– 1 egg (egg yolk and egg white)
– 1 tbsp mustard – 1 tbsp lemon juice or vinegar – 200-250 ml oil – Salt and pepper to taste All ingredients must be at room temperature. When making mayonnaise, air underneath the blender foot prevents the ingredients blending together well. To achieve an optimum result, check that the air can escape before you start mixing. X Fig. E ■ Add all ingredients to the blender jug. ■ Immerse the blender foot and position it on the bottom of the jug. ■ Do not switch on the hand blender. ■ First hold the blender foot at an angle and then tilt the blender jug slowly to the side so air bubbles can escape. Hold the blender jug at an angle without spilling the ingredients and wait until no more air bubbles appear. ■ Hold the blender jug and blender foot straight again and press à button. ■ When the ingredients emulsify, slowly lift the hand blender while switched on and lower again until the mayonnaise has reached the required consistency.
