Frequently Asked Questions - H80CIMS-ADL Perlick

How do I clean the Perlick H80CIMS-ADL ice cream maker?
Daily cleaning is essential. Remove the auger and scraper blades, wash them with warm soapy water, and rinse thoroughly. Use the auto-clean cycle with a mild cleaning solution for the interior. Never use abrasive cleaners.
What type of ice cream mix can I use?
This machine is designed for commercial liquid ice cream mix with a fat content between 10-16%. You can also use sorbet and gelato bases by adjusting the overrun setting.
How long does it take to freeze a batch?
A typical batch (2.5-3 gallons) freezes in 8-12 minutes, depending on mix temperature, overrun, and ambient conditions.
Can I make sorbet or gelato with this machine?
Yes, the H80CIMS-ADL can produce sorbet and gelato. For sorbet, use a sugar-heavy base to maintain texture. For gelato, reduce overrun and use a lower fat mix.
What is the capacity per batch?
The maximum batch size is 3 gallons (12 quarts), yielding about 80 servings per hour when cycled continuously.
How do I adjust the overrun?
Overrun is adjusted via the manual control knob on the control panel. Turn clockwise for higher overrun (softer ice cream) and counterclockwise for lower overrun (denser texture).
What maintenance is required?
Regular maintenance includes: daily cleaning of the auger and blades, weekly condenser coil cleaning, and monthly inspection of seals and gaskets. Annual professional service is recommended.
My ice cream is too soft. What should I check?
Check the mix temperature (should be below 40°F), ensure the refrigeration system is functioning, and verify the overrun setting is not too high. Also, clean the condenser coils if dirty.
Can I use the machine continuously?
Yes, it is designed for continuous operation in commercial settings. However, allow the compressor to rest for 5 minutes after every 5 batches to prevent overheating.
Where can I find replacement parts?
Contact Perlick authorized distributors or visit the Perlick website. Common parts like augers, scraper blades, and seals are available. Use only genuine Perlick parts for warranty.
