Frequently Asked Questions - 15202029 Char-Broil

How do I install the rotisserie on my Char-Broil grill?
First, ensure the grill is cool and gas is off. Attach the motor bracket to the grill's side shelf or back panel using the provided screws or wing nuts. Slide the rotisserie rod through the meat, secure with forks, then place the rod into the motor's drive socket and the opposite end into the support bracket. Plug in the motor and test rotation.
What types of meat can I cook with this rotisserie?
This rotisserie is ideal for whole chickens, turkeys, roasts, pork shoulders, and even vegetables like eggplant or pineapple. Maximum weight is 20 lbs.
How do I clean the rotisserie after use?
Allow all parts to cool. Remove the rod and forks and wash them with warm soapy water using a non-abrasive sponge. Rinse and dry thoroughly. Wipe the motor housing with a damp cloth; never submerge the motor in water.
Why does my rotisserie motor stop spinning?
The motor has an automatic shut-off if overloaded or jammed. Check that the meat is balanced and not hitting the grill grates. Also ensure the rod is properly seated in the motor socket. If the motor still doesn't work, it may need replacement.
Can I use this rotisserie on any brand of grill?
This rotisserie is designed specifically for Char-Broil gas grills with a side shelf or rear bracket. It may not fit other brands without modification. Check the mounting dimensions in your grill manual.
Do I need to remove the grill grates to use the rotisserie?
No, but you may need to adjust or remove some grates to allow the meat to rotate freely. Typically, remove the center grates or use a rotisserie cutout if your grill has one.
How do I balance meat on the rotisserie rod?
Center the meat on the rod, ensuring it is evenly distributed. Tighten the forks securely. For uneven cuts, use butcher's twine to tie the meat into a balanced shape. Rotate by hand to check balance before plugging in.
What temperature should I set my grill for rotisserie cooking?
For most meats, use medium heat (300-350°F / 150-175°C). For poultry, aim for 350°F (175°C) until internal temperature reaches 165°F (74°C). Adjust burners to maintain even heat.
Can I replace the rotisserie motor?
Yes, replacement motors are available from Char-Broil or authorized dealers. Disconnect power, remove the old motor from the bracket, and install the new one following the manual instructions.

CAUTION

SPIDER ALERT!

SPIDER AND WEBS INSIDE BURNER
DER AND WEBS IDE BURNER Your burner might be differ

If your grill is getting hard to light or the flame is weak, check and clean the venturis and burners.

Spiders or small insects are known to create “flashback” problems by building nests and laying eggs in the grill’s venturi or burner, obstructing the flow of gas. The back-up gas can ignite behind the control panel. This flashback can damage your grill and cause injury. To prevent flashbacks and ensure good performance the burner and venturi tube assembly should be removed and cleaned when ever the grill has been idle for an extended period of time.

General Grill Cleaning

  • Do not mistake brown or black accumulation of grease and smoke for paint. Interiors of gas grills are not painted at the factory (and should never be painted). Apply a strong solution of detergent and water or use a grill cleaner with scrub brush on insides of grill lid and bottom. Rinse and allow to completely air dry. Do not apply a caustic grill/oven cleaner to painted surfaces.
  • Plastic parts: Wash with warm soapy water and wipe dry.
  • Do not use citrisol, abrasive cleaners, degreasers or a concentrated grill cleaner on plastic parts. Damage to and failure of parts can result.
  • Porcelain surfaces: Because of glass-like composition, most residue can be wiped away with baking soda/water solution or specially formulated cleaner. Use nonabrasive scouring powder for stubborn stains.
  • Painted surfaces: Wash with mild detergent or nonabrasive cleaner and warm soapy water. Wipe dry with a soft nonabrasive cloth.
  • Stainless steel surfaces: To maintain your grill's high quality appearance, wash with mild detergent and warm soapy water and wipe dry with a soft cloth after each use. Baked-on grease deposits may require the use of an abrasive plastic cleaning pad. Use only in direction of brushed finish to avoid damage. Do not use abrasive pad on areas with graphics.
  • Cooking surfaces: If a bristle brush is used to clean any of the grill cooking surfaces, ensure no loose bristles remain on cooking surfaces prior to grilling. It is NOT recommended to clean cooking surfaces while grill is hot.

Cleaning the Burner Assembly

Follow these instructions to clean and/or replace parts of burner assembly or if you have trouble igniting grill.

  1. Turn gas off at control knobs and LP cylinder.
  2. Remove cooking grates and heat tents.
  3. Remove carryover tubes and hardware securing burners.
  4. Detach electrode from burner.

NOTE: Removal/Detachment method will depend on the burner configuration. See different configurations in illustrations below.

  1. Carefully lift each burner up and away from valve openings. We suggest three ways to clean the burner tubes. Use the one easiest for you.

(A) Bend a stiff wire (a light weight coat hanger works well) into a small hook. Run the hook through each burner tube several times.

Char-Broil 15202029 - Cleaning the Burner Assembly - 1

(B) Use a narrow bottle brush with a flexible handle (do not use a brass wire brush). Run the brush through each burner tube several times.
(C) Wear eye protection: Use an air hose to force air into the burner tube and out the burner ports. Check each port to make sure air comes out each hole.

  1. Wire brush entire outer surface of burner to remove food residue and dirt.
  2. Clean any blocked ports with a stiff wire such as an open paper clip.
  3. Check burner for damage due to normal wear and corrosion, some holes may become enlarged. If any large cracks or holes are found, replace burner.

VERY IMPORTANT: Burner tubes must reengage valve openings. See illustrations at right.

PREPARING TO USE YOUR SMOKER

Before cooking with your smoker, the following steps should be closely followed to both cure the finish and season the interior steel. Failure to properly follow these steps may damage the finish and/or impart metallic flavors to your first foods.

  1. Brush all interior surfaces including grills and grates with vegetable cooking oil.
  2. Build a small fire on the fire grate or pan, being sure not to lay coals against the walls.
  3. Close door. (Position damper and smokestack damper approximately at one quarter open.) This burn should be sustained for at least two hours, the longer the better. Then, begin increasing temperature by opening the damper and smokestack damper half-way and adding more charcoal. Your smoker is now ready for use.

Rust can appear on the inside of your smoker. Maintaining a light coat of vegetable oil on interior surfaces will aid in the protection of your unit. Exterior surfaces of smoker may need occasional touch up. We recommend the use of a commercially available black high temperature spray paint. NEVER PAINT THE INTERIOR OF THE UNIT!

SMOKER MAINTENANCE

Frequency of clean up is determined by how often the grill is used. Make sure coals are completely extinguished before cleaning inside of the unit. Thoroughly rinse with water and allow to air dry before using again. Wipe out the interior of the unit with a cloth or paper towels.

When finished cooking, and the unit has adequately cooled, clean out all remaining ashes. Ashes collect moisture, which can lead to premature rusting and decay. Periodically coating the interior surfaces with vegetable oil will aid in the protection of your unit. Also, occasional touch up of the exterior paint will be required. Black, high-temperature spray paint is recommended. NEVER PAINT THE INTERIOR OF THE UNIT.

Cooking Surface: If a bristle brush is used to clean any of the grill cooking surfaces, ensure no loose bristles remain on cooking surfaces prior to grilling. It is not recommended to clean cooking surfaces while grill is hot.

COOKING TIPS

Building Your Fire

  1. Stack charcoal briquettes or wood into a pyramid-shaped pile on top of the charcoal grate or ash pan. We recommend using 2 pounds (approximately 30 briquettes) to start your fire, adding more as needed.
  2. If using lighter fluid, saturate the charcoal briquettes with lighter fluid and let it soak in for approximately 5 minutes. If using a chimney starter, electric starter, or other type of fire starter, light your fire according to the manufacturer's instructions.
  3. Always light the fire with the grill lid open.
Leave lid open until briquettes are fully lit. Failure to do this could trap fumes from charcoal lighter fluid in grill and may result in a flash fire when lid is opened.
  4. Never add charcoal lighter fluid to hot or warm coals as flashbacks may occur causing injury.
  5. You are ready to begin cooking when the pile of briquettes ashes over and produces a red glow (approximately 12 - 15 minutes).
  6. Depending on your cooking method, either leave the briquettes in a pile or spread evenly across the charcoal grate using a long-handled poker.

Successful charcoal grilling depends on a good fire. The general rule for knowing when your coals are ready for grilling is to make sure that 80 percent or more of the coals are ashy gray.

Using caution, arrange the hot coals on your charcoal grate based on your desired method of cooking. Here are a few steps you can take to adjust the temperature of your fire:

-If it is too hot, spread the coals out a bit more, which makes the fire less intense.

-Raise or lower the adjustable charcoal grate.

-Partially close the vents in the grill, which reduces the amount of oxygen that feeds the fire.

-Use the indirect grilling method, with coals to either side of drip pan and the food over the pan rather than directly over the coals.

-In the event of a severe flare-up, spray the flames with water from a squirt bottle. Be careful, spraying with water tends to blow ashes around and make a mess.

-Add briquettes 2 or 3 at a time to increase the burn time. Allow 10 minutes for coals to ash over before adding more.

SMOKING AND SLOW COOKING

Remove the cooking grill from the firebox and build your fire on top of the fire grate in the firebox. Either charcoal or wood may be used, but wood is the recommended fuel for it's rate of burn and the flavor it imparts to the food being cooked. Most seasoned hardwoods are good for smoking such as hickory, mesquite, pecan, oak, and many other fruit woods. Bark should be avoided or burned off first as it contains a high acid content and imparts an acrid flavor.

After allowing the fire to burn down, close the doors and control the temperature and smoke with the dampers located on the firebox and atop the smokestack. Smoke is contained within the chambers, which will reduce burn while imparting more smoke flavor. Do not operate the Smoker with temperatures exceeding 450 degrees in the smoker chamber. Place the food in the smoker chamber and monitor the temperature. Cooking and smoking are taking place using indirect heat. There is no need to worry about a grease fire flare-up ruining the food. Do not place food within 6" of the opening from the firebox into the smoker chamber. A general rule of thumb for cooking is about 1 hour per pound for smoking large cuts of meat. Refer to a cook book for specific cuts of meat. Limit the number of times you open the smoker chamber door as this will allow heat to escape and extend the cooking time.

SMOKING WITH WOOD CHIPS/WOOD CHUNKS

For a more robust smoke flavor while using charcoal briquettes or lump charcoal, try adding wood chips or several wood chunks to the fire. Wood chunks are available in a variety of natural flavors, and can be used alone or in addition to charcoal. As a general rule, any hardwood that bears a fruit or nut is suitable for cooking. However, different woods have very different tastes. Experiment with different woods to determine your personal favorite, and always use well-seasoned wood. Green or fresh-cut wood can turn food black, and tastes bitter.

Our Recommendations:

Chicken - Alder, Apple, Hickory, Mesquite

Beef - Hickory, Mesquite, Oak

Pork - Fruitwoods, Hickory, Oak

Lamb - Fruitwoods, Mesquite

Veal - Fruitwoods, Grapevines

Seafood - Alder, Mesquite

Vegetables – Mesquite

Food Safety

Food safety is a very important part of enjoying the outdoor cooking experience. To keep food safe from harmful bacteria, follow these four basic steps:

Clean: Wash hands, utensils, and surfaces with hot soapy water before and after handling raw meat.

Separate: Separate raw meats from ready-to-eat foods to avoid cross contamination. Use a clean platter and utensils when removing cooked foods.

Cook: Cook meat and poultry thoroughly to kill bacteria. Use a thermometer to ensure proper internal food temperatures.

Cooking on your new grill is a hands-on experience, and it is recommended to remain outside with your grill while cooking. Grilling can be affected by many external conditions. In cold weather, you will need more heat to reach an ideal cooking temperature, and grilling may take longer. The meat's internal temperature and thickness can also affect cooking times. Cold and thicker meats will take longer to cook.

Internal Meat Temperatures

Meat cooked on a grill often browns very fast on the outside. Therefore, use a meat thermometer to ensure it has reached

USDA Recommended Safe Minimum Internal Temperatures
Beef, Veal, Lamb, Steak, Roasts, & Whole Pork (with a 3 minute rest time)145°F
Fish145°F
Beef, Veal, Lamb, and Pork - Ground 160°F
Egg Dishes 160°F
Turkey,Chicken & Duck Whole,Pieces & Ground 165°F

Please refer to the USDA for complete, up-to-date information. Our internal temperature chart is based on USDA standards for meat doneness. Check it out at www.isitdoneyet.gov
