How to sharpen a straight edge knife?

Insert the blade into the electric sharpening slot (diamond wheels) and pull from heel to tip. Lift the handle at the end to sharpen the tip. Then pass into the ceramic finishing slot. Repeat until desired sharpness is achieved.

How to sharpen a serrated blade?

Do not use the diamond wheels for serrated blades. Use only the ceramic finishing slot (manual slot). Insert the blade and pull from heel to tip, lifting the handle at the end. The triangular ceramic stones follow the shape of the teeth.

How to sharpen scissors?

Pull the scissors sharpening module until it locks. Turn the selector for right or left handed. Open the scissors, insert them, close with slight pressure and pull (or push) through the sharpener. 3 to 4 passes are sufficient.

What to do if the sharpener does not start?

Check that the outlet works. If the cord is damaged, have it replaced by a professional. If the problem persists, return the appliance to the place of purchase with the receipt.

What to do if the diamond wheels no longer cut?

This is normal: the diamond wheels undergo a break-in period. The initial cutting speed slows down but the quality improves. The wheels do not wear out, but if performance decreases after a long time, contact customer service for a possible replacement.

How to clean the ceramic stones?

Remove the finishing module, open it and take out the stones. Scrub with a small nylon brush, scouring powder and water. You can also turn the stones over to use a new face.

Can I use oil or water with the sharpener?

No, do not use any lubricant, water or sharpening oil. The sharpener is designed to operate dry. Using lubricants can damage the appliance.

How to replace the diamond wheels?

Replacement of the diamond wheels must be done by the manufacturer. Contact customer service at ([phone] or visit smithsedge.com to obtain a return. Allow 3 to 4 weeks.

What is the warranty on the sharpener?

The warranty is 3 years against defects in materials and workmanship for domestic use. It does not cover normal wear of the wheels. Keep the original receipt. For any repairs, contact customer service.

What to do in case of overheating and shutdown of the sharpener?

The sharpener is equipped with a safety thermostat. Unplug it and wait about 1 hour for it to cool down. It will restart automatically. If the problem persists, return it to the place of purchase.

Smith's, a world leader in innovative sharpening, is proud to introduce an electric knife sharpener with Gourmet Edge™ Technology featuring Interlocking Diamond Wheels that produce a commercial quality edge in combination with manual sharpening elements. With this one product, you can easily sharpen extremely dull blades, maintain razor sharp edges on both straight and serrated blades, and sharpen common household scissors.

Your Diamond Edge Electric Knife and Scissors Sharper will sharpen straight edge knives of alloy, carbon, or steel in the electric sharpening slot. It is designed to sharpen your finest cutlery and other common kitchen knives. Do not attempt to sharpen any blade that does not fit freely into the electric sharpening slot. Listed below are the unique features of your Diamond Edge Electric Knife and Scissors Sharper.

Gourmet Edge™ Technology Featuring Interlocking Diamond Wheels

Unlike other electric sharpeners that only sharpen one side of the blade at a time, Smith's patented Gourmet Edge™ Technology features Interlocking Diamond Wheels that deliver fast and precise sharpening of both sides of your blade at the same time with each pass through the sharpening slots.

Smith's is proud to be the first manufacturer to offer the retail consumer a quality electric knife sharpener that operates under the same principles and uses the same technology as a high-tech commercial grade sharpener.

The sharpening wheels used in your Diamond Edge Electric Knife and Scissors Sharperer are coated with "micron-sized" monocrystalline diamonds. Our wheels are manufactured in the United States according to strict tolerances in order to ensure the same high quality and performance of each and every wheel that we use. This protects your blade from damage or de-tempering when using this sharpener.

The Interlocking wheels produce a Precision Machined Edge™, which offers the perfect combination of excellent edge retention, edge performance, and sharpness.

NOTE - Diamond Break-In Period - The initial aggressive cutting speed of the Diamond Sharpening Wheels will slow with use. At the same time, the abrasive finish will improve. Do not be confused by this break in process because it is normal and should be expected. The diamond wheels are breaking in, NOT wearing out.

Ceramic Finishing Slot/Serrated Blade Sharpener -

Triangular shaped, extra-fine ceramic stones put the final, finished edge on your blade. Smith's recommends that you always use the ceramic stones for final edge honing each time after you finish sharpening with the interlocking diamond wheels.

Because of their unique triangular shape, these crossed ceramic stones will properly sharpen serrated blades without damaging the serrations. The special shape of the stone follows the shape of the serrations and ensures proper and consistent sharpening for all types of serrations.

You should also use the ceramic finishing slot for a quick touch up of already sharp knives. Again, just a few quick strokes is all it takes.

Pull-2-Lock Scissors Sharpener -

Smith's patented scissors sharpener sharpens both sides of your scissors at the same time on both left and right-handed scissors. The "floating" ceramic rod adjusts to the proper sharpening angle for your scissors. Usually, three or four strokes are all it takes to keep your scissors cutting sharp.

Magnetic Collection Strip -

A magnetic collection strip located in the bottom of the sharpener collects the metal filings that are generated during the sharpening process for safe and easy disposal.

OPERATING INSTRUCTIONS

Read all IMPORTANT SAFEGUARDS and OPERATING INSTRUCTIONS thoroughly before using this product.

CAUTION:

Always sharpen your knife blade from the heel to the tip of the blade, never back and forth.
- Never insert the tip of the knife blade into the sharpening slot first, or push your knife blade through the sharpening slot. This could damage the knife sharpener and/or your knife.
- In order to get the best results and to reduce excessive diamond wheel wear, it is important that you keep the proper orientation of the knife blade to the wheels. Always keep the knife blade parallel to the counter top, so that the blade contacts both diamond wheels equally. It should be straight up and down in the center of the sharpening slot at all times. Hold your knife securely but comfortably in your hand and use light downward pressure to contact the wheels.
- Due to some handle designs, you may not be able to sharpen the entire length of the blade using the diamond sharpening wheels. In these limited cases, Smith's recommends using the manual sharpening slot to sharpen these small areas of your blade.

Sharpening Straight Edge Blades

Step 1
Insert blade and pull through slot from heel to tip

Sharpening Serrated Blades

The characteristic scallops of a serrated blade are usually only ground on one side of the knife blade. For this reason, it is not recommended that serrated blades be sharpened using the Interlocking Diamond Wheels in the electric sharpening slot. These wheels are designed to sharpen both sides of any blade at the same time. For proper sharpening of your serrated blade, Smith's strongly recommends manual sharpening in the ceramic finishing slot as the preferred way to lightly hone a serrated edge. The manual sharpening slot has triangular shaped ceramic stones that are designed to follow the shape of your serrations and ensure proper and consistent sharpening for all types of serrations.

Step 1

Insert blade and pull through slot from heel to tip

Sharpening Scissors

Step 1
Pull out until it locks into place

Step 2
Rotate for right or left-handed scissors

Open scissors and insert into the sharpener

SHARPENER MAINTENANCE AND CARE GUIDE

Follow these easy tips and instructions to keep your Diamond Edge sharpener in prime condition for years to come:

DO's

• Read the instruction manual thoroughly before using the sharpener.
• Clean all dirt and food from knives before sharpening.
• Always hold knife parallel to the tabletop so the knife contacts both wheels equally.
• Always pull the knife blade through the wheels, never push your knife blade into the sharpening wheels.
• Use light downward pressure to establish contact with the wheels.
• Use the Ceramic Finishing Slot for finishing or a light touch up of already sharp knives.
• Unplug sharpener when not in use and during cleaning.

DON'Ts

• Never use lubricants on the wheels.
• This sharpener is designed to sharpen knives and scissors. Do not try to sharpen any other types of blades on this sharpener.
• Never insert the tip of the knife into the wheels or damage to the knife will occur.
• Never use the sharpener if cord is damaged.
• Do not use excessive force when sharpening your knife or scissors.

TROUBLE SHOOTING GUIDE

Symptom: Sharpener stops running while in use.

Cause: Sharpener has a built in motor thermostat as a safety feature. It protects sharpener from overheating if left on accidentally for a long period or is being used improperly.

Solution: If the thermostat shuts down the motor, unplug the sharpener and wait about one hour for the motor to cool down, and the sharpener will restart. If motor still will not re-start, return sharpener to place of purchase.

Symptom: Interlocking Diamond Wheels stop removing metal.

Cause: Diamond Break-In Period - The initial aggressive cutting speed of the Diamond Sharpening Wheels will slow with use. At the same time, the abrasive finish will improve. Do not be confused by this break in process because it is normal and should be expected. The diamond wheels are breaking in, NOT wearing out. If after extended periods of use you feel like the diamond coated wheels have completely lost their aggressive cutting ability, you can replace the diamond wheels.

Solution: For replacement wheels, see "Replacement of Interlocking Diamond Wheels" section in this manual.

Symptom: Ceramic stones stop sharpening.

Cause: The ceramic stones will lose their sharpening ability over time, thus reducing their effectiveness.

Solution: Ceramic stones are reversible and can be cleaned. Clean and reverse stones as shown in Owner's Manual to restore original sharpening capabilities. See "Reversing, Cleaning, and Replacement of Triangular Shaped Ceramic Stnoes" section in this manual.

Symptom: The sharpener will not start when initially plugged into electrical socket.

Cause: Sharpener or electrical cord could be damaged or malfunctioning.

Solution: Return your sharpener and receipt to the place of purchase for replacement.

Maintenance

• Do not use any lubricant or water on the abrasive wheels
• Periodically, the clean out door on the bottom of the sharpener should be opened and cleaned.

Replacement of the Interlocking Diamond Wheels

To replace the diamond sharpening wheels, you must return your Diamond Edge Electric Knife & Scissors Sharper to Smith's. Please contact our Customer Service Department at ([phone], or visit our website, www.smithsedge.com, for return shipping information. PLEASE ALLOW 3-4 WEEKS FOR DIAMOND WHEEL REPLACEMENT.

Reversing, Cleaning, and Replacement of Triangular Shaped Ceramic Stones

The module that holds the manual sharpening materials can easily be removed from the top of the machine (Fig 1) and opened so that the ceramic stones can be reversed, cleaned, and/or replaced.

The white ceramic darkens with use as the metal dust collects on the working corners of the triangular stones, thus decreasing their sharpening capabilities. The ceramic stones can be removed and rotated to expose an unused section of ceramic or cleaned to refresh their abrasive quality (Fig 2.). Use a small, nylon brush to scrub the surface of the ceramic stones with kitchen cleansing powder and water. After all possible working surfaces of the ceramic stones have been well used and cleaning the stones does not increase their effectiveness, you should replace the stones.

This Smith's sharpener is guaranteed against defective material or workmanship for a period of three (3) full years from the date of purchase if the product is used for non-industrial or non-commercial purposes only. Smith's or its distributors will repair or replace, at our option, any product or part that is defective in material or workmanship without charge if the product is returned to us within the three (3) year warranty period. The limited warranty DOES NOT cover replacement of diamond wheels or ceramic stones necessitated by use of the product or product damage resulting from misuse. For warranty repairs, return the complete product, postage prepaid, directly to the address shown below. Be sure to include a copy of your sales slip to establish warranty eligibility.
