Concentric circular pattern with radial gradient and cross-hatching (no text or symbols)THECHOICEOFCOOKWARE
The following information will help you to choose cookware which will give good performance.
StainlessSteel
Highlyrecommended. Especially good with as sandwich clad base. Thesandwich base combinesthe benefit sof stainless steel (appearance, durability and stability) with the advantages of aluminium copper (heat conduction, even heat distribution).
Aluminium
Heavyweightrecommended.Goodconductivity. Aluminiumresiduessometimesappear asscratchesonthecook topbutcanberemovedifcleanedimmediately.Becauseofitslow meltingpoint,thinaluminiumshouldnotbeused.
CastIron
Usable, but not recommended. Poor performance. Mayscratch the surface.
CopperBottom/stoneware
Heavyweightrecommended. Good performance, but copper may leaveresidues which can appear as scratches. Theresidues can be removed, as long asthehobiscleaned immediately. However, donotlet thesepotsboildry. Overheated metal can bond to glass hobs. An overheated copper pot will leave a residuethat will permanently stain the cooktop.
Ensure that the base of the potor panis dry
whenfillingpanswithliquidorusingonethathasbeenstoredin therefrigerator,ensurethatthebaseofthepaniscompletelydry beforeplacingitonthehob. Thiswillhelptoavoidstainingthe cooktop.
Alwaysusegoodquality cookwarewithperfectlyflatand thickbases
Using thistype of cook ware will prevent hot spot that cause food to stick. Thick metal pots and pans will provide evendistribution of heat.
Porcelain/enamel
Goodperformanceonlyifthebaseisthin,smoothandflat.
Glass-ceramic
Notrecommended.Poorperformance.Mayscratchthesurface.
SuitabilityofCookingPans
Keepinmindthatlargerpanshavelargerheatingsurfaces. Thiswillhelpthemtocookthefoodfasterthanpanswithsmallerheatingsurfaces.
Alwaysusepansizesproportionatetotheamountofthefoodtobe cooked. Inordertopreventsplashing, donotusevery smallpans, especiallyforfoodswithexcessliquid. If you use excessively large pansfor quickcooked foods, sausagesand liquidswillstick and residueswillremainattachedtothepanafterbeingemptied. Closedpansandbakingtraysormouldsaresuggested for cookingsweets. Splashed sugar and juices from an openpanmay stick to the cookersurface and will bed difficult to remove. This is especially important for pansused for roasting or pressurized cooking at hightemperature.
Donotleaveburnersunattendedwithoutapanorwithanempty panontop.
Checkthesuitabilityofcookingpanswithrespect tothefollowing criteria;
Theyshouldbeheavy.
They should completely cover the burners surface; they maybe a little bigger but no smaller.
Basesurfaces should be completely flat and fit well on the cooking surface.
- Somepartsofthefoodmaybeheatedwhileothersremaincold duetothe unevendistributionofheatunderthepan.Therefore, continuousstirringofthefoodbeingcookedisnecessaryinthe caseofthin-bottomedpans.Heatismoreeffectivelyandevenly distributedwiththick-basedpans.
- Useofverysmallpansisnotrecommended.Wider,low-sided pansaremoresuitableformoreeffectiveand quickercooking thansmall,deeppans.
- You cannot shorten cooking time by using asmall panovera large burner. You will only wastegas in this way. However, apan with alid will save energy.

COOKINGCAKES
- Unless otherwise suggested, preheat the oven for at least 10 minutes before use. Donotopentheovendoor when cooking cakes other wisethey will not rise (cakes or dishes with yeast and soufflés). The blast of cold air which will enter the oven will prevent rising. You can check whether cakes are properly cooked by inserting a rod into the dough. If therod comes out dry when you pull out, it mean that the cake is properly cooked. Donot check in this way until at least three quarters of the cooking time has elapsed.
Pleasekeepin mindthefollowingtips
- If the surface of the food is cooked well but it is still raw or partly raw inside, it must be cooked longer at lower temperature.
- On the other hand, if the surface of the food to do dry, it should be cooked at higher temperature for a shorter time.
