible with enameled cast iron cookware prior to use. Also, be sure to always lift the cast iron cookware when moving these pieces to avoid scratching your stove top and damaging your cookware.

Note that the integral cast handles on the cookware will become hot during stove top or oven use. Oven mitts or hot pads should be used when moving a hot pot.

Always use plastic, wood or silicone utensils when stirring. Metal utensils will scratch the surface. Do not hit the rim of the cookware with metal utensils as this will eventually damage the cookware.

Do not use mixers or hand-held blenders in any cookware as this may cause permanent damage to the surface.

Do not cut food directly on the enamel surface of the cookware.

Never use your cast iron cookware in the microwave, on outdoor grills or campfires.
USING YOUR COOKWARE
-
None of the enameled surfaces require seasoning before use.
-
For best results, you should apply your choice of liquid vegetable oil or butter to the inside base before you begin heating. Do not overheat the cookware with or without oil prior to cooking.

Medium and low heat settings will provide the best results for most cooking, including frying or searing. Always allow the pan to heat gradually as this will ensure the most even and efficient cooking results.

High heat settings should only be used for boiling water for pasta, vegetables, or reducing sauces. Do not use high heat to pre-heat a pan as this may cause the pan to become overheated and result in poor cooking results such as sticking or discoloration of the cooking surface.
CLEANING AND CARING FOR YOUR COOKWARE

Always allow a hot pan to cool before washing. Use a sponge or soft cloth to remove any residual food, then wash in hot soapy water. If there is residual food in the pan, fill it with water and allow it to sit for 15-20 minutes before washing. Soft brushes and nylon or soft abrasive pads may be used to remove stubborn food residuals. If staining persists after following this process, repeat the soaking process with 14 cup of vinegar and 1 cup of water. You may also simmer this mixture on your stove top at low to medium heat for an additional 15-20 minutes.

Never use steel wool, steel abrasive pads or abrasive cleaners as these will damage the porcelain enamel finish.

Always dry your cookware completely after washing.

Never wash your cookware in the dishwasher.

Avoid dropping or hitting your cookware against a hard surface as the porcelain enamel coating may chip or crack.

Over time, a brownish film will develop on the black satin finish of the Grill Pan and Frying Pan. This is normal. Do not attempt to remove this buildup as it enhances the cooking performance and reduces sticking.
TERIYAKI STUFFED SKIRT STEAK
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes
Servings: 6
Ingredients:
1 pound USDA Choice Skirt Steak
Carlini Canola Cooking Spray
8 ounces mushrooms, sliced
12 green onions, sliced
1 tablespoon grated ginger
1 teaspoon ground Stonemill Sea Salt Grinder, plus additional to taste
12 teaspoon ground Stonemill Black Peppercorn Grinder, plus additional to taste
12 ounces Tuscan Garden Teriyaki Marinade
Directions:
- Preheat oven to 400^ F.
- Lay the skirt steak on a cutting board. With a sharp knife, butterfly the skirt steak horizontally from top to bottom. Work slowly and keep the knife level with the board, avoid cutting holes into the steak. Continue slicing until the steak can lay flat, but is still attached by the edge. Season to taste with salt and pepper.
- Heat the grill pan over medium-high heat; coat with cooking spray. Grill the mushrooms till tender, about 5 minutes.
- In a large bowl, combine the mushrooms, green onions, ginger, salt and pepper. Mix thoroughly.
- Lay the steak on the cutting board with the grain going vertically.
- Evenly spread the mushroom filling onto the steak, pressing in gently. Tightly roll the steak away from you.
- With butcher's twine, tie the steak roll in 1-inch increments. Evenly season with salt and pepper to taste and brush with teriyaki marinade.
- Coat the grill pan with cooking spray; reheating to medium-high heat. Sear the steak on all sides.
- Transfer steak to a cutting board. Slice into 6 slices, keeping the twine intact. Return slices to the grill pan. Cover with the remaining marinade and bake for 10 minutes or until it reaches an internal temperature of 135^ F for medium rare.
- Remove the twine to serve.

GRILLED CHIMICHURRI STEAK SANDWICH
Prep Time: 12 minutes (plus 30 minutes to marinate)
Cook Time: 23 minutes
Total Time: 35 minutes (plus 30 minutes to marinate)

Ingredients:
2 bunches parsley
7 cloves garlic
1 tablespoon Stonemill lodized Salt
1 teaspoon Stonemill Ground Black Pepper
1 ½ teaspoons Stonemill Crushed Red Pepper
3 tablespoons fresh lemon juice
2 tablespoons SimplyNature Organic Apple Cider Vinegar
14 cup Carlini Vegetable Oil
^3/_4 cup water
2.5 pounds USDA Choice Skirt Steak
6 Specially Selected Ciabatta Sandwich Rolls
14 cup Countryside Creamery Unsalted Butter, melted
3 cups SimplyNature Organic Arugula
6 slices Happy Farms Preferred Deli Sliced Havarti Cheese
1 cup caramelized onions
Directions:
- Combine parsley, garlic, salt, black pepper, crushed red pepper, lemon juice, vinegar, oil and water in a blender until smooth to make a chimichurri sauce.
- Reserve 12 cup of chimichurri sauce.
- Pour remaining chimichurri sauce in a recloseable gallon sized bag. Add skirt steak and marinate for at least 30 minutes.
- Using a cast iron grill pan, grill skirt steak to desired temperature. Let meat rest for 10 minutes.
- Split each ciabatta roll and brush with butter. Grill bread on the grill pan until toasted. Reserve.
- In a medium bowl, toss arugula with reserved chimichurri sauce. Reserve.
- Slice steak against the grain to desired width. Reserve.
- To assemble the sandwiches, layer the steak on the bottom pieces of the ciabatta rolls, followed by 1 slice of Havarti and caramelized onions. Finish with arugula and top of ciabatta roll.
