All parts, which are touched by foodstuff, are stainless, resisting to odour and foodstuff and tasteless.

The accessories keep always a distance of at least 5 mm from the wall and of 2 mm from the bottom of the recipient due to the protective cap and the safety blade. Any contact or damage of the recipient by rotational tools is thus avoided. The ESGE-handblender is provided for a continuous use of 5 minutes. It is normal when the housing becomes warm during use.

Please let the machine cool down after this operation time.

Do not leave the appliance constantly in water/liquid ir in a hot recipient. The rising steam may cause motor damages.

Clean the appliance immediately after use. The ESGE-Zauberstab® provided in particular for use in private households should be kept in the wall holder near the stove and not above the stove. The machine should not be exposed to constant steam (as usual in large kitchens) in order to avoid steam penetrating into the housing and causing damages of the machine.

  2. This appliance is not intended for use by persons (including children) with reduced physical, sensory or mental capabilities, or lack of experience and knowledge, unless they have been given supervision or instruction concerning use of the appliance by a person responsible for their safety.
  3. Children should be supervised in order to ensure that they do not play with the appliance.
  4. Keep the appliance out of reach of children.
  5. Connect the appliance only to an AC power supply with the voltage indicated on the rating plate.
  6. Do not operate this appliance with an external timer or remote control system.
  7. The handle must never be immersed into the liquid.
  8. Do not clean the appliance and the protective cap in the dishwasher.
  9. Switch on the appliance only after putting it into a jug with flat bottom.
  10. When placing the attachments take care that the attachment is fixed firmly. For re-adjusting please follow the instructions on page 27. No responsibility for collateral damages due to unproperly fixed attachments.
  11. Whenever the knife is bent or damaged, we recommend to replace it immediately in order to avoid collateral damages of sauce-pans and recipients.
  12. The appliance is fitted with GS safety press-switch, which prevents the unit being unintentionally switched on, and also switches it off as soon as the press-switch is released.

  13. Do not apply too much pressure when chopping hard foodstuff, just hold the blender on the foodstuff and move it slightly up and down.

  14. Never touch the appliance or lead cable with wet hands.
  15. Do not place the appliance or lead cable near open flames during operation.
  16. Make sure that the lead cable does not hang over the edge of the worktop or table, since this can cause accidents, for example if small children pull on the cable.
  17. Route the lead cable so that it is prevented from being pulled or tripped over.
  18. Always disconnect the lead cable from the wall socket pulling on the plug, never on the cable.
  19. To avoid injuries, never touch the rotary parts of the appliance and do not put objects or parts of the body in the operating appliance.
  20. Do not use the appliance with accessories of other manufacturers or brands, to prevent damage.
  21. Disconnect the appliance from the wall socket after use and prior to cleaning. Never leave the appliance unattended when it is connected to the wall socket.
  22. Check the appliance, the wall socket and the lead cable regularly for wear or damage. In case the lead cable or other parts appear damaged, please send the appliance or the base to our after sales service for inspection and repair (for address, see warranty terms). The Mincer Art.-No. 7030

Minces, chops and mashes raw and cooked vegetables, cooked meat, frozen fruit to make fruit ice cream.

The Mincer is a real all-rounder that grinds, minces and chops. Mince raw and cooked vegetables or cooked meat as fine as you need or blend soups and sauces in next to no time. Prepare baby food directly in the frying pan or the saucepan on the cooker so you avoid wasting time on transferring between storage containers and extra washing up. With the Mincer you can stir dough for cakes, pastry and omelette; you grind fruit and berries for exotic food and delicious desserts and frozen fruit to make fruit ice cream and sorbets. The Mincer even chops ice cubes to crushed ice for cold drinks and cool cocktails.

The Wisk Art.-No. 7020

Stirs light dough and puddings to a creamy consistency. Simply ideal for all thick products such as mayonnaise.

The Whisk is the gentle specialist for all thick and creamy creations. Use it to stir light dough for pancakes, omelettes and egg batter. It purees mashed potato in a flash, stirs puddings creamy and emulsifies salad sauces and dressings – even cosmetic creams. You create mayonnaise, remoulade sauce or herb butter in seconds (and without artificial additives!). And your cocktails and drinks are mixed like a professional barkeeper's. Stirring consistently, the Whisk is gentle on ingredients that are not to be chopped, such as the raisins in dough.

The Beater Art.-No. 7010

Beats egg white, cream soufflés, frappés and is perfect for béchamel sauce and sauce hollandaise.

The beater is slightly angled. This is not a manufacturing fault!

The Beater is a pastry chef. It whips egg-white, cream, shakes and mousse. You can emulsify and blend sauces perfectly with the Beater. Even light cake dough feels perfectly treated with the Beater. Tip: The whipped cream you prepare with the Beater will turn out firmer than with other appliances, because the few air bubbles that arise with rotation are smaller. So the cream remains stable and firm – without adding cream stiffener. To use the cream straight away just add 1 – 2 table spoons of cold milk per 200 ml. This raises the volume, but you then have to use the cream soon after.

Minces, chops and mashes meat, fish and hard fibrous vegetables.

The Meat and Vegetable Chopper is really a sharp character with which you can quickly and easily mince fibrous vegetables and fruit – like chard, asparagus, rhubarb, pumpkin and pineapple – or tender meat, liver or fish. The Meat and Vegetable Chopper's blade sharpness means that the parts are not ripped, but gently cut. That is why mashing potato with the Meat and Vegetable Chopper does not release any starch making it creamier.

The Grinder Art.-No. 5050

Grinds nuts, chocolate or coffee beans and turns sugar cubes into the finest icing sugar when you need it.

You could call the Grinder a small mill, although it has a hammer mechanism rather than a grinder. The ESGE Zauberstab® (magic wand) which attaches to the Grinder is ideal for finely grinding small quantities of fresh or dried herbs, spices, poppy seed, chocolate, nuts, oil seeds or grains (apart from maize). You can use the Grinder to make sugar into icing sugar and bread into breadcrumbs. And the Grinder is the perfect helper for Christmas baking – to grind (frozen) lemon or orange peel or candied fruit – so you have the taste without the unwanted large pieces.

Fill the foodstuff to be ground into the grinder base. Put the Zauberstab (without accessories) on the shaft of the grinder. Take the handle of the grinder in the hand. Switch the Zauberstab on the highest position and shake the grinder slightly with your hand while the knife is rotating, to ensure a good distribution of the food to be grinded. When grinding poppy seed, add 1-2 sugar cubes. Chocolate should be hard when being grinded or chopped.

Minces and grates and rasps with different grating and cutting plates – parmesan cheese, carrots and much more besides.

The Zauberette ^ is the perfect universal mincer. It cuts and grates vegetables and fruit – either to strips or slices as you need it, or gently but consistently purees with the chopping blade. The gear mechanism in the lid of the ESGE Zauber-stab ^ drives the mincer thus reducing centrifugal force and increasing power. This makes preparation gentle; vegetables are not juiced immediately, they keep all their important nutrients and flavours. The Zauberette ^ is a versatile helper for the small to medium sized household: It is fully equipped with 2 cutting plate for cucumbers, carrots, fruit and more, 3 grating plates for grating/grinding nuts, cheese or horse radish and the cutting knife for gently mincing meat, fish, herbs or baby food. Disassembly is childplay, cleaning is quick and easy – and all parts apart from the lid are dishwasher safe. Zauberette ^ is big on safety, because the plunger keeps you a safe distance from the cutting and grinding mechanism. Its compact size means it small when you don't happen to need it.

Attaching the accessories is very simple. Push the respective attachment on to the drive stub of the mixer, so that the driver pin on the stub fits into the notch of the attachment.

With centering to facilitate precise fitting of the attachments. To remove the attachment, simply pull it off.

Only use original ESGE-Zauberstab® accessories.

Caution:

Switch off and unplug appliance when changing accessories. The attachments may be sharp.

HOW TO USE ...

For safety reasons the appliance is equipped with a press-button switch, which means that the ESGE-Zauberstab® works only when this switch is pressed down.

Switch on the appliance by pressing down the button only when the cutter guard is in the receptacle. Switch off the appliance by releasing the press-button once you have finished working. Then lift the appliance out of the receptacle. Get rid of any pieces of food still adhering to it by tapping the shaft a few times against your free hand.

Liquid ingredients

To achieve a better mixture, hold the ESGE-Zauberstab ^® at a slight angle in the receptacle (e.g. when blending soups).

Speeds

The ESGE-Zauberstab® offers two speeds.

Speed 2 is used for most applications, in particular for chopping hard food or large quantities.

SUITABLE RECIPIENTS

You may use any type of recipient with flat bottom, even crystal glasses, or work directly in the sauce pan on the stove. Important: tall, narrow jugs are usually most suitable for working in. Use small jugs for small quantities and large ones for large quantities. Check with care when using coated cooking pots, in order to avoid scratches in the coating.

Tip: in order to prevent the jug from moving while processing, put it on a damp cloth.

Take care to bring the ESGE-Zauberstab® to the receptacle, even on the stove, and not vice versa.

... always use a tall, narrow jug. The jug must be absolutely clean (without grease or detergent residues).

Place the appliance on the bottom of the jug, switch on to lower speed and let it run for a few seconds, then move it slowly up and down along the sides of the jug. Raise it at the same speed as the mixture is rising, then go back to the bottom and repeat this procedure until the desired stiffness is obtained.

CLEANING AND CARE

The ESGE-Zauberstab ^® is easily cleaned, and this should be done each time after each. Just rinse the lower part of the appliance under running water (do not switch on!).

If bits of food stick to the mixer, put the shaft in a bowl of hot water and let it run for a little while. Do not let water get into the switch. Do not clean the appliance and the protective cap in the dishwasher.

Your ESGE-Zauberstab® benefits from being oiled from time to time. Use a non-acid oil. Hold your ESGE-Zaubersta® upside down and then put some drops of oil at the end of the drive-shaft, then switch on the appliance for about 2 minutes. Finally clean the appliance with hot water.

WHAT CAN BE DONE ...

When you have not used your appliance for a fairly long time the drive shaft may get stuck due to small foodstuff residues which have hardened and are now gumming up the lower shaft bearing.

Place your ESGE-Zauberstab ^® for about 5 minutes in a jug with hot water and a mild detergent, then switch it on. In general your ESGE-Zauberstab ^® will then work again; if not, just try to free the shaft carefully with pliers.

Should the shaft still not rotate, the fault probably lies elsewhere, and the appliance should be sent to our repair service.

If sticky ingredients such as egg, sugar, honey are processed, it is best to hold the appliance together with the attachment for a minute or two in the washing-up water. Water will not harm the housing, but the cable outlet must not get wet.

WARNING:

Replace damaged attachments immediately. No liability in case of damaged attachments!

RECIPES

ESGE M 200 Superbox - RECIPES - 1

Use of the mincer

The following recipes ar provided for 4 persons.

(tbs= tablespoon, ts= teaspoon)

SPICY POTATO SOUP

50 g each of leek and celery

1 carrot

1 shallot

2 tbs. of butter

1 ltr. of bouillon

250 g of waxy potatoes

Salt

ground black pepper

fresh marjoram as desired

fresh thyme as desired

2 tbs. of whipped cream

1 tbs. of chopped chives

Clean and wash the leek, cut the green part off and use only the white part. Clean the celery, clean and wash the carrot.

Peel the shallot and roughly chop all vegetables using the mincer.

Put butter in a pot, sweat the vegetables in the butter and fill up with bouillon.

Peel the potatoes, roughly dice, add them to the bouillon and simmer, covered, during approx. 20 minutes at low heat.

WHITE SAUCE

50 g of butter

5 tbs. of flour

12 litre of bouillon or vegetable

stock

Salt

(optional) a squeeze of lemon juice

Melt butter in a pot and brown the flour.

Add hot bouillon or vegetable stock, stir and simmer at low heat, stirring from time to time. Chop possible lumps using the mincer, season with salt and lemon juice.

This recipe may be varied by adding 2 pieces of soft cheese, anchovies or capers.

POTATO PANCAKES

400 g of baking potatoes, peeled and diced

1 small, chopped onion

1 fresh egg

Salt

Pepper

ground nutmeg

oil for frying

Put the diced potatoes and the onion (or the potatoes finely grated using the Zauberette grater) in a bowl, add the egg and season with salt, pepper and nutmeg.

Stir well with the mincer. Heat the oil well in a frying pan, add small amounts of the potato mixture and flatten them to small pancakes and fry them on each side.

PEPPERMINT SMOOTHIE

Serves 6

3 tbs. of peppermint

800 mls. of buttermilk

8 tbs. of peppermint syrup

6 tbs. of lemon ice-cream

Purée the peppermint, buttermilk and peppermint syrup using the mincer. Add lemon ice-cream and mix quickly.

Fill 6 glasses and serve immediately.

YEAST DOUGH (BASIC RECIPE)

Serves approx. 1 kg of dough: 375 mls. of lukewarm milk 25 g of fresh yeast 100 g of fresh butter 80 g of sugar 1 egg ½ tsp. of salt approx. 500 g of flour

Pour the milk into a bowl and add the yeast, melted butter, sugar, egg and salt. Stir to foamy consistency using the mincer. Add the flour bit by bit and mix with the liquid using the chopper blade. Incline the appliance in the bowl to add as much air as possible. The amount of flour to be added has to be enough so that the batter starts to come off the bowl walls (it might be necessary to fold some flour into the mixture manually). Leave the dough mix covered with a cloth and let it rise approx. 12 hour in a warm place.

TIP: This dough mix may be, for example, formed to a plaited brioche and baked in the oven at 180^ C for approx. 35 minutes.

STRAWBERRY JAM

Serves approx. 8 jars of 450 g each: 1 kg of fresh strawberries 500 g of preserving sugar, ratio 2:1

Clean and wash the strawberries and allow them to drip-dry completely. Take half of the strawberries and mince them using the chopper blade and chop the other half. Mix the minced and chopped strawberries with the sugar and cook at medium heat for 5 minutes. Fill the jars with the jam while still hot and close them properly. TIP: When using jars with screw caps, you can put those upside down various times for a couple of minutes while cooling down. This guarantees a homogeneous distribution of the fruit pieces.

FÜR SMALL FOODIES

For more than 50 years now, small foodies enjoy home-made, tasty food prepared with the ESGE-Zauberstab® hand blender. The effort is minimum and the preparation fast and easy. Please consult your paediatrician concerning the age at which you may prepare the proposed recipes for your child.

Semolina Pudding with Banana

200 mls. of milk 1 generous tbs. of wholemeal semolina 14-12 of banana

Cook the milk, stir the semolina and simmer 5 minutes. Cut the banana in pieces and purée in the semolina pudding, using the mincer.

Vegetable-Chicken-Porridge

1 potato 100 g of courgette 30 g of chicken breast 3 tbs. of apple juice 2 tbs. of rape seed oil

Cook the unpeeled potato for approx. 15-20 minutes. Chop the courgette. Dice the chicken breast, then finely chop it using the chopper blade and the mixing jug for the ESGE Zauberstab® hand blender. Stew for 15 minutes in 3-4 tbs. of water. Place the courgette in the ESGE Zauberstab® mixing jar. Peel the potato, chop it, add it together with the apple juice and the oil to the vegetables and meat and mince with the mincer. TIP: Instead of courgette you may also use kohlrabi, fennel, carrots or pumpkin. Instead of chicken you may also use tender, lean beef, veal, lamb or pork.

Use of the beater

WHIPPED CREAM

Cream Sugar

Fill the fresh and cold cream into a high, narrow, and dry jug. Put the beater on the ESGE-Zauberstab® and hold it into the cream. Switch the blender on. During the operation move the beater very slowly up and down in an inclined angle. Repeat this procedure. Work partially directly below the surface. Due to the inclined position of the beater, air is beaten into the cream with each rotation. Please do not beat too quickly. After some moments you will get a whipped cream with small pores, which will keep long time. Now add the sugar. After having switched off the appliance, shake it slightly on your hand to remove all cream rests from the beater.

DIET CREAM

1/8 | of low-fat long-life milk (grease below 1.5%) Sweetener or sugar

Put the semi-frozen milk into a jug. Put the handblender with the beater into the jug and let it work for some moments on the bottom of the jug. Then move it slowly upwards. Repeat this procedure until the milk is whipped. Add sugar or sweetener. Serve immediately as the milk will become liquid after a short time.

Only use low-fat milk, you may add a pinch of salt or some drops of lemon juice to have the milk be whipped more rapidly.

CHOCOLATE MOUSSE

150 g of dark chocolate approx. 50 mls. of strong coffee (Mo- cha) 3 fresh egg yolks 20 g of vanilla sugar 100 g of cream 3 egg whites 4 tbs. of sugar

Place a pot in a hot water quench, break the chocolate into pieces and put the pieces into the pot. Dissolve the chocolate slowly and add the coffee. Beat the egg yolks and the vanilla sugar until the sugar is completely dissolved and stir into the chocolate while the mixture is still warm. Whip the cream using the beater and carefully fold into the chocolate-egg mixture. Whip the egg whites and the sugar using the beater and also fold into the mixture. Fill a bowl or four dessert glasses with the mousse, cover and cool in the refrigerator for min. 6 hours and serve immediately afterwards. TIP: Fill dessert glasses with mousse using a piping bag. The taste of the chocolate mousse may be easily varied without changing its fine texture by adding rum, cognac or kirsch.

BEATEN EGG WHITE

Fill the egg white into a high and narrow jug (small quantities – small jug, large quantities – large jug) and hold the beater into the jug. Switch on and add 1 tbs of hot water (even for large quantities), then move the beater very slowly up and down in an inclined angle. Repeat this procedure to beat air into the egg white, until it is stiff. Rinse jug before use with cold and clear water to remove any detergent residues, which would affect the stiffening.

COFFEE FRAPPÉ

1/8 I cold water

1-2 tbs soluble coffee

1-2 tbs sugar

optional:

condensed milk, cream, whiskey or rum

Fill the cold water (add eventually 1-2 ice cubes) with the soluble coffee into a jug. Put the handblender with the beater on the bottom and let it work for some seconds in this position. Then move the beater very slowly up and down in an inclined angle, as described above. Repeat this procedure, until the mass becomes creamy. Then add sugar. Switch off the machine and add the remaining ingredients.

Use of the meat and vegetable chopper, whisk and beater

MAYONNAISE

Serves approx. 14 litre:

1 fresh egg

1 tsp. of each lemon juice, herb-flavoured vinegar and mustard Salt

ground white pepper

approx. 200 mls. of vegetable oil

Put the egg into a measuring cup, add lemon juice, herb-flavoured vinegar and mustard, season with salt and pepper and mix well using the whisk or the mincer.

While mixing, slowly add the oil bit by bit making sure that the added oil is completely absorbed. Otherwise wait until adding more oil. Keep adding oil until the mayonnaise has the desired consistency. Use the mayonnaise immediately.

TIP: Quick preparation: use the same ingredients mentioned above but at least 250 mls. of vegetable oil. Fill the measuring cup or a high, narrow jar with all the ingredients, put the whisk or the mincer on the bottom of the appliance and let the appliance work in this position for approx. 5 seconds. When all the oil has been absorbed, incline the measuring cup or the jar while the appliance is still working and slowly pull the mayonnaise up the jar wall.

FRENCH DRESSING

Serves approx. 1/8 litre:

1 fresh egg

1 tsp. of Dijon mustard

2 tbs. of white wine or sherry vinegar

1 dash of salt

approx. 4 tbs. of vegetable oil

Put the egg into a measuring cup, add the mustard, the desired vinegar, season with salt and pepper and mix well using the whisk or the mincer.

While mixing, slowly add the oil bit by bit until you obtain a smooth, creamy dressing.

Use immediately.

HERBS

Parsley, dill, basil etc. can easily be chopped and can thus be prepared for storage, e.g. by freezing. They can also be chopped with the mincer when frozen. We recommend to freeze the herbs in a round box, so you can chop them directly in this box.

To chop fresh herbs you can also use the grinder (article No. 5050).

MANGOLD-SPINACH

500 g of fresh mangold

500 g of fresh spinach Salt

3 chopped shallots

2 crushed garlic cloves

50 g of butter

100 g of cream ground black pepper

Separate and wash the mangold and spinach leaves, cut off the mangold stalks and put them aside. Blanch the leaves in boiling water for approx. 2 minutes, pour the water out and quench with ice-water, then allow the leaves to drip-dry well. Chop the mangold stalks and cook them in salt-water for approx. 10 minutes, pour the water out and drip-dry the mangold stalks well. Sweat the shallots and the garlic in butter, add the mangold and spinach leaves, add cream and season with salt, pepper and nutmeg.

Simmer for approx. 5 minutes, chop with the mincer and add the mangold stalks.

GUARANTEE CONDITIONS

We guarantee our appliances for 5 years, or in case of commercial use for 12 months, from the date of purchase in case of defects that occur during normal use and are demonstrably due to a factory fault. Within the warranty period we will remedy defective materials or workmanship through repair or replacement, at our option.

Our warranty terms apply only to appliances sold in Germany and Austria. For other countries, please contact the responsible importer. In the event of a claim for remedy of defects, please send the appliance to our after sales service, properly packaged and postage paid, together with a copy of the automatically generated sales receipt, which must show the date of purchase, and a description of the defect. If the defect is covered by the warranty, the customer will be reimbursed for the shipping costs. The warranty does not cover damage from normal wear, improper handling and failure to comply with the maintenance and care instructions. The warranty is void if repairs or modifications are made to the appliance by third parties.

Any claims of the end consumer vis-à-vis the retailer are not limited by this warranty.

Our appliances are produced on a high quality level for a long lifetime. Regular maintenance and expert repairs by our after-sales service can extend the useful life of the appliance. If an appliance is defective and repair is not possible we ask you to follow the following instructions for disposal.

Do not dispose this appliance together with your standard household waste. Please bring this product to an approved collection point for recycling of electric and electronic products.

By separate collection and disposal of waste products you help to protect natural resources and ensure, that the product is disposed in an adequate way to protect health and environment.
